    Description: Heating conditions have been standardised for measurement of moisture in dry cured fish using infrared irradiation source of 150w. Results obtained are comparable to those obtained from standard air oven method (drying to a constant weight at l02°c), the mean deviation being less than two units. The method works equally well for fresh fish muscle.

    Description: A process is described for isolation of edible protein from blanch liquor, which is discarded as a waste at present from prawn canning factories. The protein isolated is colourless and odourless and contains an appreciable amount of salt from the brine used for blanching prawns. It is comparable to fish protein concentrate in amino acid composition.

    Description: A dip treatment in 15% sodium chloride solution for 30minutes prior to freezing was found to be effective in reducing belly-bursting occurring during freezing and thawing of oil sardines.     Description: India's export earnings from fishery products have touched an all-time record of Rs. 33.07 crores in 1969. The most important items which have contributed to this are processed prawn products, frozen lobster tails and frozen frog legs. Even though frogs are not of marine origin, they are processed and exported along with marine products so that for all practical purposes they are reckoned as seafood. Naturally, it is sure to be of absorbing interest to the processors and technological research workers as well as to the general public to know how many varieties/species of these occur in our country and also the localities where they are available. The following is an exhaustive list of the different species of prawns, lobsters and frogs that are found in our country, together with vernacular names wherever available, parts of India where they occur and the largest size (length) to which they grow. The figures in brackets on the left side show the progressive total. The different genera have been arranged in the order of their commercial importance and not according to any scientific principles.

    Description: The paper presents the results of a bacteriological survey carried out on 2,917 samples of frozen prawn, 55 samples of raw material, 35 samples of water, 4 samples of ice and 42 samples of various equipment used for processing. The survey covered a period of three years (1960-63) and comprised of samples collected from five of the leading processing factories in Cochin. Frozen products tested consisted of headless (marine and fresh water), peeled and deveined and cooked frozen samples. Statistical analysis of the data shows that there is no significant variation between samples and between factories with respect to product quality. The standard plate count varied between 1.0x10(4 superscript) and 1.0x10(6 superscript) per gram for headless and between 1.0x10(4 superscript) and 1.0x10(7 superscript) for peeled and deveined and cooked frozen samples. Majority of the samples had bacterial load well within the limits prescribed for such products.

    Description: The paper deals with the investigations carried out on the preparation of odorless fish-starch flakes using partially deodorized trash fish meat and different sources of starch like corn, tapioca, maida and black gram. It has been found that the products using corn and tapioca are better compared to those prepared using other two starches, the product from corn being the best. The product has a protein content of about 20% and has been found to have a storage life of 4 months at 37°c.

    Description: A simple method for eliminating urea almost completely from elasmobranch muscle consists in desalting the initially salted muscle in 5% brine. The initial salting removes about 58% of the urea, which occurs to the extent of 5.8 to 7.5% D.W.B. in the fresh muscle, and the desalting further reduces the urea content to negligible quantities (0.2%).
