    Notes: SUMMARY: Four types of pastry were evaluated for tenderness by a trained sensory panel, a Bailey shortometer, a L.E.E.-Kramer shear press, and a “tenderpen” (an objective device designed to evaluate the tenderness of pastry). All the methods of evaluation investigated could detect significant differences in tenderness between the types of pastry used in the study. Highly significant correlations were found between the subjective and objective methods of evaluation examined; the best agreement existed between the results of the organoleptic panel and those of the shear press. The panel and the shear press rated all four pastry types in the same order, the panel and shortometer disagreed on the tenderness of one type, and the tenderpen and panel ranked two of the four types similarly. The shear press was the most precise and the shortometer the feast precise of the four methods investigated.

    Description / Table of Contents: Zusammenfassung Es wird eine Meßanordnung beschrieben, die es gestattet, ein nach dem Prinzip einer Gasdiffusions-Brennstoffzelle arbeitendes, galvanisches Element als selektiven Detektor in der Gas-Chromatographie einzusetzen. Die Zelle besteht aus einer Silberoxidelektrode als Kathode, einer porösen Platinelektrode als Anode mit vorgegebenem Ruhepotential und wird in einer Differentialschaltung verwendet. Als Elektrolyt dient Kalilauge. Dieser elektrochemische Detektor zeigt mit hoher Selektivität primäre und sekundäre Alkohole sowie Aldehyde an, während er auf Äther, Ketone, Carbonsäuren und Kohlenwasserstoffe nicht anspricht. Die Peakflächen sind bis zu Strömungsgeschwindigkeiten von 1 ml/sec der aufgegebenen Menge proportional. Unter diesen Bedingungen erfolgt eine vollständige anodische Oxidation der angezeigten Substanzen zu den entsprechenden Carbonsäuren bzw. Ketonen. Die Empfindlichkeit des Detektors ist etwa zwei Größenordnungen höher als die der Wärmeleitfähigkeitszelle. Sie kann durch elektronische Verstärkung noch erhöht werden.
    Abstract: Sommaire Il s'agit d'un montage de mesure permettant d'utiliser un élément galvanique comme détecteur sélectif d'un chromatographe en pahse gazeuse, élément travaillant à partir du principe de la diffusion des gaz d'une cellule à combustible. La cellule est constituée d'une cathode en oxyde d'argent et d'une anode en platine poreux dont le potentiel de repos est fixé d'avance et est utilisée dans un circuit différentiel. Une solution de potasse servira d'électrolyte. Ce détecteur électro-chimique réagit avec une grande sélectivité aux alcools primaires et secondaires ainsi qu'aux aldéhydes alors qu'il ne répond pas aux éthers, aux cétones, aux acides carboxyliques et aux hydrocarbures. Les surfaces des pics sont, jusqu'à un débit de 1 ml/sec, proportionnelles à la quantité utilisée. A partir de ces conditions on obtient une oxydation anodique complète des substances indiquées en acides carboxyliques ou cétones correspondants. La sensibilité du détecteur est environ deux fois plus grande que celle de la cellule à conductibilité thermique. Elle peut être encore améliorée à l'aide d'amplificateurs électroniques.
    Notes: Summary A selective detector for gas chromatography is described which make use of a galvanic element working on the principle of a gas diffusion fuel cell. The cell sonsists of a silver oxide electrode as a cathode, a porous platinum electrode as an anode with a predetermined equilibrium rest potential, and it is used in a differential circuit. The electrolyte is potassium hydroxide. This electrochemical detector has a high selectivity for primary and secondary alcohols, as well as for aldehydes, while it does not react to ethers, ketones, carboxylic acids, and hydrocarbons. Up to flow rates of 1 ml/sec, the peak areas are proportional to the injected quantities. Under these conditions, there is complete anodic oxidation of the detected substances to the respective carboxylic acids or ketones. The sensitivity of the detector exceeds by two orders of magnitude that of a thermal conductivity detector. It can be increased by electronic amplification.

    Description: It is now well established that sea level rise is not uniform and presents large deviations from its global mean trend. Indeed, some regions such as the western Pacific ocean experience a linear rise 3 times larger than the global mean sea level trend since 1993 (e.g. Cazenave and Llovel, 2010). Superimposed to the long-term trend, the interannual variability may enhance or reduce sea level change over a shorter time period. These variations are linked to the interannual variability of the steric sea level associated to natural modes of climate variability such as El Nino Southern Oscillation (Llovel et al., 2010). In this work, we investigate the local sources and sinks of interannual steric sea level variability using the ECCOv4 (Estimating the Circulation and Climate of the Ocean, Forget et al., 2015) state estimate. The ECCOv4 state estimate is based on the assimilation of various observations including ocean bottom pressure from GRACE and sea surface height from successive satellite altimetry mission. Moreover, it satisfies the law of physics and thermodynamics. Using a new method based on steric sea level variance budget, we find that the variability is, in almost all regions, sustained by interannual fluctuating winds via Ekman transport and damped by both interannual variations of the net heat flux from the atmosphere and by oceanic mesoscale eddies. The methodology developed in this work presents evident advantages first to better interpret observations and secondly to assess the reliability of coupled climate models used to predict future sea level changes.

    Description: In the child and adolescent psychiatric clinics, more and more children and adolescents are being introduced by schools, school psychology services, youth welfare offices and the police in order to have their potential risks assessed professionally. Against this background, but also in view of the dramatic rampage events in Erfurt, Emsdetten and Winnenden, the book provides an overview of the latest interdisciplinary research findings as well as attempts to explain the specific dynamics and conveys treatment concepts and approaches to prevention. The author pursues the principle that only an interdisciplinary approach and the synopsis of the various aspects from a developmental psychological, depth psychological, systemic, neurobiological and sociological perspective can do justice to the complex topic of understanding the dynamics.

    Description: In the last few decades, near-infrared (NIR) spectroscopy has distinguished itself as one of the most rapidly advancing spectroscopic techniques. Mainly known as an analytical tool useful for sample characterization and content quantification, NIR spectroscopy is essential in various other fields, e.g. NIR imaging techniques in biophotonics, medical applications or used for characterization of food products. Its contribution in basic science and physical chemistry should be noted as well, e.g. in exploration of the nature of molecular vibrations or intermolecular interactions. One of the current development trends involves the miniaturization and simplification of instrumentation, creating prospects for the spread of NIR spectrometers at a consumer level in the form of smartphone attachments—a breakthrough not yet accomplished by any other analytical technique. A growing diversity in the related methods and applications has led to a dispersion of these contributions among disparate scientific communities. The aim of this Special Issue was to bring together the communities that may perceive NIR spectroscopy from different perspectives. It resulted in 30 contributions presenting the latest advances in the methodologies essential in near-infrared spectroscopy in a variety of applications.
