Some physical and chemical properties of glutaric acid which pertain to its potential use as a food acid were studied. Comparisons were made between it and some approved food acids regarding solubility, hygroscopicity, acidity and rate of sucrose inversion. Results reveal favorable chemical and physical properties, making it an attractive prospect for a new food acidulant.
