    Notes: Four fungal enumeration media, including potato dextrose agar (PDA) with antibiotics (APDA), acidified PDA (PDA-A), Cooke rose bengal agar (CRBA), and APDA containing the mold colony spreading inhibitor dichloran (APDA-D-5), were compared by seven laboratories for recovery of yeasts and molds from inoculated and naturally contaminated dairy products. Although some variability was observed in counts obtained for individual products between laboratories, no significant overall differences were observed among the four media. Mold colony diameters but not numbers were reduced with APDA-D-5 and CRBA, thus aiding in the counting of plates heavily contaminated with molds.

    Notes: Bacterial counts were compared for samples from three groups of beef from two different sources. Group 1 samples were from choice forequarters as received, then sprayed with HOC1 (200 mg/L, pH 6.0–6.5, 7.03 kg/cm2, 12 set at 16°C). Group 2 samples served as controls and were from choice forequarters from the same lot as group 1 but not sprayed. Group 3 samples were from frozen boneless lean domestic and imported beef, Surface strip and ground beef samples from groups 1 and 2 had aerobic plate counts (APC) and lactic acid bacteria counts (LABC) that were not significantly different, P 〈 0.001. Conversely, strip and ground beef samples from group 3 had APC and LABC that were significantly higher, P 〉 0.001, than those for the control, group 2, samples. Also, the coli-form and coagulase positive S. aureus counts were also significantly higher for the group 3 ground beef samples. Thus, the hypochlorous acid spray treatment of beef forequarters did not appear to yield ground beef with better bacteriological quality than the unsprayed forequarters from the same source, perhaps because the initial bacterial count was already so low. The higher surface APC of the lean boneless beef, group 3, was reflected in the higher initial APC of the ground beef prepared from that source.

    Notes: Processing waters from snap beans (SBW) and dry beans (DBW) were treated with 16 different cationic and anionic polyelectrolytes, singly and in combinations. None of the anionic and only two of the cationic polymers tested worked well for turbidity reduction. Treatments of SBW with Floculite 250 at 10–30 mg/L and of DBW with chitosan at 60–80 mg/L reduced turbidity (NTU) by 81 and 90%, chemical oxygen demand (COD) by 21 and 23%, total solids (TS) by 25 and 8%, suspended solids (SS) by 54 and 44%, dissolved solids (DS) by 22 and 0%, nitrate-nitrogen by 0 and 39%, and total phosphorus by 74 and 18%, respectively. Total aerobic bacteria, coliform bacteria, and mesophilic bacterial spores were reduced by 68 and 20%, 81 and 90%, and 94 and 96% for SBW and DBW treatments, respectively.

    Notes: : Annual exports of total phosphorus, soluble reactive phosphorus, and total nitrogen are presented for the period 1965–1974, for five rivers draining into the Bay of Quinte, Lake Ontario.The export values are typical for the physiography and land use though the results indicate that soluble reactive phosphorus exports for the four largest rivers have been declining. Also the variation in export of total phosphorus and total nitrogen is highly correlated with variation in annual runoff. This is noted as being a factor deserving more attention in future efforts to classify nutrient export values in relation to land use and geology.

    Notes: : We studied the effectiveness of partial replacement of glycerol with citric, lactic, malic, and tartaric acids on the antimicrobial activities of nisin (205 IU/g protein)-incorporated soy protein film against Listeria monocytogenes, Escherichia coli O157:H7, and Salmonella gaminara. S. gaminara inoculated into 2.6% malic acid-incorporated films and lactic acid-incorporated films with nisin (5.7 and 3.4 log number colony-forming units (CFU)/mL, respectively) and without nisin (3.2 and 3.0 log number CFU/mL, respectively) had fewer survivors than HCl-incorporated film with and without nisin (8.6 and 7.9 log number CFU/mL, respectively). Malic acid (2.6%)-incorporated soy protein film had the fewest survivors of L. monocytogenes, S. gaminara, and E. coli O157:H7 (5.5, 3.0, and 6.8 log number CFU/mL, respectively) and has the potential to inhibit a wide spectrum of microbes in product application.

    Notes: Abstract Chaoborid and chironomid (Diptera) fossils were examined in sediment cores form nine Ontario Precambrian Shield lakes that were fishless in 1979. An abundance of Chaoborus americamus (intolerant of predation by fish) throughout cores from four lakes indicated that they were fishless historically. Occurrence of Chaoborus punctipennis and C. flavicans and absence of C. americanus in cores, except near the surface in two cases, indicated that four other lakes were inhabited by fish historically. One of these was probably periodically fishless as suggested by fluctuations among these Chaoborus species. The ninth lake was not suitable for Chaoborus; only one specimen of C. trivittatus was found in this core. Chironomid fossil associations were substantially different in historically fishless and inhabited lakes. Fishless lakes had chironomids typical of eutrophic conditions indicating that seasonal oxygen depletion likely was inimical to fish. Chironomid associations of oligotrophic waters occurred in lakes historically inhabited by fish. Both good water quality and accessibility were required for long-term habitation by fish. Partial recovery of alkalinity and rise in pH were accompanied by substantial re-invasion by fish in two lakes which had been inhabited historically by fish. Diptera associations provide valuable information on the historical suitability of lakes for fish and the presence/absence of fish in regions where acidification of surface waters has occurred.

    Notes: Abstract Metal loads to sediments of Lake Simcoe were partitioned into three components, which were attributable to natural background, accelerated erosion, and point + atmospheric sources. These loads were calculated over time using metal concentration profiles together with pre-settlement sedimentation rates based on sonar and time-variable sedimentation rates based on 210Po profiles in cores. Concentrations of metals significantly higher than pre-settlement concentrations were observed in all cores in the case of Pb, back to 80 yr BP on average, and in at least 75% of cores, back to 60 yr BP for Cd and Zn and 30 to 45 yr BP for Cu, Ni, and Cr. Total metal loads increased 3 × for Cu and Ni, 4 × for Zn and Cr, 11 × for Cd and nearly 20 × for Ph from pre-1800 to 0 to 10 yr BP. At present about 90% of the anthropogenic loads of Pb and Cd, and 60 to 70% of the anthropogenic Cu, Ni, Zn, and Cr, are from point + atmospheric sources, the balance being from increased erosion. The direct atmospheric input of Cd is relatively high, approximately 77% of point + atmospheric inputs, while inputs of Cr and Ni are low at 1% and 9%, and inputs of Cu, Zn, and Pb are intermediate at 20 to 40% of point + atmospheric inputs. Two significant findings on spatial distribution of metals were the large increases in metal loads to Cook Bay following the drainage of 33 km2 of marshes for agricultural use and the widespread dispersal of Cr from point source(s) in Kempenfelt Bay.
