    Notes: We evaluate the effect of high moisture content (MC) stored maize grain on tortilla quality and on the growth of toxigenic fungi. Maize with a MC of 18% was stored for 10, 15, and 20 d at 28 °C. The control seed was stored 20 d with a MC of 10.7% at 4 °C. The high MC grain and the control were processed using the traditional nixtamalization process. Storage conditions had a significant effect on tortilla quality parameters such as pH, color, tensile strength, cut force, viscosity peak, starch retrogradation (setback), and aflatoxin contamination. Tortillas produced with high MC grain presented a lower quality than those produced with low MC grain.

    Notes: : :To evaluate the relationship between the factors affecting coagulation, the hot wire method was used for direct measurements of the renneting milk process as well as a central composite design with 3 factors: rennet concentration (x1), renneting pH (x2), and temperature (x3). Second-order models for maximum voltage (Y1), time at maximum voltage (Y2), and coagulation time (Y3) were employed to generate response surface contours. Optimum conditions for cutting time were found with x1= 0.0278 R.U./mL milk, x2= 6.60, and x3= 35 °C, for which the responses were Y1= 2854 ± 171 μV, Y2, = 14.08 ± 3.04 min, and Y3= 7.16 ± 1.12 min. No significant differences (p 〉 0.01) were found between the 3 responses obtained in the experiment and the ones predicted by the models. The use of the objective and non-destructive monitoring of curd formation and the response surface methodology can be recommended to optimize milk coagulation.

    Notes: A chromosomal DNA fragment from Streptomyces antibioticus ATCC11891 was isolated by its ability to stimulate actinorhodin and undecylprodigiosin biosynthesis in Streptomyces lividans TK21. This fragment includes two open reading frames, whose deduced translated products resemble enzymes involved in sulfur metabolism (ORF1) and LysR-type transcriptional regulators (ORF2). The cloning of the promoter region of ORF2 (abaB) in high copy number led to overproduction of both antibiotics suggesting that this phenotype might well be due to titration by this region of one or more proteins. Southern blot analysis revealed that abaB gene is highly conserved among all streptomycetes tested.

    Notes: The current taxonomy within the subgenus Profundulus was reviewed and at least five different species were recognized on the basis of unique genetic characters. Two of them are considered to be new species not yet described: one is known only from a single spring in the Tehuantepec basin (Mexico); the second extends mainly through springs in the Mixteca region of Mexico. The maximum Nei distances were found between P. oaxacae and the rest of the species belonging to this subgenus. Compared with the other Profundulus species, the new species from Mixteca also had high Nei values, which suggest separation of these species probably during the Miocene period. Therefore, the previously postulated old Central American origin of Profundulus is supported by our data. The mountain uplift that gave rise to the current division of Pacific and Atlantic rivers may be the reason for the current distribution pattern of the subgenus Profundulus. The sporadic presence of this subgenus in the headwaters of some Atlantic rivers has been interpreted as the result of fluvial captures during the Pleistocene period.
