    Description: La qualité du poisson est une préoccupation majeure tant pour les éleveurs, que pour l'industrie de transformation et les consommateurs. La présente étude s’est intéressée à quelques caractéristiques qualitatives (colorimétriques, fraicheur, TBA) et à la composition biochimiques (teneurs en protéines et lipides) de daurades royale (Sparus aurata) issues de 3 stations aquacoles de la région Nord de la Tunisie. L’analyse en composante principale (ACP) des indices colorimétriques ainsi que des résultats des analyses biochimiques ont montré que les spécimens provenant de la station C semblent avoir une meilleur qualité au vu de leurs teneurs en lipides et protéines, qui étaient les plus élevées, tandis que leurs indice de TBA étaient les plus comparativement aux spécimens provenant des deux autres stations d’élevage. Les indicateurs colorimétriques aussi ont confirmé l’existence de différences de qualités entre les lots de poissons.
    Description: The quality of fish is a major concern for the farmers, the processing industry and the consumers. This work studied some quality characteristics (colorimetric, freshness, TBA) and in biochemical composition (protein and lipids contents) of samples of sea bream (Sparus aurata) from 3 aquaculture stations of the northern region of Tunisia. The principal components analysis (PCA) of all studied variables (colorimetric indexes as well as the different results of biochemical analyzes) showed that the specimens from the station C seemed to have a better quality according to their lipid and protein contents which were the highest, while the TBA index was lowest compared to the values reported for the fish from the two other stations. The colorimetric indicators also confirmed the existence of differences in qualities between fish lots.

    Description: The objective of the present study is to determine the variability of chemical composition and sensorial attributes of sea bass (Dicentrarchus labrax) farmed in the North of Tunisia, in relation to season and farming location. Sensory analysis showed significant sensory differences between batches in relation to the season and the production site. Thus, fish quality is best appreciated for specimen caught during the winter season than those caught in summer with a clear variation related to the farming site. The relationship between biochemical criteria and sensory appreciation was treated by Principal Component Analysis (PCA) which has 73% of all the variables, 44% has been described by PC1 component and 29% component PC2 showing the effect of farming location on sensory and biochemical qualities of the products. The differences appear to be related to lipid flesh content as the least appreciated samples correspond to fish produced during the summer with significantly higher fat levels.

    Description: La daurade royale (Sparus aurata) est l’espèce d’élevage la plus commercialisée en Tunisie. L’objectif de cette étude consiste à évaluer la variabilité de la qualité de cette espèce prélevée au niveau de trois points de vente différents ainsi que la variabilité de la durée de shelf life de ces trois lots pendant le stockage réfrigéré. Ces éventuelles variabilités ont été établies en effectuant des caractérisations sensorielles, microbiologiques et chimiques sur les poissons stockés à +4°C pendant 12 jours. Les résultats ont révélés une grande variabilité visà- vis de la fraicheur des poissons étudiés traduite par une défaillance du système de traçabilité des poissons d’élevages en Tunisie mais aussi de contrôle de la qualité au niveau des points de ventes.
    Description: The sea bream (Sparus aurata) is the most commercialized fish farmed species in Tunisia. The objective of this work was to study the variability of the quality of sea bream within Tunisian supermarkets. For this purpose, 3 local fish markets within superstores were chosen for sampling in order to evaluate the initial fish quality as well as their shelf life during refrigerated storage. Sensorial, microbiological and chemical characterizations were performed on fish stored at + 4°C during 12 days. The results showed large variability of fish freshness revealing a failure in the traceability system of farmed fish in Tunisia as well as of quality control within fish market.

    Description: Le projet SecurAqua a inclus dans ses activités de programme liées à la transformation et à la valorisation des produits aquacoles de faible valeur commerciale. Les résultats présentés dans cette publication vise à valoriser certains produits aquacoles, en particulier ceux issus des barrages et des lagunes (bivalves) et les produits qui présentent une faible consommation dans toute la Tunisie. les filières aquacoles locales et régionales font face à un double défi : fournir des aliments frais et transformés de haute qualité, avec un conditionnement approprié pour les segments de population à plus hauts revenus et a générer une offre alimentaire stable, nutritionnellement riche, à un coût abordable et offrant un niveau de sécurité sanitaire et de qualité acceptables pour les ménages à faibles revenus. Ceux-ci afin de saisir les opportunités de développement et remédier à la situation actuelle de faible consommation et de valorisation.

    Description: La production aquacole de la daurade (Sparus aurata) ne cesse de croître en Tunisie (10.216 tonnes en 2015) et ce, pour satisfaire la demande croissante pour la consommation nationale. L’évaluation de la qualité des produits aquacoles est par conséquent cruciale pour garantir la durabilité et le développement du secteur. Ce travail vise à caractériser la qualité nutritionnelle et sensorielle de la daurade d’élevage en cage dans la région du Nord de la Tunisie. Pour ce travail, des échantillons in situ ont été effectués durant les saisons estivales et hivernales auprès de deux fermes aquacoles (Site A et Site B). La composition biochimique des différents échantillons a permis de montrer que les teneurs en protéines (19,52 à 21,11 g/100g) et en lipides (8,45 à 11,52 g/100g) sont comparables aux teneurs rapportées dans la littérature scientifique pour cette espèce produite en élevage intensif. Les teneurs en lipides font néanmoins partie des valeurs les plus élevées enregistrées pour cette espèce aquacole. L’évaluation sensorielle par un panel hédonique montre que la qualité hivernale est mieux estimée que la qualité estivale. Les différences sembleraient notamment être liées aux différences des teneurs en lipides. Sachant que la qualité de la daurade (Sparus aurata) d’élevage, peut être influencée par la composition de l’aliment ingéré et les pratiques zootechniques, les producteurs peuvent modifier la qualité de leur produit pour mieux s’adapter aux préférences des consommateurs locaux. Il leur serait même recommandé d’envisager la mise en place d’une certification voire d’un label de leur produit pour mieux le valoriser
    Description: During the last decade, the farmed production of sea bream (Sparus aurata) has grown in Tunisia (10.216 tonnes in 2015) to meet the growing demand for national consumption. The evaluation of fish quality is therefore important in view to guarantee the durability and development of the sector. This work aims to characterize the nutritional and sensory qualities of sea bream farmed in the North of Tunisia. To achieve this work, several samples were carried out in situ within two rearing farms (Site A and Site B) during the summer and the winter seasons. The proximal compositions of the different samples showed that the levels of proteins (19,52 to 21,11 g/100g) and lipids (8,45 à 11,52 g/100g) were similar to values reported in the literature for this species produced in intensive rearing. The levels of lipids are nevertheless among the highest reported values. Hedonic evaluation revealed that fish sensorial quality was more appreciated in the winter than in the summer. These differences seem to be related to muscle lipids levels as higher contents were reported in fish sampled in summer. Such pattern may be modified by feed composition and zoo-technical practices; that producers might apply to have the quality required by local consumers’ preferences. The implement of product’s certification or even labelling is recommended for a better fish valorisation.

    Description: The present work analyses the quality of proteins in aquaculture products, by studying changes in the electrophoretic profile performed by SDS-PAGE, for the sarcoplasmic (SPP) and myofibrillar (MFP) proteins fractions in sea bream (Sparus aurata) issued from different aquaculture farms (A, B and C) of the Northern region of Tunisia. Analysis of the sarcoplasmic fractions didn’t show any significant differences. While for myofibrillar fractions, the principal component analysis (PCA) of densitometric readings showed significant differences (P 〈0.05) between station C and the two others stations, A and B.
    Description: Le présent travail s’est intéressé à la qualité des protéines dans les produits aquacoles en étudiant les variations du profil électrophorétique réalisé par SDS-PAGE, des protéines sarcoplasmiques (SPP) et myofibrillaires (MFP) chez les daurades royales (Sparus aurata) issues de différentes stations A, B et C d’élevage aquacole de la région Nord de la Tunisie. L’analyse de la fraction sarcoplasmiques n’a montré aucune différence significative. Alors que pour la fraction myofibrillaire, l’analyse en composante principale (ACP) des lectures densitométriques a permis de révéler une différence significative (P〈0.05) entre la station C et les deux stations A et B.

    Description: Au cours des dernières décennies, la traçabilité est devenue un enjeu primordial aussi bien pour l’industrie agroalimentaire que pour le consommateur. Dans ce cadre, l’objectif principal de notre travail consiste en l’identification moléculaire des crevettes fraîches et transformées par l’optimisation de l’extraction de l’ADN et de l’amplification de la séquence du gène cytochrome b par PCR en temps réel. Parmi différentes méthodes d’extractions d’ADN testées, le meilleur protocole PCI/SDS a été adopté et a été suivis d’une PCR en temps réel avec un couple d’amorce d’une taille de 315 pb conçu par outil bioinformatique. L’extraction et l’amplification ont été évaluées avec succès pour les produits de crevette fraîche et conditionnée sous forme décortiquée, panée et cuite se trouvant sur les marchés sicilien et tunisien.
    Description: During the last decades, we found that traceability has become a key issue for both the food industry and the consumer. In this context, the main aim of our work is the molecular identification of both fresh and processed shrimp by the optimization of DNA extraction and the amplification of the cytochrome b gene sequence by PCR real time. Various extraction methods were tested and the best PCI/SDS one was used and was followed by real-time PCR with a primer pair having a size of 315 bp using bioinformatics tool. The extraction and amplification were evaluated successfully for fresh shrimp and processed products such as shelled, cooked and breaded and located on the Sicilian and Tunisian markets.

    Description: In this work, a combination of vaccum pachaging and bio-coating by chitosan were used to coat sea bass (Dicentrarchus labrax) fillets in order to delay growth of total mesophilic aerobic bacteria, psychrophilic bacteria during refrigerated storage (22 days). The preservative effect of refrigerated and vacuum-packed seabass (Dicentrarchus labrax) fillets treated at two different percentage doses (0.2% and 0.5% w/w) of co-products of shellfish was evaluated on the basis of microbiological, proximate composition, pH, total volatile basic nitrogen (TVB-N), trimethylamine (TMA), thiobarbyturic acid (TBArs), and fatty acids (FA). Two ways ANOVA and multiple comparisons were applied, factors being storage time and treatment. During refrigerated storage, the treatment with chitosan from separate co-products exhibited more antimicrobial activity and the lowest value of the TVB-N, TMA and TBArs compared to control lots. The bio-coating by 0.5% dose of chitosan preserved quality and the prolonged shelf-life for 10 days longer. Overall, this treatment may open new promising opportunities for the biopreservation of fish products by enhancing the period of storage of refrigerated and vacuum-packed seabass fillets.

    Description: Marine waste, including aquatic by-products, poses a significant environmental challenge and garners increasing attention for its potential valorization. The development of cost-effective, environmentally friendly, and circular technologies for transforming marine biomass into value-added products is crucial for the successful implementation of sustainable aquatic industries. This involves focusing on strategies that simultaneously reduce waste and energy demand. This document presents the research andbiotechnological innovations carried out under the ARIBiotech project, which aims to create new biological products from marine waste. In a circular economy perspective, this initiative seeks to turn sources of pollution into sustainable opportunities, contributing to the preservation of marine ecosystems while fostering innovative solutions. Exploiting marine biomass and valorizing sea by-products, whether by using them directly or extracting biopolymers, appears to be a promising solution for a more sustainable use of marine resources, leading to increased economic benefits. However, the realization of such developments is hindered by the lack of appropriate regulatory frameworks to enable the use of waste and by-products, ensuring product safety, quality, and acceptability. This white paper showcases a diverse range of bioproducts (Crab waste hydrolyzate, chitin, chitosan, collagen, gelatin, cellulose aerogels, shell powder, and bioactive extracts) derived from the application of biotechnologies on various marine waste and co-products,highlighting their potential to support sustainable development. This document aims to encourage policymakers to support the creation of alliances and innovations in blue biotechnology and enable the general public to benefit from advances in creating bioproducts from marine waste.
