    Description: Accurate scientific and practical plan for achieving the goals of the Islamic Republic of Iran within the framework of Vision development 1404 , is the infrastructure achieving sustainable development of the country . Order to achieve the above mentioned objectives and in order to the comprehensive development plans in the country, Iranian fisheries research organization adjust the fifth developing plan for support of executive related departments in country with mobilization a large number researchers consists of several working groups of ifro affiliated research centers . The fifth developing plan consist of three chapters for report of the forth developing plan and intrudction of research , construction plans and financial support (budjet) for period of 2011-2014 A.C .

    Description: The effects of chitosan (Ch) (Medium molecular weight chitosan) coating combined with natamycin (Ch+ N) on quality of salted kutum (Rutilus frisii kutum) roe (treated with 4% NaCl salt) during refrigerated storage (4±1°C) were studied over a period of 90 days. A solution of Ch (1%, w/v) and Ch+ N (1%, w/v Ch +5 and 10 mg natamycin per Kg salted roe) was used for the coating. The control (salted roe) and the coated roe samples were analyzed periodically (0. 30, 60 and 90 days) for chemical (TVB-N, PV and TBA), remaining salt and pH characteristics. The results indicated that the chitosan coating enhanced the storage quality of the kutum salted roe as compared to an uncoated salted roe (control). Chitosan coating combined with natamycin afforded better protection than chitosan coating for chemical parameters (TVB-N, PV and TBA). Remaining salt was determined lower than 2% for all treatment. The conclusion was showed the combination of chitosan coating and natamycin at a 10 mg per Kg of roe were increased shelf life of the kutum roe.

    Description: This project was carried out in order to increase the shelf life of Kilka Fish and prevent color changes during cold storage. Edible film made of sodium alginate (1% concentration) was used for fish packaging. This project was carried out in four treatment and in triplicates. Treatments were coated samples at intervales times of 0, 2 and 4 hours shelf life in sodium alginate solution and uncoated Kilka (control samples). The coated and control samples were kept at -18 oC. Examination were carried out for a period of six months. Examination was conducted on 21 packs from each treatment on day 1 after processing and from first month untill sixth month after processing.Total bacterial counts and Staphylococcus bacteria count were lower in the coated samples compared to the control samples. Coliform, Escherichia coli and Pseudomonas bacteria contamination were not observed until the end of storage period in the coated samples. Moisture was less in the coated samples at time = 0 and was highest in the coated samples at time = 4 hour. Peroxide value, free fatty acids, thiobarbitoric acid, TVN and pH were higher in coated samples at time = 0 compared with other samples and in coated samples at time = 4 were lower compared with other samples. Statistically significant (p〈0.05) decreases were observed in the coated and control samples during cold – storage. Sensory analysis carried out based on ranking method. Over all there was a significant difference (p〈0.05) between the coated samples and control ones. The coated samples at time = 0 had the best quality. The coated samples at time= 4 hour had lower quality. According to the results, the coated samples had good quality until the end of storage period. Based on the results of sensory analysis the coated samples maintained quality for a period of three months.
