Zusammenfassung Die Morphologie von Lösungen, Gelen und Filmen von Kuhmilch-Casein wurde mit Hilfe des Elektronen-mikroskops und der optischen Rotation untersucht. In allen Systemen wurden kugelige Aggregate der Proteine nachgewiesen. Im alkalischen Bereich ist die Aggregation der Mizellen begleitet von der Ausbildung eines Netzwerkes und einer Konformationsänderung. In saurem Milieu wurde die Konformationsänderung des Proteins nicht beobachtet.β-Casein-Mizellen reihen sich in einfachen Ketten auf, was durch die Oberflächenstruktur dieser Mizellen gedeutet wird.

Summary The methods of dispersion of the optical rotation and the electron microscopy were applied to the study of morphology of solutions, gels and films ofα- andβ-fractions of the cow milk casein. It has been demonstrated that in all analyzed systems the basic structural unit is a spherical aggregate of the protein molecules (micelle). In an alkaline medium the aggregation of micelles accompanied by the formation of the net of the gel is of statistical nature and occurs together with conformation transformations; in an acid medium we do not observe the variation of conformation of the protein molecules,β-casein micelles form single-line chains which is caused by localization of their interaction domains on their surface.
