Summary
The chemical composition of60Co γ-irradiated potato tubers (Solanum tuberosum cv.Kufri Sindhuri) after germination shows significant changes. The contents of ‘total’ solanine, a glycoalkaloid, citric and ascorbic acids and total solids increase. Malic acid decreases to some extent while pyroglutamic acid does not follow any regular pattern. Except glutamic acid all other free amino-acids increase. Under the influence of low doses titratable acids show an appreciable increase but a 4-krad dose retards their synthesis. No appreciable change has been noted for nitrogen percentage. The size of the starch granules increases with higher doses and the quantity of anthocyanin decreases.
