Summary Every improvement brought to the chemical analysis of a food-stuff allows us to better define, ascertain, and control its gustatory or useful qualities. Very often the component, existing in very small quantities, more particularly those of the aroma, are the most significant. That is the reason more especially, why gas chromatography is called to attain a great development in this field. But one can foresee that there will always be a limit to the possibilities of defining the quality of a product by its chemical composition.
Abstract:
Zusammenfassung Jede Verbesserung der chemischen Untersuchung eines Lebensmittels erlaubt seine Geschmacks- und Nutzqualitäten besser zu definieren, zu beurteilen und zu kontrollieren. Oft sind die Komponenten, die nur in ganz geringen Mengen vorkommen, vor allem die Aromastoffe, von größter Bedeutung. Aus diesem besonderen Grund schon wird die Gaschromatographie auf diesem Gebiet eine große Entwicklung erfahren. Man kann jedoch voraussagen, daß es immer eine Grenze geben wird, für die Möglichkeit der Qualitätsbestimmung eines Lebensmittels am Rand seiner chemischen Zusammensetzung.

Résumé Toute amélioration de l'analyse chimique d'une denrée alimentaire permet de mieux définir, mieux constater et mieux contrôler ses qualités gustatives ou utiles. Souvent des constituants à très faible taux, en particulier ceux de l'arôme, sont les plus significatifs. Pour cette raison, notamment, la chromatographie en phase gazeuse est appelée à un grand développement dans ce domaine. Mais, on peut prévoir qu'il existera toujours une limite à la possibilité de définir la qualité d'une denrée par sa composition chimique.
