    Notes: The antioxidant capabilities of whey in a Tween 20TM-stabilized salmon emulsion were investigated. Whey fractions inhibited formation of thiobarbituric acid reactive substances (TBARS) and lipid peroxides in a 10 % salmon oil emulsion in the order of whey 〉 high-molecular-weight (HMW) fraction 〉 low-molecular-weight fraction. Heating the HMW fraction exposed sulfhydryls, with optimum exposure at 80 °C. Heating the HMW fraction above 80 °C increased antioxidant activity. The HMW fraction of whey (80 °C) alone, α-tocopherol (40 ppm) alone, and their combination inhibited TBARS 59,19 and 86%, respectively, at 21 d of storage. Sulfhydryls oxidized before a-tocopherol, suggesting that sulfhydryls are the primary antioxidant. Results indicate that whey proteins could be useful antioxidants in food emulsions.

    Notes: Surface fatigue crack studies were carried out and statistically analysed from rotating bend fatigue tests in the high cycle region for three metals, copper, stainless steel and mild steel with four ferrite grain sizes. Quantitative observations of the initiation and growth behavior, including coalescence of closely spaced cracks, are discussed and a limiting condition for coalescence is proposed. Statistical properties of initiation, propagation and propagation rate of surface cracks are examined and the effect of different metals and grain sizes is discussed.

    Notes: Abstract— The effects of bluing, associated with drawing strain, on the fatigue strength of eutectoid steel wires have been investigated. The fatigue limit increases by bluing and the increase is more significant with higher drawing strain. The peak in the fatigue limit with regard to the drawing strain in the wires, at a strain of 2.5, disappears after bluing. On the other hand, in the ferritic steel wires investigated for comparison, the fatigue limit gradually increases with the drawing strain up to 7.7. Furthermore, no appreciable change in the fatigue limit due to bluing is found. Based on the results of hardness tests on fatigue specimens with- and without-bluing, it is deduced that the decrease of the fatigue limit beyond the peak drawing strain in the eutectoid steel wire can partly be attributed to insufficient locking of the high-density dislocations by solute atoms. The effect of relaxation of residual stress during bluing is also briefly discussed.
