    Notes: The purpose of this article is to describe how households in Novgorod the Great, Russia, deal with food provision in everyday life. The study focuses on changes experienced in food provision and consumption in Russian society, in order to illustrate how households respond to the transformation towards a market economy. The study reflects women's perspective on food provision. Students from Novgorod the Great visited 105 households and asked the women in the household to answer a questionnaire. Results from the study show that in order to cope with changes in society related to economic reforms, Russian households had changed both their food consumption and food production patterns. There was no big difference between urban and rural households. Nearly all of the households were self-sufficient in the provision of vegetables and potatoes. Many households had a ‘dacha’ (plot), where they produced most of what they needed. Among the changes experienced during recent years (i.e. during the end of the 1990s), a decade after perestroika was initiated, households mentioned the rise in food prices and the decrease of income. Households reported that they consumed less fruit and/or meat. Some households also mentioned that the quality of nourishment had decreased, thereby indicating lower general quality, lower nutrition value, or less healthy foodstuffs.

    Notes: This article highlights globalization in terms of dependency on local and global ecosystems when it comes to family diets. In an exploratory case study, one typical meal in three household settings in different parts of the world: Ghana, Russia and Sweden, is examined. Food paths are traced to compare the scale of ecosystem dependency. The result shows that ecosystem dependency varies greatly with implications for environmental impact. The Swedish household, as opposed to the Ghanaian and the Russian, is not dependent on local ecosystems for food provision, but increasingly on global systems. Opportunities and constraints for lowering environmental impacts related to diets in different economies are discussed. It is concluded that it is of great importance to create awareness in high-income countries of the dependency on the global ecosystem and the resulting environmental impacts. It is in these countries that opportunities are available for change towards more sustainable diets. It is suggested that further research need to explore in greater depth how ecosystem dependency differs and how that translates into broad spectra of environmental impacts, considering other dimensions of sustainable development as well.

    Notes: The issues we want to address and discuss in this article are related to the interdependence between consumption in households in high-income countries and life in the low-income countries, seen in a sustainable perspective. In the consumer society the underlying premise is that ever-escalating consumption is accepted, even desirable. During the past decade, an increasing critique of consumer lifestyle has come from environmentalists, who argue that the resource use to maintain a consumer lifestyle is putting too hard a burden on the ecosystems. We give examples of the abundant evidence of interdependence between North and South at global levels, such as climate change and appropriation of ecosystem capacities, and related to specific types of consumption such as clothing, flowers, food and cosmetics. We argue that the loss of feedback to individual households in the North is a serious barrier for change towards more sustainable consumption habits, and raise a question about how impacts of production and consumption can be communicated to consumers. On the basis of previous and ongoing research, we highlight some impacts of positive and negative labelling schemes as well as extended environmental information.

    Notes: Purpose - Food consumption impacts heavily on the environment. It is therefore highly relevant to study food-purchasing processes and needs for environmental information in the food supply chain. The objective of this article is to report findings from a study identifying practices in using environmental information when making decisions on what food to procure and purchase. Design/methodology/approach - Using a phenomenographic approach, professional purchasing managers at food production companies and wholesalers in public and commercial food services as well as retailing were interviewed with the aim of identifying practices when using environmental information in decisions on what food to procure for purchasing. Findings - The findings show that purchasers are dependent on corporate policy when it comes to environmental considerations related to food. Purchasers are mainly guided by business parameters with respect to price, quality and service. These factors are given priority over co-operation along the food supply chain. Such co-operation has been shown to have the potential to encourage environmentally friendly purchasing decisions. Originality/value - The study places the issue of the use of and need for environmental information in the food supply chain on the national agenda in Sweden. Thus, the study contributes to increasing the awareness of the importance of professional food purchasers as actors for change towards more environmentally friendly food consumption.

    Description / Table of Contents: Zusammenfassung Das empirische Material der Studie, über die der Beitrag berichtet, stammt aus einer Langzeituntersuchung in einem Stadtteil von Göteborg in Schweden, bei der es um lokale Kompostierung von Müll ging. 52 Haushalte aus einer Population von 180 Haushalten nahmen freiwillig an einem Feldexperiment teil, bei dem drei verschiedene Fabrikate von Kompostieren verglichen wurden. Der Beitrag möchte einige kritische Faktoren beleuchten, die bei der Einführung und Evaluierung solcher Müllsysteme von Bedeutung sind, die die aktive Teilnahme der Haushalte voraussetzen. Analysiert werden die Motive zu einer solchen Teilnahme ebenso wie die Faktoren, die gegebenenfalls einen Abbruch der Teilnahme bewirken. Die Datenerhebung erfolgte durch drei Interviews, die in den Haushalten der teilnehmenden Familien während der Untersuchungsdauer von einem Jahr durchgeführt wurden. Zu den Ergebnissen gehört der Befund, daß ein allgemeines Umweltbewußtsein ein allgemeiner Faktor ist, der hinter der Entscheidung, am Projekt teilzunehmen, seht. Von Bedeutung ist ebenfalls eine positive Einstellung gegenüber dem Kompostieren, obwohl das Kompostierungsverhalten während der Untersuchungsphase aus mehreren Gründen nachließ, unter anderem wegen Wissensmängeln, wegen technischer Pannen oder interner Haushaltsprobleme. Ein anderes wesentliches Ergebnis war, daß die Hindernisse, die die prospektiven Teilnehmer vor dem Beginn der Kompostierung zu erkennen glaubten, nicht die waren, die sich als entscheidend herausstellten.
    Notes: Abstract The article reports a study of household participation in waste management. The empirical material stems from a long-term experiment with local composting carried out in a suburb of the city of Göteborg, Sweden. Fifty-two households of a population of 180 voluntarily participated in the field experiment where three makes of compostors were tested. The aim of the paper is to shed light on some critical factors that are of importance when introducing and evaluating new waste management systems that rely on active participation by households. The motives behind the initial decision to participate, as well as factors influencing continuation or discontinuation, are identified and analysed. Data were collected through three interviews carried out in the homes of participating families during the experimental period of one year. Amongst the results reported it can be seen that a general environmental concern was a common factor behind the decision to participate in the project. The positive attitude towards composting was strong throughout the experiment, although composting behaviour in the implementation phase declined in such a way that less material was composted due to lack of knowledge, technical misfits, and problems related to internal household dynamics. Another important result found was that the obstacles perceived by prospective participants prior to the commencement of the composting were not those that in fact proved to be decisive.
