    Notes: Phenoloxidase and peroxidase activity were analysed in haemolymph of juvenile shrimp, Litopenaeus schmitti, exposed to different salinity levels (35%, 18%, 8%) for 48 h. A significant reduction (P〈0.05) in total glucose and phenoloxidase activity in animals exposed to lower salinities (18% and 8%) was recorded, while peroxidase activity and total protein concentration did not vary. Histology revealed the occurrence of oedema in gills in shrimp exposed to 8%. The work demonstrates for the first time that in L. schmitti, low salinities can decrease glucose levels in haemolymph and create an immunosuppressive state by reducing phenoloxidase activity.

    Description: El exoesqueleto de cabeza de langosta precocida constituye un recurso pesquero con amplias potencialidades para la obtención de aditivos alimentarios. En Cuba a este residuo no se le da ningún uso. Como una alternativa de aprovechamiento se propone la obtención del clorhidrato de glucosamina por hidrólisis ácida de la quitina derivada del exoesqueleto de cabeza de langosta precocida a escala de laboratorio. Se efectuó el acondicionamiento de la materia prima mediante la limpieza manual, lavado, secado, trituración y molienda. Se procedió a la obtención de quitina, siguiendo el protocolo de desproteinización, blanqueo y desmineralización. Para la obtención de glucosamina se estudiaron como factores la concentración de ácido clorhídrico (3; 4 mol/L) y el tiempo de reacción: 75 y 90 min, y como variable respuesta el rendimiento. Se realizó el procesamiento estadístico mediante el programa STATGRAPHIC Centurión 15. El rendimiento de obtención de quitina fue de 85,66 % ± 1,53 y para la glucosamina de 85,52 % ± 2,92. Los mayores rendimientos de glucosamina se obtuvieron con una concentración de 4 mol/L y un tiempo de reacción de 90 min. Se comprobó la presencia de glucosamina en todas las corridas realizadas mediante el cambio de coloración del reactivo de Fehling. La transformación de este residuo contribuye al cuidado del medio ambiente, por su reutilización y la posibilidad de obtener un producto de valor agregado.
    Description: The precooked lobster head exoskeleton is a fishery resource with great potential for obtaining food additives. In Cuba this residue is not given any use. As an alternative use, it is proposed to obtain glucosamine hydrochloride by acid hydrolysis of chitin derived from the exoskeleton of precooked lobster heads on a laboratory scale. The conditioning of the raw material was carried out by means of manual cleaning, washing, drying, crushing and grinding. Chitin was obtained, following the deproteinization, bleaching and demineralization protocol. To obtain glucosamine, the concentration of hydrochloric acid (3; 4 mol/L) and the reaction time: 75 and 90 min were studied as factors, and the yield as a response variable. Statistical processing was performed using the STATGRAPHIC Centurión 15 program. The yield for obtaining chitin was 85,66 ± 1,53 and for glucosamine, 85,52 % ± 2,92. The highest yields of glucosamine were obtained with a concentration of 4 mol/L and a reaction time of 90 min. The presence of glucosamine was verified in all the runs carried out by changing the color of Fehling's reagent. The transformation of this waste contributes to caring for the environment, due to its reuse and the possibility of obtaining a value-added product.

    Description: El cobo (Lobatus gigas) es un importante recurso pesquero para Cuba y el Caribe debido a su relevancia económica. El presente trabajo tuvo como objetivo evaluar la calidad microbiológica de la masa de cobo procesada por industrias pesqueras cubanas durante el período 2017-2019. Para ello se determinaron por cada año los microorganismos indicadores: microorganismos a 30 °C (NC ISO 4833-1: 2014), E. coli (NC ISO 7251: 2011) y microorganismos patógenos: Vibrio cholerae y Vibrio parahaemolyticus (UNE-EN ISO 21872: 2018) y Salmonella spp. (NC ISO 6579-1: 2019). Los resultados se compararon con los criterios microbiológicos establecidos en la NC 585: 2017. En los años 2017, 2018 y 2019 se analizaron 40, 35 y 45 muestras respectivamente. Durante el período analizado el indicador con mayores resultados no conformes de acuerdo con la norma cubana NC 585: 2017 fue el de microorganismos a 30 °C. Los conteos de E. coli estuvieron dentro de los límites establecidos por la Norma. Las muestras analizadas en los tres años dieron ausencia de microorganismos patógenos.
    Description: The queen conch (Lobatus gigas) is an important fishery resource for Cuba and the Caribbean due to its economic relevance. The objective of this work was to evaluate the microbiological quality of the queen conch processed by Cuban fishing industries during the 2017-2019 period. For this, the indicator microorganisms were determined for each year: microorganisms at 30 ºC (NC ISO 4833-1: 2014), E. coli (NC ISO 7251: 2011) and pathogenic microorganisms: Vibrio cholerae y Vibrio parahaemolyticus (UNE-EN ISO 21872: 2018) and Salmonella spp. (NC ISO 6579-1: 2019). The results were compared with the microbiological criteria established in NC 585: 2017. In the years 2017, 2018 and 2019, 40, 35 and 45 samples were analyzed, respectively. During the analyzed period, the indicator with the highest non-compliant results according to the Cuban standard NC 585: 2017 was that of microorganisms at 30 ºC. The E. coli counts were within the limits established by the Standard. The samples analysed in the three years gave absence of pathogenic microorganisms.

    Description: La bioseguridad en la acuicultura se ocupa de la gestión de la sanidad de los animales acuáticos y la reducción de los riesgos a la salud pública asociados con la producción y el consumo de productos acuícolas. Particularmente, las enfermedades son un tema de atención en todo sistema de cría y producción de animales. En la acuicultura cubana, una de las especies ícticas de mayor importancia es el pez gato africano Clarias gariepinus. Esta especie introducida es afectada por protozoos ciliados parásitos de la familia Trichodinidae durante los primeros estadios de vida. El presente trabajo se trazó como objetivo, identificar y caracterizar las especies de tricodínidos que afectan el cultivo de C. gariepinus en la estación de alevinaje La Juventud, Provincia Pinar del Río, Cuba. Dichas especies identificadas y caracterizadas fueron T. heterodentata, T. acuta y T. merciae, las cuales son consideradas peligros biológicos para el cultivo de este pez. Estos resultados constituyen el primer paso para desarrollar un análisis de riesgo que garantice un manejo adecuado de la bioseguridad en las estaciones acuícolas.
    Description: ENGLISH ----------------In aquaculture, biosecurity deals with the management of aquatic animals’ health and to reducing risks to public health issues associated with the production and consumption of aquaculture products. In particular, diseases are a matter of care in every animal husbandry and production systems. In Cuban aquaculture, one of the most important fish species is the African catfish Clarias gariepinus. This introduced species is affected by parasitic protozoa of the family Trichodinidae during the first stages of its life cycle. The present work was outlined as objective, to identify and characterize the species of tricodinids that affect the C. gariepinus cultivation in La Juventud fingerling station, Provincia Pinar del Río, Cuba. The identified and characterized species were Trichodina heterodentata, T. acuta and T. merciae, which are considered biohazards for the culture of this fish. These results constitute the first step to develop a risk analysis that guarantees adequate management of biosecurity in aquaculture stations.
