Continuous microfiltration of vinegar. Using a purely theoretical approach conditions are defined which should make it possible to prevent clogging of a membrane surface during extended continuous microfiltration. It is shown that the dynamic pressure of a liquid stream flowing parallel to the membrane surface must be greater than the product of the ratio between the largest and the smallest cross section of the particles to be filtered, the static pressure, and the frictional coefficient of the particles relative to the membrane. During a laboratory test which lasted for 260 days the theoretical concept is proven right. Based on the theory and the laboratory tests production scale units for the continuous microfiltration of alcohol vinegar made by submerged fermentation were developed. In a single step the filtration yields sterile product. Design and mode of operation of the units are described. The membrane surfaces have to be cleaned once every 3-5 weeks only. To date 15 units have been installed, and the first ones have now been operating for more than 3 1/2 years.

In einem theoretischen Ansatz werden die Bedingungen festgelegt, unter denen bei kontinuierlicher Mikrofiltration über eine lange Zeitspanne eine Belegung der Membranfilterfläche verhindert wird. In einer Strömung parallel zur Membran muß der dynamische Druck der strömenden Flüssigkeit größer sein als das Produkt aus dem Verhältnis des größten zum kleinsten Querschnitt der zu filtrierenden Teilchen, dem statischen Druck und dem Reibungskoeffizienten der Teilchen an der Membran. Ein 260 Tage währender Labordauerversuch beweist die Richtigkeit des Ansatzes. Basierend auf diesen Grundlagen wurden, dem technischen Bedarf entsprechend, Filtertypen geschaffen, die eine einstufige Sterilfiltration von submers hergestelltem Alkohol-Essig durch kontinuierliche Mikrofiltration ermöglichen. Aufbau und Arbeitsweise dieser Filter werden beschrieben. Die Filtermoduln müssen derzeit alle 3 bis 5 Wochen gereinigt werden. Es liegen bisher von 15 Einheiten Erfahrungen bis maximal dreieinhalb Jahre vor.
