    Description: Es wird immer schwieriger, vergleichende Studien über die zahlreichen Pollendiagramme eines Interglazials innerhalb Nordwesteuropas oder aber verschiedener Interglaziale dieses Raumes zu machen, und zwar wegen der Mannigfaltigkeit der Zonierungssysteme, die die einzelnen Autoren anwenden. Dennoch haben aber Iversen (1958) und Andersen (1966) gezeigt, daß in jedem der bisher untersuchten Interglaziale ähnliche Zyklen der Vegetationsentwicklung und der Bodenbildung abgelaufen sind. Die Verfasser legen dar, daß in jeder Interglazialzeit 4 Perioden der Vegetationsentwicklung festgestellt werden können und daß diese als natürliche biostratigraphische Zonen angesehen werden können, basierend auf dem Charakter der Pollengemeinschaften. Diese Perioden sind: Zone I, die Pre-temperate Zone, Betula und Pinus dominieren; Zone II, die Early-temperate Zone, Vorherrschaft der Bäume des Eichenmischwaldes; Zone III, die Late-temperate Zone, in zunehmendem Maße beherrscht durch spät einwandernde wärmeliebende Bäume, wie Carpinus und Abies; Zone IV, die Post-temperate Zone, wiederum beherrscht durch boreale Bäume, wie Pinus und Betula. Diese Zonierung kann für fast alle interglazialen Pollendiagramme Nordwesteuropas verwandt werden. Geringe Veränderungen der Vegetation, und zwar regional, lokal oder seral, können als Unterzonen beschrieben werden, ohne die Hauptzüge und den Zweck dieses Zonierungssystems zu stören.

    Description: Von den interglazialen Schichten in Histon Road, Cambridge, ist ein 8-m-Kern gewonnen worden. Er gestattete eine genaue Untersuchung der Pflanzen- und der Land- und Süßwasser-Molluskenreste. Die betreffenden Schichten gehören der Zone g der letzten Interglazialzeit und der Zone h-i an: letzteres Symbol soll andeuten, daß, obwohl die Kontinuität der Schichten nicht unterbrochen ist, die Picea-Zone, h, in diesem einzigen in Großbritannien bekannten Ausschnitt aus diesem Teil der letzten Interglazialzeit fehlt. Von Zone f ist keine Spur gefunden worden. Um ein Bild von der Paläoökologie zu bekommen, wurden die makroskopischen Pflanzenreste und Mollusken aus 41 Teilstücken inventarisiert, von denen jedes durchschnittlich 15 cm Länge hätte. Etwa 3000 Früchte und Samen und 16000 Mollusken wurden gefunden. Diese sind in ökologische und klimatische Verteilungsgruppen eingeteilt worden. Die Bedeutung der Variationen innerhalb dieser Gruppen wird behandelt. Die Pflanzenreste und Mollusken scheinen ein einheitliches Bild von einem Zustand zu bieten, der vom Sumpf bis zum fließenden Gewässer variiert, wie es von einem aufschüttend mäandrierenden Flusse zu erwarten ist.

    Notes: A relationship between the degree of brownness produced by deep-fat frying or by evaporating to dryness in a 100°C electric oven was established. Fresh pork as chops, in a water slurry, or a water extract developed varying degrees of brownness on heating. The amount of brown color development was related to the level of reducing sugars in the tissues. The degree of color development could be measured spectrophotometrically at a wavelength of 375 mμ. The development of brownness in buffered solutions was pH-dependent, with maximum color being produced between pH 5.60 and 5.90.

    Notes: The presence of catheptic enzymes in irradiated meat was shown to be responsible for an increase in free amino nitrogen and a decline in panel scores as storage progressed. Immediately following irradiation, about one-third of the free amino nitrogen was water soluble while the remainder was bound to the muscle fibers. At the end of 6 months storage, the proportion of free amino nitrogen in the heat-in activated sample to which the inactive enzyme preparation had been added remained unchanged, but for the inactivated sample with added active cathepsins only one-third of the free amino nitrogen remained bound to the fibers, whereas, in the raw sample only 15% was bound to the fibers. The addition of catheptic enzymes resulted in the release of a higher proportion of tyrosine and tryptophane than did the naturally occurring enzymes in raw meat.
