Summary By treatment of fish-meal with performic acid, it is possible to convert methionine, cystine and tyrosine residues in the intact protein into products stable to hydrolysis. After hydrolysing with hydrochloric acid, maximum values of amino acids were found, compared with amino acid values of non-treated 24, 48 and 72 h hydrolysates. It is assumed that unstable amino acids are protected and the cleaving of relative HCl-resistant peptides is accelerated by performic acid.
