    Notes: A puff pastry dough that remained stable at refrigerated temperatures was developed. Dry heat treatment was used to partially destroy amylase and lipoxygenase in wheat flour. Water activity of puff pastry dough was reduced from 0.98–0.90 by addition of 12g sorbitol/100g flour. The adverse effects of sorbitol on baking properties of puff pastry were alleviated by addition of sodium stearoyl lactylate and gum arabic. The puff pastry dough stored at 5°C in air or nitrogen was stable for 75 days without any significant loss in specific volume or pastry height in comparison with the frozen control.

    Notes: Processed cell wall β-glucans prepared from strains of baker's or brewer's yeast can be used as a thickening agent in aqueous food systems and they provide a fat-like mouthfeel. This article describes an analytical procedure for the determination of the glucan content added to a variety of food products. The method is based on measurement of reducing sugars produced when the food sample, after appropriate pretreatment, is treated with a commercial microbial β-glucanase (Zymolyase) that is specific for the β-linkages present in the glucan polysaccharide of the added yeast cell walls.

    Notes: Jalapeno peppers were canned and treated with calcium chloride, calcium hydroxide, and calcium lactate. Concentrations of 0.2, 0.3, and 0.4% of calcium were used. After 3 months of storage time, the peppers were evaluated for texture, quality, and nutritional composition. Calcium hydroxide was an inadequate firming compound in this experiment because of its neutralizing effect on the acid content and the precipitation found in the can after storage. Calcium chloride at a concentration of 0.2% was found to be the most desirable firming compound because under the test conditions it did not impart a bitter taste and because its solubility properties are better than those of calcium lactate. Higher concentrations failed to significantly increase the firmness of peppers. The treatments produced no adverse effects on the flavor or the vitamin and mineral content, with the exception of calcium, in canned jalapeno peppers.

    Notes: Carrot pie fillings were prepared from carrots that did not meet fresh market standards but were otherwise of good quality. The pie fillings were prepared by mixing carrot puree, sugar, salt, and ground spices or oil extract spices. Nutrient composition analysis showed that vitamin A was five times higher in carrot pie fillings than in pumpkin pie filling. Thiamin, niacin, and total carbohydrates were higher in carrot pie fillings. Sensory panel scores show that carrot pie was preferred over pumpkin pie and ground spices over oil extract spices. The results of this work indicate that an acceptable carrot pie filling of equal or better nutritional value than pumpkin pie can be prepared.

    Notes: : Information on biologically important physical and chemical variables is presented for Lake Oconee, a newly impounded pumped storage reservoir in Georgia. During its first summer, when no pumping occurred, temperature, oxygen, pH, inorganic nitrogen, and phosphorus were vertically stratified with severe hypolimnetic oxygen depletion. During the second summer, when pumped storage was in operation, more homogenous vertical profiles, generally higher oxygen, and lower dissolved nutrient concentrations were observed. These pumped storage effects were observed at all stations, rather than being confined to the immediate vicinity of the dam.

    Notes: : Zooplankton colonization was followed for 16 months in Lake Oconee, Georgia, a new pumped storage reservoir. Data were interpreted to identify differences among stations and seasons, as a function of the reservoir's early stage of development and of pumped storage operations. Colonization was rapid, and the zooplankton community was characterized by a high species diversity; approximately 40 rotifer species and 14 cladoceran genera were recorded. Zooplankton density varied along an environmental gradient from riverine to lentic conditions. Rotifer abundance varied from 104-106 individuals/m3, with maxima in the summers Copepod and cladoceran densities ranged from 103 to nearly 105 individuals/m3; maxima for stations other than the dam were observed in the summer and early fall, but high values at the dam station occurred throughout winter 1980. When pumped storage operations began in December 1979, zooplankton densities increased at the dam station. Pumpback decreased the intensity of the environmental gradient from riverine to lentic conditions, and led to a more similar zooplankton community structure throughout the reservoir.
