    Notes: SYNOPSIS. A comparison of the effects upon trypsin-dispersed chick liver cell cultures of a virulent (Jones' Barn) and a non-pathogenic (Lahore) strain of Trichomonas gallinae revealed significant differences in behavior of the parasites in cell cultures and in the response of such cultures. The virulent strain multiplies faster in nutrient medium in the presence of cell cultures; stimulates great activity of the macrophages; is not handled effectively by these phagocytes in which it can multiply causing their ultimate destruction; is found significantly more often within the cytoplasm of the liver epithelial and fibroblast-like cells; causes very much more profound degenerative changes in all the cells, both invaded and non-invaded; and suppresses effectively the division rate of the fibroblast-like cells. On the other hand, the nonpathogenic strain multiplies at a lower rate in the presence of cell cultures; stimulates less activity of the macrophages; is handled readily by these phagocytes in which it multiplies only very rarely, if ever; is found seldom within the liver epithelial and fibroblast-like cells; causes far less degeneration of all the cell culture elements; and suppresses significantly less the dlvision rate of the fibroblast-like cells.At the end of a 20–24 hour period typically only a few living cells are left in cultures exposed even to attenuated isolates of the virulent strain, whereas those inoculated with the mild one do not show much degeneration even after 28 hours. The effects upon the cell cultures of cell-free filtrates of actively growing trichomonad cultures are relatively minor, but the changes caused by the filtrates of cultures of Jones' Barn strain appear to be more extensive than those caused by similar filtrates of Lahore strain.

    Notes: Raw, extruded (alone and a 50/50 blend with soybeans) or toasted mesquite (Prosopis spp.) pods were passed 1 and 4 times through an Alpine pin mill, and the resulting ground products separated into different sieve fractions. Protein concentration and recovery were maximum, and fiber content minimum, in the fines. Maximum protein concentration and recovery were obtained in both extrusion runs; of the remaining two runs, toasted pods gave higher protein recovery, but lower protein concentration in the fines, than raw pods.

    Notes: The chemical composition of ten amaranth seed samples was determined. The saccharide content was determined using gas chromatography and high performance liquid chromatography. Sucrose was the major sugar followed by raffinose. Inositol, stachyose, and maltose were found in small amounts in most of the samples. Autolysis for 16 hr at pH 5.0 and 6.5 resulted in decreased sucrose and raffinose concentrations. Maltose was liberated by autolysis at pH 6.5 but not at pH 5.0. Inositol increased after autolysis. It was concluded that invertase, amylase, and phytase occur in the grain. Physicochemical properties of isolated amaranthus starch were measured and compared with analogous values reported for wheat starch. The lipids from representative amaranth grain varieties were analyzed for fatty acid composition. Squalene was present in the oil in large amounts, compared to other grains. The amino acid composition of the grain was used to calculate the chemical score (73) and the nitrogen to protein conversion factor (5.85). Leucine was found to be the limiting amino acid. Tannin and vitamin levels typical of other grains were detected. Mineral and proximate compositions were similar to previously reported values.

    Notes: SUMMARY Cooking acid-treated raw ground beans resulted in more digestible products compared to beans cooked whole and then ground. The digestibility was determined by in vitro digestion with α-amylase and with pepsin followed by pancreatin and by examining microscopically the intestinal contents of rats. Increased nutrient availability is suggested by some improvements in total digestibility but not by the protein efficiency ratio (PER), where the increase does not seem to be significant. Process conditions on a laboratory scale for preparation of acid-blended bean slurries and soybean milks with and without methionine supplementation were studied.

    Notes: Cottonseed/soybean blends (50/50) were ground in an Alpine pin mill with or without previous cooking in a Brady low-cost extruder. Free gossypol decreased with increasing amount of water added prior to extrusion and number of passes through the extruder. Available lysine increased with decreasing amount of added water but was unaffected by number of passes through the extruder. Type of soybean raw material utilized had no effect on free gossypol. Blends prepared from defatted cottonseed meal, however, had lower free gossypol than those made from cottonseed kernels. A blend similar to full-fat soy flour but of lower cost was prepared from unextruded 50% defatted cotton-seed meal/50% extruded soybean flakes, without added water, and ground in the Alpine mill.

    Notes: SUMMARY— Mechanically harvested tomatoes were macerated, heated by steam injection to several constant temperatures from 170–240°F and held in a treatment pot from 0-4.6 min at pH levels (adjusted with cont. HCI) ranging from natural down to pH 2.0. Treated macerates were neutralized to original pH with cone NaOH, put through a finisher screen and pumped through a deaerator and chiller. The optimum processing conditions based on highest consistency (efflux-pipet flow time) in seven series of samples were 212°F breaking temperature and a macerate treatment time of 3.3 min at pH 2.75. With the optimum conditions, juice solids yield from VF-145 tomatoes was 4.3% greater and consistency 90% higher than from the natural pH juice. The neutralized acid products could contain 13% less tomato solids and still have a consistency equal to that of the products extracted at natural pH. Dry waste decreased 33% and total wet waste 47%. A 1-day delay before processing caused 9.5% loss in recovered juice solids. Ascorbic acid, reflectance and lycopene data showed no trends due to acid extraction. Water soluble color increased slightly in the acid extractions.
