The precipitates, which are obtained by the addition of Ca-ions to applepection solutions, are salt-like, stochiometric compounds of calcium and pectin. If the precipitation is carried out in a weak acid or in an alkaline solution, neutral Ca-pectinates are obtained in which all free COOH-groups are bound to calcium; where as precipitation in strong acid solutions lead to acid Ca-pectinates in which some free COOH-groups are still present. The solubility of neutral Ca-pectinates of the same degree of esterification in water and acids decreases with increasing molecular weight; the solubility of neutral Ca-pectinates of the same molecular weight increases with increasing degree of esterification. Pectins, with a molecular weight between 90 000 and 150 000, can only then be precipitated in an acid solution by Ca-ions, if the degree of esterification is not greater than 50 - 60%. The complete precipitation of an approximately 50% esterified pectin by Ca-ions requires 4 - 41/2 times the amount of Ca-ions which are necessary to block the free COOH-groups of the pectin.

Die Niederschläge, die durch Zusatz von Ca-lonen zu Apfelpektinlösungen erhalten werden, sind salzartige, stöchiometrische Verbindungen von Ca und Pektin. Erfolgt die Fällung im schwach sauren bzw. im alkalischen Medium, so erhält man neutrale Ca-Pektinate, bei denen sämtliche im Pektin vorhandenen nicht veresterten COOH-Gruppen an Ca gebunden sind, während bei der Fällung im stark sauren Medium saure Ca-Pektinate erhalten werden, bei denen noch freie COOH-Gruppen vorliegen. Die Löslichkeit von neutralen Ca-Pektinaten gleichen Veresterurgsgrades in Wasser und Säuren nimmt mit steigendem Molekulargewicht ab; bei neutralen Ca-Pektinaten gleichen Molekulargewichtes nimmt die Löslichkeit mit steigendem Veresterungesgrad zu. Pektine mit einem Molekulargewicht zwischen 90 000 und 150 000 sind nur dann im sauren Gebiet durch Ca-Ionen fällbar, wenn ihr Veresterungsgrad 50 - 60% nicht überschreitet. Die vollständige Fällung eines zu rund 50% veresterten Pektins durch Ca-lonen erfordert das 4 - 41/2 fache der Menge Ca, die zur Besetzung der Freien COOH-Gruppen des Pektins benötigt wird.
