    Notizen: As estimated on-line, the viscosity after cooling of double cream cheese curd containing heat-denatured WPC (DCC +) increased from 1.4 Pa.s to 1.7 Pa.s when cooled to the range of 45°C to 24°C, and then decreased from 1.7 Pa.s to 1.0 Pa.s when cooled from 24°C to 15°C. The viscosity of DCC- (without heat-denatured WPC) increased from 1.5 Pa.s to 2.2 Pa.s at temperature shift from 40°C to 15.5°C. The firmness of stored DCC + and DCC-, respectively, decreased from 15.1N to 6.5N when cooled to temperatures from 45°C to 15°C, and from 17.9N to 9.9N when cooled from 40°C to 15.5°C, as recorded by cone penetrometry. The structure of DCC+ cooled to 15°C collapsed after penetrometry, and DCC+ cooled to 20°C destabilized during shearing in coaxial cylinder rheometer. A new phase in DCC+ based on milk fat globules liberated by cluster disruption may be the cause of the structural and textural instability.

    Notizen: Abstract. Hetereogeneity of rainbow trout immunoglobulins was demonstrated by using monoclonal antibody 1A6 and polyacrylamide-gradient gel electrophoresis. Immunoglobulins defined by elisa using monoclonal antibody 1A6 were about 30% of the total immunoglobulins, detected by elisa using polyclonal antibodies, in healthy rainbow trout. In trout obtained from farms with a previous history of infectious viral diseases, 1A6-immunoglobulins were only about 14% of the total. Several serum pools from infected trout could be totally depleted of 1A6-immunoglobulins (about 12% of total immunoglobulins) by affinity chromatography over Sepharose immobilized monoclonal antibody 1A6. Polyacrylamide-gradient gel electrophoresis under denaturing conditions of total immunoglobulins, 1A6 immunoglobulins and no-1A6 immunoglobulins purified by affinity chromatography, showed a majority heavy chain of 70 KDa and a minority heavy chain of about 60 KDa, two light chains of 24 and 26 KDa, and a 11–14 KDa polypeptide.

    Notizen: Optimum dietary protein levels of young Cichlasoma urophthalmus (Günther) of 0.3 g mean weight were determined at 28°C using two methods, a fixed feeding rate of 6% body weight per day and satiation feeding. In the fixed rate trials nine isoenergetic diets were formulated with protein levels ranging from 347 to 561 g kg−1 using brown fish meal (anchovy) as the only protein source. In the satiation feeding trials, ten diets were formulated based on brown fish meal (mackerel) ranging from 0 to 450g kg−1 protein.When fish were fed a fixed rate diet, the best absolute growth was obtained with diets between 435 and 560 g kg−1 protein. Broken-line analysis showed that, in terms of weight gain (%), the optimum protein level was about 453 g kg−1. When fish were fed to satiation, the best absolute growth was obtained with the 383 g kg−1 protein diet, and broken-line analysis suggested an optimum of about 325 g kg−1. The difference between the two results, using the two techniques, is very marked. The probable mechanism underlying these data is discussed.

    Notizen: The ability of Trichoderma harzianum to control the rotting of pepper (Capsicum annuum) plant roots caused by Phytophthora capsici was studied. Interactions between the fungi were assessed in vitro on three culture media (V8c, Czapek and 2% water agar) and in vivo in plants grown in a substrate inoculated with P. capsici and T. harzianum. Studies on mutual antagonism in vitro showed that P. capsici was inhibited by T. harzianum; however, the intensity of inhibition differed according to the medium used, being greatest on Czapek. Analysis of the fungal populations in the plant growth substrate showed that T. harzianum consistently reduced that of P. capsici over time. This reduction in the pathogen population was associated with a reduction in root rot of between 24 and 76%, although plant growth (dry weight) was still reduced by 21.2–24.7%, compared with the uninoculated control. In the absence of T. harzianum with the same pathogen inoculum levels, the reduction in dry weight was 59.8–68.6%, suggesting that T. harzianum reduced the damage.
