    Description: Staphylococcus aureus is a common organism on the skin and in the nasal passages of approximately 50% of the population. Heat-treated seafood may become contaminated with this organism by poor handling, then storage at improper temperatures allows the organism to multiply and produce its toxin. This type of food poisoning may be avoided by practicing strict personal hygiene, thorough cleaning and disinfection of equipment, and storage of susceptible food at temperatures below 10°C or above 60°C. Presented in the paper is the methodology of determining S. aureus in fish and fishery products.

    Description: Streptococci are gram-positive cocci, sometimes coccobacilli, arranged in chains. This group of streptococci resides in the intestine of warm-blooded animals. They are bile resistant and capable of growth at 45°C. Fecal streptococci form part of the microflora of many foods without necessarily indicating poor hygiene. They are found in many fermented foods, such as cheese and raw sausage, and often take part in the fermentation process. However, in meat products which have received a severe heat process, the presence of excess numbers of fecal streptococci indicates unhygienic handling and/or faulty storage. Presented in the paper is the methodology of determining the presence of fecal streptococci in fish and fishery products.

    Description: A review is made of studies conducted on cryoprotectants for use in the frozen storage of processed fishery products, such as surimi. Some 150 compounds were screened for cryoprotective effects on fish actomyosin; the findings of experiments investigating the behaviour of carp actomyosin, and fish myosin, actin and other constituent proteins during frozen storage are described. The mechanism of freeze denaturation and of the effects of cryoprotectants is outlined and the application of cryoprotectants in the development of new fish gel products considered.

    Description: Studies on the development of value-added products using arrow squid (Loligo sp.) and bullet tuna (Auxis rocheii, R.) were conducted. The recommended steps in new product development were systematically followed while establishing control to all steps in these product development studies to ensure that the requirements for quality fishery products are met. New product concepts were generated, evaluated, and refined. The most plausible concepts were then advanced to the product optimization stage wherein samples were subjected to a series of sensory evaluations to come up with the standardized formulations. Three (3) squid products, namely squid nuggets, squid loaf, and squid rolls, and two (2) bullet tuna products, namely tuna loaf and dried seasoned tuna, were then subjected to either accelerated or actual shelf life testings, consumer acceptability testings, and cost analyses. In collaboration with a private company, the most promising technologies generated from the preceding activities were advanced to pilot-scale production in which the HACCP-concept of quality assurance was applied, and the hazards and critical control points associated with each step in the production of the new products were established. The resulting products were finally subjected to consumer testing at the Japan Food Expo '95 which proved their acceptability to the export market as well as the products' feasibility for commercialization.

    Description: The paper describes two levels of technology that can be used for keropok production. Keropok are popular snack foods in Malaysia and the ASEAN countries, and are produced by gelatinization of starch with water, to form a dough which is shaped, cooked and then sliced. The slices are dried and expanded into a low-density porous product upon immersion in hot oil. However, production methods used are heavily dependent on manual labour, resulting in inferior quality products which have uneven expansion, dark objectionable colours and varying shapes, sizes and thicknesses. A mechanized method (modified method) has been developed to upgrade keropok technology. Products from this method were superior in terms of appearance, shape and linear expansion and were more acceptable to taste panelists. Keropok was also successfully prepared by extrusion. The degree of expansion was measured as a function of extruder temperature and for products extruded at 100°C and above panelists found no significant difference between extruded samples and those prepared using the modified method.

    Description: Surimi from bighead carp was used in the production of crab analogue and squid balls. Crab analogue using sweet potato starch and crab flavour powder resulted in better flavour, odour, texture and general acceptability than those using potato starch. Squid balls were also produced from bighead carp surimi and compared with commercial squid balls. Sensory evaluation showed that the formulated squid balls were comparable with the commercial sample in terms of odour, texture and flavour. The commercial squid balls exhibited better colour and general acceptability than the formulated squid balls.

    Description: As a sequel to the Southeast Asian Fisheries Development Center’s (SEAFDEC) 20th Anniversary Seminar on Development of Fish Products in Southeast Asia in 1987, the Marine Fisheries Research Department of SEAFDEC organized a second seminar to update information on the status of the fish processing industry in the region with particular attention to developments that had occurred since the first seminar in 1987. A workshop to discuss the SEAFDEC 1990 compilation of fish products in Southeast Asia was also held in conjunction with the seminar. The meeting was attended by researchers from Australia, Indonesia, Japan, Malaysia, Norway, Philippines, Singapore and Thailand, and by participants from the Canadian International Development Agency and SEAFDEC. This volume reviews the advances made in the field of fishery post-harvest technology and presents edited papers, discussions and recommendations that emerged from the meeting.

    Description: This report reviews the lobster catch during the months of November and December 1992. In total, 38 fishing units were licenced: 26 on Mahe, 7 on La Digue and 5 on Praslin. 8 licence holders provided no information and claimed that they undertook no fishing trips at all. Of the remainder, each fishing unit comprised an average of 3 men. 2 fishing units used traps as the only catching method, 27 used snorkelling and 1 a combination of traps and snorkelling. For the two month period, an estimated catch of 4.9 tonnes of Spiny Lobster for all sites were landed; of which Mahe contributed an estimated 2.8 tonnes. For the month of November only, a total catch of 2.7 tonnes of lobsters were estimated and for the month of December a total of 2.2 tonnes were caught. For the month of November there were a total of 142 trips by 418 men, and for the month of December there were 89 trips and 252 men were involved in the fishery. Three main species were landed : Panulirus penicilatus (Homard Grosse Tete), Panulirus longipes (Homard Rouge), Panulirus versicolor (Homard Vert). The catch rate for the month of November was 19.5 kg/trip, and the catch rate of December was 27.2 kg/trip. The mean carapace length of each species were respectively: (in cm) MALES FEMALES G.T. = 10.8 G.T. = 8.8 H.R. = 8.7 H.R.= 8.4 H.V. = 9.0 H.V.= 8.6 By fishing method snorkelling, 95.5% of lobsters were caught and by fishing method trap, 4.5% of lobsters were caught. The catch composition from fishing methods utilised were: a) Snorkelling: Homard Grosse Tete, 85.9% Homard Rouge, 13.9% Homard Vert, 0.2% b) Trap: Homard Rouge, 100%

    Description: This report reviews the spiny lobster fishery on the Mahe Plateau during the 1994 - 1995 fishing season. Following the recommendations made after the 1992 fishing season, the fishery was reopened in 1993 for two months, November and December. The monitoring programme set up in 1992 was continued to gather more information on the spiny lobster stocks so as to improve the management of this resource around the Mahe Plateau. A total of 33 licenses were issued (compared to 28 in 1993); 25 on Mahe, 2 on Praslin and 6 on La Digue. A licensed fishing unit comprised, on average, of three men. Snorkelling was used by 27 fishing units as the only catching method, 3 fishing units used traps only whilst 3 fishing units combined snorkelling with the use of traps. Over the three month open season a total of 4.1 tonnes of spiny lobsters were estimated to have been landed compared to 4.2 tonnes in 1993, most landings were on Mahe (3.03 tonnes) A catch of 0.9 tonnes was landed in November, 1.2 tonnes landed in December and 2.0 tonnes landed in January. Altogether 159 trips were undertaken equivalent to 477 man-trips for the season with 28 trips in November, 63 trips in December and 68 trips in January. The snorkelling and trap capture methods represented 70.2% and 29.8% of the catch respectively. The catch per unit of effort (CPUE) for November through January was: -36 kg/trip (November), -39 kg/trip (December), -28.5 kg/trip (January). Three main species were targeted: Panulirus penicillatus (Homard Grosse Tete), Panulirus longipes (Homard Rouge), Panulirus versicolor (Homard Vert). The catch composition by fishing method was: a) Snorkellling: Homard Grosse Tete : 80.4% Homard Rouge : 19.2% Homard Vert : 0.4% b) Trap: Homard Grosse Tete : 100%
