    Notizen: The help desk and user support industry has, over the last ten years, risen to prominence as one of the most important areas of the IT and customer services industry. However, it has also become clear that not all help desks have the same requirements, and help desks operating in academic environments find themselves with distinct circumstances and problems. Drawing on research published by the author, and a comprehensive review of recent literature and input from practitioners, addresses these issues which distinguish the help desk in academia. Also finds that it often suffers from difficulty in defining its role and obtaining resources, examines how some institutions have successfully tackled these problems and offers some suggestions for strategies, future developments and sources of expert advice.

    Notizen: It is widely assumed - and frequently asserted - that university communication practices are being radically transformed by the introduction of electronic communication. Explores the introduction of Internet access in a single university, the University of Canberra, located in the capital city of Australia. The prime objective was to identify the frequency and type of use that academic staff were making of the Internet during 1995, with supplementary objectives being to record perceptions of users toward the Internet, and barriers to its effective use. The principal finding is not unexpected: academics were making very varied use of the Internet. Some staff were utilizing some facilities on a daily basis; others were yet to begin exploring this new communication medium. A particular surprise was that at the time of this survey the Internet was being used very little for teaching.

    Notizen: Analyzes a national random telephone survey, carried out in October 1995, on the motivations for and barriers to Internet usage. Eight percent of the random sample reported being Internet users, while surprisingly another 8 percent reported being former users. In total, 85 percent of respondents reported having heard of the Internet. The survey showed evidence of a digital divide, Internet users being generally wealthier and more highly educated, and blacks and Hispanics disproportionately unaware of the Internet. Social and work networks appear to be important for stimulating interest in the Internet and providing users with support. As to reasons for using the Internet, socio-personal development appears to be the key driver, while nonusers have a decidedly different set of beliefs about the Internet's value. As to the barriers to Internet usage, even experienced users find it difficult to get started, which confirms other studies of this topic. Barriers include cost and difficulties in understanding how to use the Internet. Concludes that the results of the survey indicate that people strongly desire an easier-to-use Internet.

    Notizen: Knowledge of the Internet Protocol (IP) address is essential for connection establishment in certain classes of synchronous distributed applications, such as Internet telephony and video-conferencing systems. A problem of dynamic IP addressing arises when the connection to the Internet is through an Internet service provider, since the IP address is dynamically allocated only at connection time. Proposes and draws a contrast between a number of generic methods that can be classified as online and offline methods for the resolution of dynamic IP addressing. Online methods, which include the World Wide Web, exchange server and the dynamic Domain Name System, are only effective when both the caller and recipient are logged on to the Internet. On the other hand, offline methods, which include electronic mailing and directory service look-up, provide an additional means to allow the caller to leave messages when the recipient is not logged on to the Internet. Of these methods, the dynamic Domain Name System and directory service look-up appear to be the best for resolving dynamic IP addressing.

    Notizen: Proposes a system in which the information superhighway can be built, maintained and routinely upgraded by the efforts of multitudes of small scale servers looking after only their own individual economic interests. Each server will be classified as either a "parasitic" server or an "integrated" server. At a given band-width level, integrated servers are equal to each other in their network, but parasitic servers will be functionally dependent on their integrated parent servers to which they must pay a fee. Although it is initially cheaper to open a parasitic server, economic incentive will motivate owners of parasitic servers to make their servers integrated. The primeval seed of this network will be a structure composed of three servers arranged in a triangle called the "base delta." The first integrated servers will be connected to each of the three base delta servers. Later, servers will have to be connected to at least three other integrated servers to qualify as integrated servers. Each base delta will have a territory extending from it that, when intermeshed with other base delta territories, will become "integrated" base delta territories. All integrated servers within integrated base delta territories are equal to each other in function. The aim is to motivate the owners of independent small-scale servers in such a way as to cover the globe with integrated base delta territories.

The purpose of the identification phase (Phase I) is to identify the criteria that influence a particular user community's use of the Web and to analyze these within the context of the users' overall information-gathering behavior. Data were gathered through a questionnaire and electronic focus group session with nine faculty from four business schools. Participants identified 49 Web page features which clustered into eight broad categories of criteria having a significant positive or negative impact on their use of WWW pages. They also identified types of information normally used in work activities; methods of finding this information within the current information service environment; likely changes in behavior if the information became available via the Web, including willingness to pay.

It has become common practice by researchers of all kinds to turn to the Internet as a convenient source of information. Asks how effectively does the Internet really present these researchers with a representative picture of the state of human knowledge? Identifies the potential misuse of the Internet as a source of biased information. Defines biased information as information not representative of the state of human knowledge. In order to provide a basis for comparison, begins by defining the concept of a representative subset, which is used as a basis for comparing the nature of different information resources. This is followed by a presentation of the use of the knowledge-comparison function in evaluating different information resources. Then discusses the significance of information equivalence in the information age as a basis for setting concrete goals for Internet research policy. Concludes by presenting a number of courses of action including a description of X-DEX, an Internet indexing standard based on the US Library of Congress cross-reference system.

Increasingly, information has become a commodity, commissioned for a specific purpose and shaped to fit the needs of the commissioner. Establishing why information is needed is an integral step in deciding on the particular focus or slant that any search strategy, and subsequent information analysis, must take. A comprehensive, or indeed a balanced, collection of information may be neither necessary nor desirable. End-users may only require information that will support their information need. Choice of information sources will also be governed by these information needs, and their selection is a vital factor in the provision of useful, relevant information and its successful communication to the end-user.

More specifically the term netiquette has been described as the conventions of politeness recognized on Usenet and in mailing lists. In the context of the new Internet global culture, attempts are being made to identify common standards of etiquette. Literally hundreds of specific netiquette suggestions are published. Identifies the following most frequently cited specific suggestions for online users: think first; write in upper and lower case; avoid abbreviations; be concise; avoid smileys; don't flame; don't take offense easily; don't evangelize; and know the audience. Netiquette breaches do not always bring retribution. Most breaches of politeness and courtesy may do no more than reflect poorly on the individual user. One who knows the rules of this new culture may well have an advantage over one who does not.

    Notizen: The National Capital FreeNet (NCF) in Ottawa, Canada is one of the largest and most successful community online services in the world. A sample of 1,073 National Capital FreeNet (NCF) users were surveyed about their demographic characteristics, their access methods, and their levels of satisfaction. The results indicate that NCF users are not a specialized group in the community, but are comparable to the local regional population in age, education, and income. NCF users most often connect from home using modems, often using equipment and telephone lines purchased specifically for this service. NCF users connect to the system regularly, and usage of the system was not strongly related to demographic factors. NCF users are very satisfied with the system and satisfaction and donations were not strongly related to demographic factors or use of the system. These results suggest that this community network has a broad appeal and that current and future online services may have significant widespread impacts on individuals and society.

Attitudes towards foods are often determined very early in life and the promotion of "healthy" eating patterns among all age groups depends partly on understanding the factors which influence food choice decision making and the factors which determine attitudes towards food and food choice. Food choice, however, is still often characterized by an "all or nothing" approach, whereas a balance which allows a child to feel "normal" while healthy eating patterns are discretely promoted is often of greater long-term benefit. This article highlights some recent controversies in nutrition for very young children and indicates what recent research in this area means in practice.

Unfortunately, the more common haemorrhagic colitis can at times develop into the haemolytic uraemic syndrome with associated renal disease which can lead to fatalities. It is now apparent that few bacterial cells are needed to spread infection and that cross-contamination is therefore a significant problem. Although there are national programmes to investigate E. coli 0157 infection and gain new information on epidemiology, handwashing is seen as a very simple but effective approach to prevent transmission from contaminated material to food. We need to be made aware of the clinical importance of E. coli infection and how best we can bring it under control.

These data are combined with those from other countries exploiting common fisheries and used in analytical assessments carried out by international working groups at the International Council for the Exploration of the Sea. The results provide the basis for negotiations of each year's total allowable catches at the European Council of Ministers.

    Notizen: States that sandwiches purchased by customers from an outlet in the centre of Manchester (UK) were analysed and a comparison was made between the actual nutritional status of the sandwiches and customers' perceptions of the same. Customers selected, on average, sandwiches which were below the standard nutrient requirement for energy and non-starch polysaccharide. However, they were adequate on other criteria such as iron and saturated fatty acid. Customers with relatively higher nutritional knowledge were no better at judging the nutritional content of their sandwiches, which suggests that customers generally should benefit from clearly presented, easy to understand, nutritional information.

    Notizen: Profiles the development of menu-engineering models and, in particular, the movement supporting the quantification of all costs associated with the production of a menu item. Reports the findings of a study of upscale restaurant menu planners. While all menu planners adopted elements of menu engineering when planning menus, most rejected the opportunity to factor in non-material direct costs as a major component of determining menu content and prices. In particular, individual dish labour cost was not considered an important menu-planning criterion. Dishes which attracted low sales, but which planners felt added interest to the menu, were included on the menu. This supports the view of most advocates of qualitative menu analysis that the profitability of individual dishes on the menu is only one of several important criteria when designing the menu.

Analyses the results with respect to demographic criteria and finds good overall understanding, but there are some surprising misconceptions and a lack of understanding of recently introduced concepts. States that comprehension was clearly related to familiarity with the terminology employed. Nutritional myths and misconceptions were not widely held, although there were some discrepancies between expert and lay understanding (e.g. cholesterol popularly perceived as a type of saturated fat, and evening primrose oil as a vitamin). Despite some deficiencies in understanding, claims use of food label information in making purchasing decisions was extensive. Examines sources of background knowledge of food and nutrition, and of current fads and scare stories, and presents the results. Studies of nutritional understanding are seen as part of the wider domain of the public understanding of science.

    Notizen: Examines the antioxidant activities of a range of hydroxy-substituted phenolic acids by estimating their relative abilities to scavenge the ABTS_+ radical cation generated in the aqueous phase, expressed as the Trolox equivalent antioxidant capacity (TEAC value). These common food components have varying reducing abilities, dependent on the positions and extent of hydroxylation of their phenol ring. Reports the research results which suggest that some simple phenolic acids are most effective antioxidants, up to two to three times as active as vitamin C. Their relative abundance in fruits, oils, etc. indicates that they may be highly significant contributors to the overall dietary antioxidant intake. Para-coumaric acid (4-hydroxycinnamic acid) was found to have a TEAC value of 2.2mM (more than twice the antioxidant activity of vitamin C). Ferulic acid (3-methoxy, 4-hydroxycinnamic acid), the active component of oryzanol (rice bran oil) was found to have a TEAC value of 1.9 mM and gallic acid (3, 4, 5-trihydroxybenzoic acid) a TEAC of 3.0mM (i.e. three times the antioxidant activity of vitamin C). Discusses the significance of these and other related compounds as food antioxidants and as non-nutrient antioxidants in the diet.

Reports on research into attitudes to time and investigates three different aspects of people's attitudes towards food shopping and preparation: an enjoyment of cooking; and a traditional orientation and a modern (role-sharing) attitude to the linked activities. Identifies two clearly defined groups. No differences between the groups existed on demographic factors such as age, gender, whether the respondent had paid work and housing type. No differences existed in their ownership of time-saving consumer durables. One group clearly saw mealtimes as significant activities and found cooking enjoyable. It did not matter whether the people in this group were time-pressured or not - they chose to allocate time to these activities and they differed in their attitudes to time. A substantial group in society still do see food shopping and meal preparation as important activities. Contends that while such individuals may be subject to modern-day pressures they still appear to organize their time to maintain a traditional perspective. Considers the implications for food retailers and other marketers.

Focuses on factors that determine consumer behaviour in relation to light products, using both quantitative and qualitative research techniques. In-depth diagnostic interviews are used qualitatively to develop a structured questionnaire, and quantitatively, a mail survey was organized through which the questionnaire was completed by 1,891 households. Analyses the results of the questionnaire by means of the Triandis model to determine behaviour towards light products. Eight components are analysed to explain behaviour: cognitive; affective; moral; social; behavioural control; willingness to change behaviour; facilitating conditions; and habits. Results reveal that dairy products are the most popular of the "light" products, though they do not have a far from "light" image. Behaviour is dominated by a preoccupation with weight control and illness prevention, and is highly influenced also by the household's view. However, the "light" focus on the slim figure is now less appreciated by consumers, while a more dominant role is being allocated to health aspects. From a marketing point of view, a dramatic switch in product development and communication is needed.

Explains the value or weight of purchases by various geographic, demographic and behavioural factors, specifically: the distance travelled to the shop (closely related to the frequency of shopping), the gender of shopper, whether the shopping was undertaken on the main shopping day of the week, and income (by far the dominant explanator). However, because of the limited quantities purchased on each shopping occasion, and the low numerical variation in purchases, the question for future research is whether some combination of low value attached to shopping time, logistical limitations, and storage constraints operates to limit the purchases of shoppers. Such research findings would support a decentralized retail strategy for sales maximization.

In contrast, after a meal rich in spreading fat, separation of fat above the aqueous contents of the stomach is liable to delay the fat's emptying and hence its contact with satiety receptors in the small intestine; eaters are therefore unlikely to learn to eat less of a menu rich in separated fat. Yet the delayed emptying may prolong the period of digestion and absorption of separated fat beyond that for the same amount of fat emulsified or bound in the aqueous phase. Hence, separating fat might better help to delay the rise of appetite for the next meal several hours later. These ideas explain some of the diversity of claims about satiation from fats in foods. Tests illustrate how individuals learn from the post-ingestional effects on appetite of variants of the foods they choose routinely.

    Notizen: Complaints handling is now a marketing tool for retailers. Intense competition within the food retail sector makes it an area for retailers to gain competitive advantage. However, the commitment to complaints handling through employee training is a largely unexplored area. Describes how an in-depth questionnaire was used to survey UK multiple food retailers regarding the existence of complaints procedures; aspects of training such as prevalence, frequency, hours and methods; and the authority to resolve complaints in relation to employee status. Customer and staff communication, as part of the complaints handling process, was also investigated. Seven retailers took part in the survey and included a cross-section of retailers (including one of the major multiples), based on number of branches. Reports the results, which showed that all the food retailers had some form of training. However, this varied with employee status. Generally, training was not given frequently in a formal manner, but on an ad hoc basis. Authority to resolve complaints appears to lie still with senior staff, although customer and staff communication facilities appear to exist. Argues that complaints handling can be effective only with appropriate staff training at all levels.

    Notizen: Presents the results of a postal questionnaire to UK food and drink manufacturers on the costs of compliance with food regulation. In particular, the questionnaire focused on the usefulness of compliance cost assessments - introduced by the Government in 1985 across all government departments as an analytical tool for assessing the regulatory costs to business - as they relate to food businesses. Explains that the questionnaire sought to establish to what extent food companies actually costed the impact of food regulation on their business operations and explored other aspects of food regulation, such as the benefits and constraints. Reports the results which gave some unexpected insights on the costs of compliance with food regulation. For example, the majority of respondents were not aware that the Ministry of Agriculture Fisheries and Food carried out compliance cost assessments on food regulation; around two-thirds of the sample found it "difficult" or "very difficult" to identify where compliance costs would affect their company and an even greater proportion (more than three-quarters) said they would have problems quantifying compliance costs. Concludes that the compliance cost assessment, as a tool for helping to analyse the cost of food regulation on businesses, is an inappropriate method for the food sector and the development of new methods should be considered.
