    Notes: Twelve treatment combinations including three fat levels, two internal endpoint temperatures, and two storage periods for ground beef patties were studied. Quality and sensory attributes as well as cholesterol content were evaluated. As fat level increased in raw patties, cholesterol content, drip and total cook loss, fat and cholesterol content of cook drip increased whereas red color intensity and evaporative losses decreased. Cholesterol content, evaporative and total losses, and beef-flavor intensity increased with higher internal endpoint temperature. Red color intensity of raw patties and cholesterol content of raw and cooked patties decreased with storage. No differences in cholesterol content could be attributed to fat content of raw product; therefore, choosing low fat ground beef to lower cholesterol may not be justified.

    Notes: A laboratory experiment examined the effects of applying decision support system (DSS) technology to decision making in ill-structured problem environments under varying information conditions. Marketing executives participated in the experiment which investigated the effects of DSS availability, DSS training, and data availability on dependent variables that included: (1) the number of alternatives considered by a subject during decision making, (2) the period of time spent by a subject to complete the decision-making process, (3) the subject's perceived confidence in the decisions he or she had made, (4) the amount of data considered by a subject's during decision making, (5) the individual subject's decision processing, and (6) the subject's performance overall. Our results indicate that all three factors significantly affect the number of alternatives considered by subjects during the decision-making process. We therefore suggest that DSS training be coordinated with decision training in order to realize the potential of DSSs as described in the DSS literature.

    Notes: Six treatment combinations for determination of cholesterol and selected quality attributes of pork tenderloin steaks were studied with three oven types (conventional, convection and microwave) and two internal endpoint temperatures (71°C and 77°C). In general, pork tenderloin steaks heated in the microwave oven had lower evaporative loss and higher drip loss. Cholesterol (wet weight basis) of the pork steaks was not affected by oven type; however, heating to the higher internal endpoint temperature (77°C) increased (concentrated) the cholesterol. On a dry weight basis, microwave-heated steaks contained more cholesterol when compared to conventional and convection-heated samples.

    Notes: Lates niloticus is not native to Lake Victoria but was introduced during or shortly before 1960. It remained relatively uncommon until 1975, when the number in the Nyanza Gulf began to increase impressively, the estimated catch rising over 100-fold between 1978 and 1982. Originally Lates was piscivorous, its diet reflecting the composition of the native fish community. The present investigation has revealed that its diet is now almost entirely comprised of Caridina nilotica, a small microphagous prawn, and juvenile Lates. Native fish species, except for the small pelagic Rastrineobola argenteus, are very rarely consumed. This change in diet is a result of the shattering impact Lates predation has had on the native fishes, which have been virtually wiped out. The original community, which was dominated by several hundred haplochromine species and the catfishes Clarias mossambicus and Bagrus docmac which preyed upon them, and included two endemic tilapiine cichlids and 38 species of non-cichlids, no longer exists. It has been replaced by a community dominated by Lates which now accounts for well over 80% of the fish biomass in the Nyanza Gulf and very nearly 100% in the study area. The only other species regularly encountered were Oreochromis niloticus, an introduced tilapiine, and Rastrineobola argenteus, a native zooplanktivore.

    Notes: Suspensions of rainbow trout erythrocytes in different physiological salines were compared with respect to their haematological and filtration properties.A method is described for the suspension of erythrocytes in Cortland saline which has proved suitable for studies of their mechanical properties over periods of several hours.Significant differences were found between whole blood samples taken during cannulation and after several days recovery, particularly mean cell volume, frequency distribution of red cell volumes and the pore passage time through nucleopore filters. These differences were also found using red cell suspensions of the same bloods. The pore passage time of whole blood sampled during cannulation or its suspensions is less than that of recovery blood although its mean cell volume is greater.

    Notes: The development of respiratory surfaces in post-embryonic stages of Anabas testudineus was studied using morphometric methods on serial sections through the pharyngeal region of specimens obtained by induced breeding of known parentage. The larvae and fry were fixed in glutaraldehyde and osmium tetroxide. In the young stages aquatic respiration was found to be obligatory. The hatchlings come out of the egg membranes about 10 h after fertilization. During the yolk-sac stages gaseous exchange takes place through the well vascularized skin. The gills start differentiating at about 24 h and become functional at about 39 h. The labyrinthine organs begin to develop after 51 h but the hatchlings do not take an air breath until they reach 13–14 days. The appearance of scales at 11–14 days probably hinders cutaneous respiration and is correlated with the onset of aerial respiration.Morphometric analysis using stereological methods shows high surface: volume ratios for the gills and labyrinthine organs as adaptations to gas exchange function. A marked decrease in surface: volume ratio for the suprabranchial cavities between 7 and 11 days indicates an increase in volume to accommodate the expanding labyrinthine plates which retain a fairly constant surface: volume ratio.

    Description: Contrary to the orthodox view that optical image quality should "match" the photoreceptor grain, anatomical data from the eyes of various animals suggest that the image quality is significantly superior to the potential resolution of the cone mosaic in most retinal regions. A new theory is presented to explain the existence of this relation and to better appreciate eye design.
