    Notes: The effects of different soy proteins and levels of these were studied in finely comminuted wiener-type products. Lean, skeletal beef muscle, pork backfat, textured soy protein (TSP) and soy protein isolate (SPI) were the main raw ingredients. TSP, when substituted for lean meat at levels greater than 25–30%, on a hydrated (1:2) basis, resulted in emulsion instability and texture softening of product formulated at 30% fat. SPI improved emulsion stability of mixtures high in TSP and fat, but had only a slight positive effect on texture. No differences in composition, cooking losses, peelability and skin formation were found in different soy-lean combinations containing 30% fat. Flavor or treatments with high levels (more than 25%) of soy was improved by using different seasoning mixes, Forty to forty-five percent lean beef, with 30% fat, was found adequate for acceptable color intensity of the cooked product. After processing, products with increasing levels of soy in the formulation had higher residual nitrite levels.

    Notes: Nutritive values of all-meat and soy-containing wieners were evaluated by protein efficiency ratio (PER), amino acid composition and sodium analyses. The effect of beef muscle reported to have high (shank) and low (skeletal muscles) levels of connective tissue was also evaluated. Replacement of 25% beef skeletal muscle by hydrated soy protein (BSMSP) gave a lower (P 〈 0.05) PER (2.67) than the PER (3.11) for all-beef skeletal muscle weiners (BSM). However, the PER for the BSMSP wieners was not significantly different from the PER (2.54) for the casein control. Beef shank, all-meat wieners (BS) and wieners where 25% of the beef shank (BSSP) was replaced by hydrated soy protein had similar PER values of 2.18 and 2.02, respectively. Both BS and BSSP wieners had lower (P 〈 0.05) PER values than the BSM and BSMSP wieners. BSM wieners contained 1.95–4.17 mg/100g protein more total essential ammo acids (minus tryptophan) than the beef shank and soy-containing formulations. Soy incorporation caused a 10–22% decrease in the methionine content compared to the all-meat formulations. Sodium levels ranged from approximately 990–1070 mg/100g in the four wiener formulations. The high sodium levels in these formulations were derived primarily from the 2% salt which was necessary to form the emulsions. Incorporation of the soy protein resulted in less than an 8% increase in the sodium content of the wieners.

    Notes: Summary Passive ionic permeabilities of synaptosomal membranes from rat brains were measured under various ionic conditions of intra- and extrasynaptosomal solutions by means of radioisotopic tracers, and were treated quantitatively. The efflux rates of Na+ and K+ ions were observed to be affected by the concentrations of permeable monovalent cations inside and outside the membranes, and not by other factors such as the osmotic pressure or the concentrations of anions. The rates increased with the outer concentrations of permeable monovalent cations, and decreased with the inner ones. Na-efflux was most efficiently accelerated by Na+ ions in the outer solution, and K-efflux by K+ ions. At the optimal conditions, K+ ions traversed the membranes much faster than Na+ ions. Cl-efflux was observed to be independent of the ionic condition of the outer solution. These observations could not be explained by simple electrochemical diffusions, and were discussed in relation to an ionic permeation model assuming exchange permeations at certain sites.

    Notes: Summary Vegetalising factor was isolated from swimbladder of crusian carp (Carassius auratus) by solubilishing with 8 M urea the precipitate obtained after digesting the swimbladder with collagenase. The urea-soluble fraction vegetalised isolated presumptive ectoderm ofTriturus gastrula and produced both undifferentiated mesodermal and endodermal cells. Brief heating of the fraction changed its capacity to produce organised mesodermal tissues, such as notochord and somite, and the frequency of induction of undifferentiated cells was reduced. By inserting the urea-soluble fraction into the blastocoel of an early gastrula, embryos without epidermis were obtained. Some of the embryos consisted of undifferentiated mesodermal and endodermal cells, but in the remaining ones small fragments of notochord, small numbers of somites and pronephros developed, enclosed by endodermal cells.

    Notes: Summary In vitro assessments were carried out to study some biological aspects of immune lymphocytes producing a new lymphokine, called by the authors Toxoplasma growth inhibitory factor (Toxo-GIF), which inhibits the intracellular multiplication of Toxoplasma gondii within nonimmune mouse macrophages. Concanavalin A and phytohemagglutinin-P were found to induce vigorous production of Toxo-GIF, whereas bacterial lipopolysaccharide did not. In vitro treatment of splenic lymphocytes with rabbit anti-mouse thymocyte serum plus complement abolished almost completely their ability to produce Toxo-GIF. Treatment of splenic lymphocytes with inhibitors of protein synthesis, cycloheximide or puromycin resulted in a remarkable reduction of the ability of sensitized lymphocytes to produce this lymphokine. Thus the production of Toxo-GIF seems to be dependent on the cellular metabolic events of sensitized T-lymphocytes. The significant activity of Toxo-GIF was demonstrable even in the supernate of lymphocyte cultures incubated in serum-free medium and was also evident after immune lymphocytes and homologous antigen were incubated for the relatively short period of 10 h.

    Notes: Summary The livers of Xenopus laevis, grouped by chronological age (0.5,2 and 3 yrs), were studied electron microscopically. Ultrastructurally most of the melanin granules in the mature female liver showed an-internal structure similar to the melanin granules of the oocytes. The hepatic melanin granules of immature females and of all males were pleomorphic and failed to show the characteristic internal structure similar to those of the oocytes. The oocyte is the probable source of most of the hepatic melanin of the mature female.
