Résumé Les auteurs ont amelioré la méthode d'Oser pour calculer la valeur biologique des protéines basée sur la teneur en acides aminés essentielles en considerant 1) des acides aminés essentielles en excès qui rompent l'équilibre désirable des acides aminés 2) la somme des acides aminés non-essentielles. Par conséquence ils donnent une nouvelle formule mathématique pour la calculation.
Abstract:
Summary The method ofOser for the compution of the biological value of proteins on the basis of the content of essential amino acids has been improved. Authors have taken into account the detrimental influence of the essential amino acids in excess on the desirable amino acid equilibrium, as well as the sum of the non-essential amino acids, and have deduced a new mathematical formula.

Zusammenfassung Verfasser verbesserten dieOsersche Methode zur Berechnung der Biologischen Wertigkeit von Eiweißstoffen auf Grund der Aminosäurezusammensetzung. Die in Überschuß vorhandenen und das Aminosäuregleichgewicht schädlich beeinflussenden essentiellen Aminosäuren, sowie die Summe der nicht-essentiellen Aminosäuren wird in Betracht gezogen und zwecks Berechnung eine neue mathematische Formel angegeben.
