    Notes: Abstract Extensive empirical research has been published on the fermentation of vegetables, but little predictive modeling of the process is available. The objectives of this study were to assess the effects of key variables involved in cucumber fermentation and to develop models for predicting the growth of Lactobacillus plantarum in pure and mixed culture fermentations. The growth medium for the studies was cucumber juice. The effects of various concentrations of lactic, acetic, and hydochloric acids and sodium chloride on growth at 30° C were determined in batch culture. Limiting conditions for growth were pH 3.37 (lower limit), 69 mm undissociated lactic acid, 150 mm undissociated acetic acid, or 11.8% NaCl. Acetic acid was stimulatory to growth at low concentrations (up to 40 mm) but inhibitory at higher concentrations. Lactic acid was more inhibitory than acetic acid, whether total or undissociated concentrations were used as the basis of comparison. A predictive equation for specific growth rate was developed, tested, and shown to predict growth of L. plantarum in batch processes reasonably well.

    Notes: Summary Specific growth rate models of product-inhibited cell growth exist but are rarely applied to fermentations beyond ethanol and large-scale antibiotic production. The present paper summarizes experimental data and the development of a model for growth of the commercially important bacterium,Lactobacillus plantarum, in cucumber juice. The model provides an excellent correlation of data for the influence on bacterial growth rate of NaCl, protons (H+), and the neutral, inhibitory forms of acetic acid and the fermentation product, lactic acid. The effects of each of the variables are first modeled separately using established functional forms and then combined in the final model formulation.

    Notes: The hydrodynamic behavior of paper pulp slurries in vertical laminar flow has been observed and modeled. Radiotracers were used to tag both the liquid and solid phases of slurries flowing in 4 and 30 cm pipes. Residence time distributions were determined for each phase and were used to derive and compare several flow models. A model consisting of a central core in plug flow circumscribed by a clear Newtonian annulus provides a good representation of the observed slurry behavior. Correlations between the model parameters and the Reynolds number and slurry consistency are presented, and implications of the results on the design of slurry flow reactors are discussed.

    Notes: Dust particles originally generated by two steelmaking processes were dispersed in an air stream and passed through a pilot-scale high gradient magnetic filter. In accordance with theoretical predictions, the experimental results showed that collection was improved by increasing the depth or density of the steel wool filter, increasing the applied magnetic field, or decreasing the filtration velocity. Collection efficiency increased with particle size up to about 2 μm, above which the efficiency tapered off, apparently due to reentrainment effects. Collection efficiencies of greater than 99% were obtained, indicating that high gradient magnetic filtration may be a practical method of controlling particulate emission from processes in the iron and steel industry.

    Notes: A method of moments has been formulated for the determination of the diffusivity of a gas in a polymer from a step response in a continuous permeation chamber. Contributions of system components other than the polymer are easily factored out to determine the contribution of the polymer alone, and this contribution is then analyzed to calculate the diffusivity. The method has been applied to the measurement of the diffusivities of sulfur dioxide in PTFE (Teflon) and fluorosilicone rubber tubes over a wide temperature range.

    Notes: The permeabilities and diffusivities of methane, ethane, propane, n-butane, and isobutane in commercially available poly(tetrafluoroethylene) (TFE) and poly(fluoroethylene-propylene) (FEP) Teflon have been measured in a Pasternak-type permeation cell. Experiments were carried out at upstream hydrocarbon partial pressures up to 50 torr (1000-60,000 ppm gas phase concentration) and temperatures from 40 to 195°C with films of 0.0508 and 0.127 mm thickness using nitrogen as carrier gas on the upstream and downstream sides of the membrane. The transient and steady-state permeation data are described well by a combination of Henry's law and Fick's law with a concentration-independent diffusion coefficient. Linear Arrhenius plots of both permeabilities and diffusivities were obtained. Linear correlations were found both between the activation energy for diffusion and the square of the gas molecule diameter, and between the logarithm of solubility at 90°C and the penetrant boiling point. Separation factors for binary mixtures of hydrocarbons were measured for TFE at 140°C and found to be similar to those predicted by individual permeabilities in most cases. Measurements with mixed gases were not made for FEP Teflon, but selectivities of FEP are expected to be similarly well described by the ratios of the pure gas permeabilities at the low partial pressures studied. The effect of annealing FEP Teflon for 24 hr at 200°C was found to produce an average of 20-30% reduction in solubility as well as a 9% increase in the activation energy for diffusion compared to as-received films. These effects are believed to be due to increased crystallinity in the sample upon annealing.

    Notes: Permeabilities and diffusivities of methyl chloride and benzene vapors at low activities in FEP Teflon membranes were measured in a continuous-flow permeation cell, at temperatures ranging from 47°C to 150°C. In all cases investigated, the permeabilities and diffusivities were independent of the penetrant partial pressure, and the permeation process was well described by a Henry's law sorption-Fickian diffusion model. The activation energies for permeation and diffusion and the sorption enthalpy were respectively 34.8 kJ/mol, 50.1 kJ/mol, and -15.3 kJ/mol for methyl chloride and 49.5 kJ/mol, 69.1 kJ/mol, and -19.6 kJ/mol for benzene. The diffusional activation energies for these two substances and other low molecular weight hydrocarbons correlate reasonably well with the Lennard-Jones collision diameters of the penetrant molecules. The solubilities correlate approximately with the penetrant boiling points, but the highly polar nature of methyl chloride and the aromaticity of benzene lead to deviations between the solubilities of these substances and those of nonpolar aliphatics with the same tendency to condense from the vapor phase.

    Notes: A method is presented for determining the diffusivity of a gas in a polymer from the response to a step concentration change in a continuous-flow permeation chamber. The outlined procedure has several advantages over techniques currently in use: it requires simple numerical integration rather than curve fitting; it utilizes the complete response, rather than a portion of the response which falls within the region of validity of a short-time asympotic solution of the diffusion equation; and it is applicable both to flat membranes and cylindrical tubes. An illustration of the method is provided by the measurement of the diffusivity of sulfur dioxide in a PTFE tube at several temperatures.
