    Description: During last 65 years the catch of mullets had increasing trends with some fluctuations in the Iranian coastal water of the Caspian Sea .In this period about 138 thousand tons of mullets have been caught. Mullet’s account for 35% of total catch annually .In recent years species composition of mullets has chanched in the Iranian coastal water of the Caspian Sea and catch composition of golden grey mullet increased from 76% in 1995 to 98% in 2006. In this survey some biological characteristics of golden grey mullet have been studied in Iranian coastal water of the Caspian Sea .Fish samples have been gathered from commercial catch of beach seine cooperatives monthly in Iranian coastal water of the Caspian Sea over 2006 and 2007. In the laboratory fishes have been measured biometrically and biological parameters have been calculated .Also catch statistics of mullets during 2006-2007 have been obtained and discussed. Results showed that the catch of mullets in beach seine cooperatives during 2006 and 2007 was 4181 and 3685 tons respectively that golden grey mullet contribute 99% and 98% of the catch composition of mullets respectively. Length range of golden grey mullet caught by beach seine cooperatives was 19-50.2 cm with mean length of 32.7 ± 6.4 (± SD) and weight range was 67-1475 gr with mean weight of 411 ± 255 gr. The age structure of this species was comprised 2-10 years old fish with mean age of 4.42 years old. In this survey totally the sex ratio of male:female of golden grey mullet was 356: 434 that was significant variation from equal sex ratio. Pick of the spawning in Guilan province was in October and in Mazandaran and Golestan provinces was in November. In October the proportion of spawning females declined from western area (Guilan province) towards eastern parts (Golestan province).The highest proportion of spawning females was in December in Golestan province. The highest GSI index value was observed in September and October and it was decreased in November and December and it was consistent during January till April. The mean absolute fecundity was 700881 ± 429987 eggs with minimum and maximum fecundity of 200112 and 2282862 eggs respectively. The Lm 50% for female golden grey mullet was calculated as 33.6 cm.

    Description: Kilka fish burger and silver fish is product of minced fish meat kilka and silver carp are mado of flavors , fillings, vejetables and spices.this fusion can be made on a toasted ( fried or raw ) and be marketed. The project was to replace the effects of different amounts of kilka fish insted of meat silver carp burger in preparing the consolidated on acceptance and qualitative changes in the past 5 months were examined and selected the best treatment for the industrial manufacturing industry in presented .Therefore , the four treatments with a variety of burger meat mixed with kilka and silver carp have been defined and the sensory evaluation were prepared . Based on statistical tests , selected treatment 3 ( kilka hundred percent ) in terms of flavor and color is in the highest rating . Also , the control treatment in term of taste , odor and color is in second priority. It is noteworthy that treatments 1 and 2 , in the next priority is accepted . Goals of this plan is consolidation of kilka and silver carp in preparation of consolidated burger in order to financial purpose in final product. Chemical, microbiological, sensory evaluation and free fatty acie of the product during the 5 months storage at -18 c is illustrated that, the product is maintained its quality during the entire sensory and chemical paraments.

    Description: Scientific and practical planning for achieving the lofty goals of the Islamic Republic of Iran in the framework of development plan of 1404 is the requirement to achieve sustainable development. Establishing roadmap of industries and products was considered by the scientific and technology office of the deputy president, in order to achieve the abovementioned objectives and in line with the national scientific comprehensive map. Therefore, present study was conducted as the roadmap of national aquatic-food processing development using available approved documents e.g. Iran perspective of 1404, fifth developing plan of I.R. of Iran, developing plan of Iranian fisheries organization in 1400 and the available approved statistical data. Current perspective of the aquatic-food processing is presented at the first chapter of the study. The second chapter reviewed the problems and obstacles. Third chapter tabulated the published studies and researches in fish handling and processing so far. Finally fourth chapter recommends executive and research projects considering quantitative and qualitative objectives of Iran 1400 plan as well as fifth developing plan of Shilat-Iran (Iranian fisheries organization). Authors hope the study to be useful in the national planning of I. R. of Iran in the future.

    Description: During last two decades 200 millions of kutum fingerlings were released into the Caspian Sea Rivers annually. Morpholine as retrieving agent were used by many researchers for homing of fishes. To understand the effects of morpholine on fisheries return of kutum fishes a project with use of tagging method was approved in2004 and its first phase started in 2005. Brooders were selected from Khoshkrud River and breeding were done in shahid ansari hatchery, Rasht. Totally 15930 fishes were subjected for this study. 5480 fingerlings (4-5g.) were used for determining the dose effects of morpholine (3 treatments 5x10*-2,5x10*-5 ,5x10*-7 mg/lit) in return rate and homing of fishes. Results revealed that there were significant differences between kutum return rate exposed with 5x10*-5 mg/lit (0.62 %) with other treatments i.e. : 5x10*-7 ، (0.15%) and 5x10*-2 (0.37%) during the experimented period(P〈0.001). To determine the critical period for imprinting of morpholine 10450 kutum fishes were exposed to 5x10*-5 mg/lit of morpholine in different growth stages(yolk sac fry ,active fry, 2-3-g. fingerlings , 4-5 g. fingerling ).Results showed significant difference between kutum return rate in active fry stage(1 %) compare to other stages i.e. , yolk sac fry (0.23%) , 2-3- g. fingerling(0.23%) , 4-5 g. fingerling (0.26%) and control(0.13) during the tree years of experiment(P〈0.001). There were significant difference in sex ratio [M(1.42): F(1)] in recaptured kutums in khoshkrud river( x2=6.4 α= 0.05 df= 1).Recapturing rate were 6.7 % compare to recapture rate during last 5 year(5%) revealed that morpholine can be use for return rate enhancing of kutum.

    Description: Sampling for this study was carried out at the freshwater crayfish fishing season (May to December ) from the selected packs made from one of the harvesting centers at the first day ( harvesting and packing ) until the seventh day ( the export time ) using registered number to determine the handling effect ( live ) and changes in chemical and microbial indices in tail fillet stored at -18 ° C at days 1 and every 15 days considering 1 treatment and 3 replicates. The comparison of results mean (±SE) of the effects of handling on tested indices showed a significant reduction of protein percentage (dry weight) of tail filet at day 7 (13/85 ± 0/07) comparing with fishing day (16/1 ± 0/05) ( (p 〈 0.05). So that by increasing the handling and storage period, the amount of protein (dry weight) was reduced. Comparison of carbohydrate percent (dry weight) during handling showed a significant difference between the first day (2/8 ± 0/009) with the seventh day (0/9 ± 0/005 (p 〈0.05). Percent of moisture showed a significant increase during handling between day 1 (79/2 ± 0/24) and 7 (84 ± 0.41) (p 〈 0.05). Mean chemical composition of haemolymph showed a significant reduction in triglycerides (milligrams per deciliter) at fishing day (14/3 ± 0/16) and day 7 (11/7 ± 0/13) (p 〈 0.05). Comparison the means of saturated and unsaturated fatty acid profiles and the ratio of DHA / EPA did not show significant differences (p〉0.05). Comparison of the mean (±SE) of total bacterial count (log CFU / g) and psychrophilic bacteria at different periods of tail fillet storage at - 18 °C showed significant differences at day1 ( 3.48 ± 0.00 and 1.0± 0.00) compared to day 180 ( 6.86± 0.85 and 6.75± 0.25) , respectively(p〉0.05) .Comparison of Mean (±SE) of chemical indices for first day with day 180 were thiobarbituric acid ( mg malondialdehyde /kg ) (0.19/0 ± 0/07) and (1/45 ± 0/25), peroxide ( meq oxygen/ kg fat ) (0/81 ± 0/21) and (2/2 ± 0/3), total volatile basic nitrogen ( mg per 100 g fillet ) (13/21 ± 1/01) and (26/6 ± 1 / 40) and acidity (6/26 ± 0/08) and (6/55 ± 0/05), respectively which showed significant differences with each other (p 〈 0.05). Therefore, cited to the results of microbiological and chemical parameters, maximum shelf life longetivity of freshwater crayfish tail fillets packaged in the air is recommended as 5 months after freezing at – 18 °C.

    Description: This research project is conducted to develop a protocol on designing and manufacturing a set net by mathematical process. It was expected to achieve an appropriate model development for economical fishing. It is also aimed to function a substitute for the type of fishing gears that are not economical and some fishing tools exert pressure environmentally in the fishing area. The experiments took place from Iranian coastal area from Astara until Torkaman region. In this research study ecological, biological including topographical status are considered. The fish biomasses, length frequency, species composition in the catch have been identified. Biometric data of economical species, time of migration and its courses, the distance of fish shoal relative to shoreline are recorded. Bottom quality of seabed and gradient of coastal area, estuary, and bays have been determined. Distribution of depth area, which traps could be set has been mapped. Water transparency, wind direction, water velocity, wave height are measured. Meteorological data of the near past years are collected. The level of bony fishes catch and its diversity in beach seines are also gathered. The field research in Southern parts of Caspian Sea, the mathematical process and analyses of data using state of the art methodology contributed to design and develop an appropriate model for fabrication of a set net with good results and practicality. In this the experience of coastal fishing by set nets in Azerbayjan Republic, Black Sea, and other lakes and reservoir being incorporated in our designing and fabricating. The research revealed the present manufactured model set net could be applied in coastal area of Caspian at the depth limits of 20 meters; Anzaly coastal lagoon and parts of Gorgan bay are excluded. In south west of Caspian from Astara-Talesh which beach seining could not be economically operated, this type of set net regarded as viable alternative. It is also the preferential area for this type of set net application could be named as river,s estuaries, and on the beach seine site facing sea-bed erosion and destruction, which the new developed model are workable substitute. Scouring qualified references and textbooks indicate the best type of set net, in view of physical skeleton (hard, soft, combined formed) structure, also considering water depth, solidity and needed firmness of net and economical and selective fishing, the traps part mainly should be set on soft structure on buoyant. This initiative enable the set net could be move in seaward depth, despite higher water currents and more elevated wave. In this circumstances the set net display more firmness in contrast of variation of its shape and destruction when operating. Set nets with soft structure and its bag parts (bag less, two bag, one side bag and a longer bag linear), with longer bag linear which are costly effective in fabricating, easy setting and lifting from sea, damaging limitation in contrast to waves, better fishing capability and emptying fish could be used more efficiently by beach seines cooperative by fishers of 8 or 10. With regard to the width of fish shoal in Iranian coastal area, it is suggested the traps could be joined with additional leader and a second trap at the end of leader being attached. In this condition relative to distance of migrating fish school, the length of walls of should not exceed from 400 500 m. Evaluation of the selection characteristics in set nets regarding selectivity on fishing in different phase, it is possible to capture of target species more sustainable by changing nets mesh in body parts skeleton and walls including traps by increment of mesh size option.

    Description: Bony fish stocks are being legally utilized by 134 fishing cooperatives in the Iranian side of the Caspian Sea mainly through beach seine. This fishing method has been invariantly used over the past. Fifty years with actually no alteration or technical modifications in the fishing nets despite the substantial changes in the quality & quantity of bony fish resources. Based on the data obtained from the stock assessment project for bony fish, the amount of premature or young fish (substandard size) caught during the past decade has been far greater than those of authorized fish size and even the figures far certain species suggest heavy over fishing to such an extent that in the case of frisii kutum, there has been a reduction by 50% in the overall kutum landings.Thus in order to modify the technical design of the fishing with a view to alleviate the catch of non-standard fish and whereby prevent over fishing by beach seine, it seems imperative therefore to launch a biometric study on bony fish stocks particularly the two intended fish species namely Rutilus frisii kutum and mullet which would involve identification of their standard weight and length using pertinent mathematical equations as well as determining proper mesh size of the code-end and other parts of the nets & consequently the H. R, d/a coefficients. The operations related to project were carried out in the "Inland Aquaculture Research Institute" net mating plant and beach seine site in Anzali during 2005-7 which aimed at designing and constructing standardized beach seines and comparing the fishing performance & yields with those of ordinary beach seine nets under equal conditions with a ratio of 3:1. The results concerning the quality and quantity of fish caught during a whole fishing cycle were recorded in the related data forms. The statistical analysis consisting the comparison of the quality of fishing performance in both the experimental and control beach seine nets was made using T. student and excel, spss 12 software packages. The results indicated that the reduction in the amount of non-standard fish caught in standardized beach seine net (the experimental net) was meaningfully different from that of the ordinary (control) net showing the superior fishing performance of the former. The catch level of non-standard R.frisii kutum decreased from 67.1% in the control beach seine net down to 7.1% in the standardized beach seine net and these figures for mullet were 29.98% and 1.1% respectively. Based on the results obtained and considering the apparent superiority of the experimental net in catching greater number of mature fish and less number of premature or non-standard sized fish, the use of this modified beach seine net can be proposed to Iranian fisheries organization as a viable alternative to the traditional beach seine nets.

    Description: Abrams brama distribution in the Caspian and most of it is in the Anzali lagon. Completed in the rivers to spawn or hibernate done, hibernation mass takes place in the well of the rivers, which feed the crustaceans, mollusks and aquatic insects are born. This fish is almost vertical and is able to search for food in the mud in shallow waters and residents due to competition for food with other species of plankton and plants inevitably feed. This fish has an economic value and good taste for meat consumption has become common. Fish patty prepared food that is easy to cook and good demand. The benefits of fish patty are the most of fresh fish, good use of raw materials, availability of several species of fish in the product, socio-economic benefits for fishermen and fishing industry, product nutritional value and high in protein rejection. Fish Protein Concentrate is a healthy food products, durable and of high nutritional value of fish and hygienic manner in which the protein and other nutrients found in fresh fish and more compact than the long-term maintenance and diverse the second is for the production of food products. The study aimed at producing FPC type A string of fish, fish cakes prepared by the FPC obtained and reviewed the nutritional value, acceptance and endurance cookies generated at room temperature for one month . After examination of the nutritional value, shelf-life tests using factors of corruption, TVB-N, pH, TBArs and sensory tests showed that the most important indicator of the value of food, especially protein product treatments with better FPC and the factors corruption is not much difference between 5% FPC and blank treatment. The final product is important in terms of nutritional value and shelf life, group 2 has a significant difference with other treatments and the final product can be made on the basis of treatment 2.

    Description: This Research has been done monthly in Sefidroud river and its tributaries from Agust 2003 to July 2004 . From the total number of 2027 specimens of caught fish , 800 and 629 were males and females respectively , and 598 specimens were undistinguished. Samples were caught by cast nets. Fork length range of all specimen was 33-255 mm (119.56 ±46) and their weight rang was 0.42-257.5 gr (34.4 ±39.06) gr and their age range was 0-5 (1.76 ±0.959) year. The avrege of relative frequency in C.c.gracilis was 65.1 % . The average of condition factor was 1.07±0.13 . Between Fork length and weight of C.c.gracilis . Was exponential relation and coefficient of correlation was estimated 99.11% . Growth cofficient (k) was 0.114 ; L∞ was estimated 373.5 mm. C.c.g consumed of Chrysophyta phylum more than other Phytoplankton phyla in Sefidroud river and from Bentic point of view, consumed of clay, Filamentous algae detritus, insects, seeds. Absolute fecundity range was 1823-9274 (4553.8 ±2169.1) eggs. Considering the GSI and frequency percent of maturity stages, spawning period of the fish begins from April and peak of spawning is in June and terminates in July.
