    Description: Humans are participating in the sixth mass extinction, and for the first time in 200,000 years, our species may be on the brink of extinction. We are facing the greatest challenges we have ever encountered, namely how to nourish eight billion people in the face of changing climates ecologically, diminish disparity between the haves and the have-nots economically, and ease xenophobia, fear, and hatred socially? Historically, our tribal nature served us well, but the costs of tribalism are now far too great for one people inhabiting one tiny orb. If we hope to survive, we must mend the divides that isolate us from one another and the communities we inhabit. While not doing so could be our undoing, doing so could transform our collective consciousness into one that respects, nourishes, and embraces our interdependence with life on Earth. At a basic level, we can cultivate life by using nature as a model for how to produce and consume food; by decreasing our dependence on fossil fuels for energy to grow, process, and transport food; and by transcending persistent battles over one-size-fits-all plant- or animal-based diets. If we learn to do so in ways that nourish life, we may awaken individually and collectively to the wisdom of the Maori proverb Ko au te whenua. Ko te whenua Ko au: I am the land. The land is me. In this paper, we use “scapes” —foodscapes, landscapes, heartscapes, and thoughtscapes—as unifying themes to discuss our linkages with communities. We begin by considering how palates link animals with foodscapes. Next, we address how palates link foodscapes with landscapes. We then consider how, through our reverence for life, heartscapes link palates with foodscapes and landscapes. We conclude with transformations of thoughtscapes needed to appreciate life on Earth as a community to which we belong, rather than as a commodity that belongs to us.

    Description: While commission reports and nutritional guidelines raise concerns about the effects of consuming red meat on human health, the impacts of how livestock are raised and finished on consumer health are generally ignored. Meat and milk, irrespective of rearing practices, provide many essential nutrients including bioavailable protein, zinc, iron, selenium, calcium, and/or B12. Emerging data indicate that when livestock are eating a diverse array of plants on pasture, additional health-promoting phytonutrients—terpenoids, phenols, carotenoids, and anti-oxidants—become concentrated in their meat and milk. Several phytochemicals found in grass-fed meat and milk are in quantities comparable to those found in plant foods known to have anti-inflammatory, anti-carcinogenic, and cardioprotective effects. As meat and milk are often not considered as sources of phytochemicals, their presence has remained largely underappreciated in discussions of nutritional differences between feedlot-fed (grain-fed) and pasture-finished (grass-fed) meat and dairy, which have predominantly centered around the ω-3 fatty acids and conjugated linoleic acid. Grazing livestock on plant-species diverse pastures concentrates a wider variety and higher amounts of phytochemicals in meat and milk compared to grazing monoculture pastures, while phytochemicals are further reduced or absent in meat and milk of grain-fed animals. The co-evolution of plants and herbivores has led to plants/crops being more productive when grazed in accordance with agroecological principles. The increased phytochemical richness of productive vegetation has potential to improve the health of animals and upscale these nutrients to also benefit human health. Several studies have found increased anti-oxidant activity in meat and milk of grass-fed vs. grain-fed animals. Only a handful of studies have investigated the effects of grass-fed meat and dairy consumption on human health and show potential for anti-inflammatory effects and improved lipoprotein profiles. However, current knowledge does not allow for direct linking of livestock production practices to human health. Future research should systematically assess linkages between the phytochemical richness of livestock diets, the nutrient density of animal foods, and subsequent effects on human metabolic health. This is important given current societal concerns about red meat consumption and human health. Addressing this research gap will require greater collaborative efforts from the fields of agriculture and medicine.

    Notes: Abstract We conducted two experiments to determine how toxicosis affected preference of sheep for foods varying in flavors, nutrients, and a toxin. The first experiment determined how toxicosis affected the preference of lambs (fed a basal ration of alfalfa pellets) for foods that varied in energy and a toxin. Thirty lambs (10/treatment) were given LiCl by gavage (0, 50, or 100 mg/kg body wt/day), and 1 hr later were offered for 15 min/day foods containing different amounts (low, medium, high) of energy (barley) and a toxin (LiCl) added to alfalfa. The proportions of barley and LiCl changed every three to six days during the 30-day study. The results showed: (1) lambs' food preferences were high 〉 medium 〉 low for barley in the absence of LiCl; (2) lambs quickly regulated intake of foods in response to changes in barley and LiCl concentrations, even with short exposures (15 min/day); (3) lambs maintained intake of LiCl at about 57 mg/kg body wt by adjusting intake of food containing LiCl in accord with the amount of LiCl they received by gavage; and (4) as barley levels increased, intake of foods containing LiCl increased. The second experiment determined the relative influence of flavors, nutrients, and toxins on food preferences of lambs. We did this by treatments in which different flavors (onion and oregano at 1%) were paired with different levels of energy (depending on the addition of wheat to rabbit pellets) or a toxin (LiCl). At six-day intervals, we varied the types of food offered, either changing the nutrient or toxin content and the flavors. The resulting analyses of preference showed lambs markedly preferred foods high in nutrients and low in toxins, regardless of flavor, when changes in food flavor were not correlated with changes in nutrient and toxin concentrations. Thus, in both experiments lambs quickly regulated intake of foods varying in nutrients and a toxin according to the lambs' toxicological and nutritional state. Even with brief eating bouts lambs discriminated accurately and exhibited little permanent preference or aversion in postconditioning preference tests. The lambs remained in an unbiased testing mode, sampling anew the food. This is adaptive because the toxin and nutrient contents of plants vary with season and location. Most taste aversion studies emphasize the permanence of aversions and miss the dynamic sampling power of animals.

    Notes: Abstract To better understand some of the mechanisms that control selection of novel foods differing in postingestive consequences, we offered goats current season's (CSG) and older (OG) growth twigs from the shrub blackbrush (Coleogyne ramosissima). CSG is higher than OG in nitrogen (1.04% v. 0.74%) and it is more digestible in vitro in goat rumen fluid (48% v. 38%). Nevertheless, goats acquire a preference for OG because CSG contains much higher levels of a condensed tannin that causes a learned food aversion. When CSG and OG were offered to goat naive to blackbrush, the goats did not choose either OG or CSG exclusively, but when they finally (1) ate more CSG than OG within a meal (averages of 44 g and 16 g, respectively) and (2) ate enough CSG within the meal to acquire an aversion (average of 44 g), they ingested less CSG than OG from then onward. Accordingly, the change in food selection resulting from postingestive feedback was influenced by the amount of each food ingested within a meal. This was further shown when we varied the amounts of CSG and OG that goats ingested within a meal, and then gave them by gavage the toxin lithium chloride (LiCl). They subsequently ate less of the food eaten in the greatest amount, regardless of whether it was CSG or OG. The salience of the flavor (i.e., taste and odor) of CSG and OG also played a role in the acquired aversion to CSG. Salience evidently was due to a flavor common to both OG and CSG that was more concentrated in CSG. We conclude that the relative amounts of different foods ingested within a meal, and the salience of the flavors of those foods, are both important variables that cause goats to distinguish between novel foods that differ in postingestive consequences.

    Notes: Abstract A lamb's mother and postingestive feedback both influence learning about foods, but their relative importance is unknown. We conducted a study to compare the ingestion of elm (1) by lambs whose mothers avoided elm because ingestion of elm by mother was previously paired with the toxin lithium chloride (LiCl) (M), (2) by lambs who received a mild dose of LiCl after they ingested elm, and whose mothers also avoided elm (M + L), and (3) by lambs who received LiCl after they ingested elm, but whose mothers ate elm avidly (M vs. L); in treatment (4) neither mothers nor lambs were given LiCl (C). In all four treatments, mothers and lambs ate poplar. Each lamb was exposed with its mother for 5 min/day to poplar on days 1,2, 5, 7, 9, and 11 and to elm on days 3, 4, 6, 8, 10, and 12. Following exposures to elm on days 8, 10, and 12, lambs in treatments M + L and M vs. L were given a low dose of LiCl (100 mg/kg body weight orally in a capsule) when they ingested elm to produce an aversion to elm. During the first test after weaning, lambs could choose between elm and poplar. Lambs in C took more bites of elm than did lambs in M, M + L, and M vs. L (13, 2, 2, 〈 1;P 〉F=0.003), and they also took a higher percentage of bites from elm (42, 11, 6, 1;P 〉F 〈 0.001). The number of bites of poplar did not differ among treatments (M=31, M + L=26, M vs. L=42, C=27;P 〉F =0.458). During the second test, when lambs were offered only elm, lambs in C took significantly more bites of elm than those in the other treatments, and lambs in M took more bites of elm than lambs in M + L, but not M vs. L (C=38, M=16, M + L=3, M vs. L=6;P 〉F 〈 0.001). During the third test, when lambs again could choose between elm and poplar, lambs in C again took more bites of elm (C=14, M=3, M + L=〈 1, M vs. L=〈 1;P 〉F=0.034), and they also took a higher percentage of bites from elm (C=26, M=5, M + L=2, M vs. L=2;P 〉F 〈 0.001), than did lambs in the other three treatments. The number of bites of poplar did not differ among treatments (M=47, M + L=43, M vs. L=62, C =41;P 〉F=0.223). We conclude that the response by lambs to the toxin LiCl was more important than was the mother as a social model because lambs that received LiCl avoided elm whether or not the mother ate it.
