    Notes: : :The effectiveness of duct-mounted and console wall-mounted germicidal air cleaning units on the reduction of airborne microbes was determined. Preliminary air samples were collected and airborne bacteria and molds were monitored over time in the retail sales room, processing room, aging cooler and chill cooler of the Auburn Univ. Meat Laboratory. Log10 cfu/m3 bacteria and molds were not reduced by filtration of fresh air in the air duct of the sales room(P 〉 0.05). After at least 18 h of filtration, 3 or 4 console filtration units operated simultaneously were effective (P ≤ 0.05) at reducing airborne bacteria and molds under controlled conditions in the processing room, aging cooler, and chill cooler. Three console filtration units reduced (P ≤ 0.05) airborne molds under production conditions in the processing room. These data suggest that an electrostatically polarized filter medium combined with scanning UV light is effective in reducing airborne microorganisms in a small processing plant.

    Notes: : The relationship between microbial loads in air and contamination of fully cooked meat products was investigated in a commercial processing facility. Air and product were sampled in the packaging area. No correlation existed between microbial counts from air samples and product samples (P 〉 0.05; r 〈 0.06). Microbial counts from air samples ranged from 0.30 to 2.54 log10 colony-forming units (CFU)/500 L and from 0.30 to 3.78 log10 CFU/g in the product samples. These data suggest that no direct relationship exists between microbial air quality and product contamination, but other environmental conditions may account for up to 1/5 of the variation in air contamination and 1/3 of the variation in product contamination.

    Notes: Typical pork sausage patties (40% fat), low-fat (8%) control patties, and low-fat (8%) patties with 20% added water and 0.4% carrageenan were compared to identical treatments containing 2% potassium lactate. The lactate had no effect on percent discoloration or lean color during refrigerated aerobic storage. Sensory properties of pork sausage treatments were not affected by the lactate salt (P〈0.05). Bacterial populations of low-fat pork sausage patties did not differ (P〉0.05); however, the typical patties with 2% potassium lactate had lower (P〈0.05) microbial numbers during refrigerated storage than typical fresh pork sausage. TBARS,‘L’,‘a’and‘b’values were unaffected by the potassium lactate (P〉0.05).

    Notes: The study of biofilms provides a unique educational opportunity to examine ecosystems, biodiversity and applications of environmental biotechnology. There are many variables that could be studied for measuring the interactions between bacterial biofilms and invertebrate biodiversity as a method for assessing the health of aquatic ecosystems. These interactions also lend themselves to an easily replicated model system which can be used to reach a wide audience with an educational opportunity for students as well as a professional development opportunity for teachers. At the foundation of the research are invaluable basic microbiology skills: strain collection, isolation, cultivation and characterization. Through the additional process of characterizing, identifying and enumerating invertebrate organisms that attach to bacterial biofilms in aquatic ecosystems, there evolved a multidisciplinary class laboratory activity that has found broad application. This activity is captivating not only to undergraduate microbiology students but to middle and high school students and their teachers. The demand for information about the activity has led to the development of a truly interactive web-based lesson, which in turn has resulted in additional inquiries and further refinement of the lesson as an undergraduate independent research course.
