    Notes: This article describes an UHV compatable soft x-ray analysis system for reflection, secondary electron, and fluorescence spectroscopy. It is equipped with a reflectometer with an angular accuracy of 0.01°. This is achieved with rotary encoders directly coupled to the rotation axes. At the same time, the system is equipped with an electron multiplier, a cylindrical mirror analyzer, and a Si(Li) detector, each for measuring total secondary electrons, photo- and Auger electrons, and fluorescence. Furthermore, it is possible to form multilayer films and analyze them in situ. The performance of the reflectometer has been tested on the beamline BL-8A at the Photon Factory. We present the results of reflectivity measurements for diamond-cut copper mirrors and Langmuir–Blodgett films.

    Notes: We have developed an apparatus for suppressing higher harmonics contained in the soft x-ray output beam of grazing-incidence grating monochromators. It consists of eight pairs of total-reflection mirrors. Each pair serves as a low-pass filter with the cutoff energy different from one another. The eight pairs are designed to cover an energy range of 80–1600 eV with an efficiency of harmonic suppression better than 97%, while transmitting more than 50% of the fundamental photons. We have tested its preliminary performance on the soft x-ray beamline BL-8A at the Photon Factory. We present the observed transmission efficiencies and the effects of the harmonic suppressor on measurements of reflectivity and fluorescence spectra.

    Notes: High quality commercial popcorn containing 14.0% moisture was processed in a continuous hot air domestic corn popper. The time required to pop individual kernels ranged from 35 − 120 sec, with 43% of the corn being cooked between 60 and 75 sec. The temperature of the popping chamber ranged from 196 − 277°C. The average temperature at the center of the kernels when they burst was 187°C. The empirical parameters, f and j values for heat transfer were determined.

    Notes: There are many dried foods of hollow cylinder-shapes in the market. Hygrostress cracks form in these foods during drying without a careful process control. The objective of the present work was to develop a simulation method for heat and moisture transfer in hollow cylinder-food coupled with hygrophysical changes. A modified Luikov's model was used for the development together with a virtual work minimization principle, critical tensile stress criterion for crack formation, and critical crack-tip-opening angle criterion for crack propagation. The developed, computerized simulation model was validated through drying experiments of samples made from a starch hydrate.

    Notes: Semolina extrudates were reshaped, immediately after extrusion to form 0.5 mm thick × 2 mm wide × 130 mm long strips. Moisture content (W) was adjusted to 5 to 39% (dry basis) equilibrating in desiccators containing saturated salt solutions. The following tensile rheological properties of the prepared samples were determined at room temperature (21-24°C) using a Rheometrics solid analyzer: Young modulus (E), yield stress (σy), fracture stress (σc) and fracture stain (ɛc). Each of E, σy and σc was fitted by a semilogorithmically linear function of W with a negative slope. The property ɛc fitted two semilogarithmically linear functions: for W 〈 24.2% a line with a positive slope and for W 〉 24.2% a line with near zero slope. Such data for moisture ranges used in conventional pasta drying can help to optimize conditions for pasta production without stress cracking.

    Notes: Sorption of vinylchloride (VCM) by dry casein particles was determined as a function of temperature and moisture content. The amount sorbed was found to increase with a decrease in temperature or reduction in moisture content of the particles. At 30° C, the partition coefficient values (Ku) were 1.05, 0.4 and 0.33 × 102 for casein particles of moisture content 3.5, 6.0 and 7.5, weight percent respectively. The partition coefficient was defined as the equilibrium concentration of VCM sorbed over the sorbate concentration in the headspace. The effect of dipole moment of the sorbate on sorption to casein was evaluated by comparing sorption of VCM and the analogues, ethylene and vinylidene chloride. Sorption was found to increase with the dipole moment of the sorbate, suggesting the importance of dipole moment as a sorption inducing factor. Further supportive evidence for the importance of dipole moment in sorbate-casein interaction was obtained by a gas chromatographic technique (inverse phase gas chromatography). Using casein as the stationary phase of a gas chromatographic column, the solutes VCM, ethylene, vinylidene chloride (VCD) and hexane were pulsed through the column and the peak shapes recorded. Peak shapes indicated an interaction between casein and the polar solutes (VCM and VDC) whereas no such interaction (sorption) was indicated for the nonpolar solutes, ethylene and hexane. A rate model for VCM sorption by dry casein particles was also developed.
