    Notes: Abstract A review of literature on endosperm texture determination and its relationship with milling performance is presented. Methods for measuring sorghum endosperm texture as abrasive, pearling and wet milling are reported. This review describes some indirect methods: time to grind by the Brabender microhardness tester (BHMT), resistance to grinding by the Stenvert hardness tester (SHT), two methods for determination of average particle size: particle size index (PSI) and near-infrared (NIR) reflectance and others based on density differences between the floury and vitreous part of the endosperm.

    Notes: Abstract A review of literature on nonstructural and structural carbohydrate contents in sorghum is presented. This review describes the influence of temperature, maturity, genotype, culm section, spacing, and fertilization on nonstructural carbohydrate contents. The starch properties and the chief criteria of sorghum malt quality are discussed. Differences in structural carbohydrate contents in leaves and stems are reported.

    Notes: Abstract A brief review of literature on sorghum for human foods and on the relationship among some kernel characteristics and food quality is presented. The chief foods prepared with sorghum, such as tortilla, porridge, couscous and baked goods are described. Tortillas, prepared with 75% of whole sorghum and 25% of yellow maize, are better than those prepared with whole sorghum alone. A porridge formulation with a 30:40:30 mix of sorghum, maize and cassava respectively, has been shown to be the most acceptable combination. The cooked porridge Aceda has lower protein digestibility and higher biological value than the uncooked porridge Aceda. Sorghum is not considered breadmaking flour but the addition of 30% sorghum flour to wheat flour of 72% extraction rate produces a bread, evaluated as good to excellent.
