Zusammenfassung Eine Verdrängungstitrationsmethode zur Bestimmung von Vitamin C in Fruchtsäften wurde ausgearbeitet. Aceton dient zur Maskierung von Bisulfit, zumal Formaldehyd sich hierfür nicht eignet, weil er sowohl mit N-Bromsuccinimid(I) wie auch mit Askorbinsäure reagiert. I dient als Maßflüssigkeit, die zunächst Jodid zu Jod oxydiert, das seinerseits mit Askorbinsäure reagiert. Der Endpunkt ist erreicht, wenn die Blaufärbung 30 sec bestehen bleibt. Die Methode ist rasch und genau. Die maximale relative Abweichung beträgt bei Orangensaft 2,4%.

Summary A displacement titration method for the estimation of vitamin C from juices and squashes has been developed. Acetone is used as complexing agent for bisulfite because formaldehyde is not suitable as it reacts with N-bromosuccinimide and also combines with ascorbic acid. N-Bromosuccinimide is used as the titrant, which preferentially oxidizes iodide to iodine which in turn reacts with ascorbic acid. End-point is reached when bluish colour persists for 30 seconds. The method is rapid and precise. The maximum relative standard deviation is 2.4% in case of orange squash.
