    Notes: Fermented salami was prepared containing 0, 9, 18 and 27% defatted sesame flour (DSF). Chemical and sensory analyses were performed on the products. Results indicated that DSF could be used at either the 9 or 18% level without detrimental effect upon sensory attributes but salami containing 27% DSF will have less desirable flavor.

    Description / Table of Contents: Résumé: Une contamination de l'eau souterraine par l'arsenic a été mise en évidence dans la vallée de Zimapan (Mexique). Des concentrations atteignant 1,097 mg/L ont été observées dans l'eau pompée dans l'un des puits les plus productifs. Trois sources d'arsenic sont connues. La source naturelle provient de l'oxydation de minéraux contenant de l'arsenic; c'est elle qui pollue l'eau pompée dans les puits les plus profonds et présentant les concentrations les plus fortes. Deux sources anthropiques polluent les eaux des puits les moins profonds. Elles proviennent du lessivage des stériles de mines et de centres de fumées de fonderie et qui reposaient sur le sol jusque dans les années 1940. L'identification et l'évaluation de sources multiples de polluants des aquifères est nécessaire pour établir les programmes de dépollution des aquifères, en particulier dans de nombreuses régions arides où les eaux souterraines sont en général la principale, sinon la seule source d'eau potable.
    Abstract: Resumen: Se ha detectado contaminación por arsénico en las aguas subterráneas de Valle de Zimapán, Méjico, llegándose a medir concentraciones de hasta 1.097 mg/L en el agua extraída de uno de los pozos más productivos. Se conocen tres fuentes de arsénico. La fuente natural se debe a la oxidación de minerales con alto contenido en arsénico, que contaminan las aguas más profundas y dan lugar a las mayores concentraciones. Dos fuentes antropogénicas contaminan los pozos superficiales. Estas fuentes corresponden al lixiviado de los residuos de minas y a la percolación de los gases de altos hornos, con un cierto contenido en arsénico, que se depositaron en el suelo en los años 40. La identificación y evaluación de fuentes de contaminación múltiples de acuíferos son necesarias para establecer programas de remediación fiables, especialmente en regiones áridas, donde el agua subterránea es normalmente la principal o incluso la única fuente de agua potable.
    Notes: Abstract: Arsenic contamination of groundwater has been detected in the Zimapán Valley, Mexico. Concentrations as much as 1.097 mg/L were observed in water pumped from one of the most productive wells. Three sources of arsenic are known. The natural source is produced by the oxidation of arsenic-bearing minerals; polluted water pumped from the deepest wells is derived from this source and has the highest concentrations. Two anthropogenic sources pollute the shallow wells. These result from the leaching of mine tailings and from the percolation of smelter fumes containing arsenic and which settled on the soil until the 1940's. The identification and evaluation of multiple sources of pollutants in aquifers are needed to establish reliable aquifer-remediation programs, especially in many arid regions, where groundwater in commonly the main or only source of drinking water.

    Notes: Summary To satisfy farmer and consumer preferences, breeding efforts to increase yield potential in common bean must take into account the interrelated effects of growth habit, seed size, maturity, and gene pool on yield expression in segregating populations. To examine the relationships among these traits, a genetic study was conducted to determine the effect of growth habit on yield and seed size in crosses among five bean lines from diverse gene pools. Two parental bean lines had determinate, type I growth habits and large seed size typical of the Neuva Granada-Andean gene pool. Two other lines were tropical Mesoamerican types with type II growth habits and small seed size; and the fifth line, G13625, a landrace of the Jalisco gene pool from the Mexican highlands, had a type IV climbing growth habit and medium seed size. Individual F2 plants from each cross and parental lines were evaluated for growth habit and yield component traits under high input field conditions. The following season, the evaluations were repeated on random F3 plants. Of the five parental lines, only G13625 showed significant GCA effects for yield in both the F2 and F3 generations. Improved yielding ability of G13625 progeny was associated with an increased expression of climbing bean growth habit traits: guide length, climbing ability, node number on main stem, and plant height. Crosses between Andean x Mesoamerican and Andean x Jalisco genotypes, as well between growth habit type I (Andean x Andean) and between type II (Mesoamerican x Mesoamerican) had very low parent-offspring heritability values for yield. Yield heritability was only significant for crosses between Mesomerican x Jalisco gene pools. An apparent simple genetic control of growth habit modification towards semi-climbing and climbing types is proposed as the major reason for increased yields in these crosses. No genetic linkage between genes controlling growth habit and seed size was detected which might restrict the development of high yielding large-seeded type II lines.

    Description: Wind speed turbulence intensity is a crucial parameter in designing the structure of wind turbines. The IEC61400 considers the Normal Turbulence Model (NTM) as a reference for fatigue load calculations for small and large wind turbines. La Ventosa is a relevant region for the development of the wind power sector in Mexico. However, in the literature, there are no studies on this important parameter in this zone. Therefore, we present an analysis of the turbulence intensity to improve the understanding of local winds and contribute to the development of reliable technical solutions. In this work, we experimentally estimate the turbulence intensity of the region and the wind shear exponent in terms of atmospheric stability to analyze the relation of these design parameters with the recommended standard for large and small wind turbines. The results showed that the atmosphere is strongly convective and stable in most of the eleven months studied. The turbulence intensity analysis showed that for a range of wind speeds between 2 and 24 m/s, some values of the variable measured were greater than those recommended by the standard, which corresponds to 388 hours of turbulence intensity being underestimated. This may lead to fatigue loads and cause structural damage to the technologies installed in the zone if they were not designed to operate in these wind speed conditions.
