    Notes: The antimicrobial activities of Lauricidin (glycerol monolaurate) and its formulations Lauricidin Plus F, and Lauricidin 812 were neutralized by Tweens 20 and 80. The quantitative relationship depended on the formulation of Lauricidin, the test organism and the concentration of the Tweens. In general Tween 20 and Tween 80 were similar in their abilities to neutralize the antimicrobial properties of Lauricidin. In most cases, (74% of the observations) 3.0% Tweens completely neutralized Lauricidin and its formulations.The effects of the Tweens on Lauricidin and Lauricidin Plus F were also studied quantitatively. In the presence of Lauricidin and Tweens, no inhibition was noticed and in most cases, the viable count was similar to the control. Lauricidin Plus F was much more potent than Lauricidin in inhibiting the organisms tested and the restoration of growth in the presence of the Tweens was not complete. The viable counts in the presence of Lauricidin Plus F and the Tweens were about two or more log cycles lower than the control.

    Notes: Aerobic plate counts on Plate Count Agar at 25°C were used to determine the time required to reach a microbial spoilage level of 1.0 × 107 C.F.U./g, for mechanically deboned chicken meat, minced fish and chicken sausage stored at 2°C. The storage times were 5, 8 and 9 days, respectively. Addition of citric acid (0.2%), ascorbic acid (0.2%) or lauricidin (250 ppm) alone extended the shelf-life by 0–2 days. The combination of lauricidin and citric acid or lauricidin and ascorbic acid extended the time required to reach a microbial spoilage level for mechanically deboned chicken meat by as much as 7 days, minced fish by as much 4 days and chicken sausage by 8 days.

    Notes: Egg yolk phosvitin has been previously shown to inhibit metal-catalyzed phospholipid oxidation. In this study, a phospholipid emulsion system was used to study the effect of pH and food ingredients on the antioxidant activity of phosvitin and the oxidative stability of yolk phospholipid. Oxidation of phospholipids was carried out at five different pH levels (3.0, 5.0, 5.7, 6.1, and 7.8). NaCl and freeze-dried egg albumen were incorporated into the pH 6.1 emulsion. Lipid oxidation was measured by the thiobarbituric acid (TBA) assay. Phospholipids were stable at pH 6.1 and 7.8. However, phosvitin was unable to inhibit Cu2+ catalysis at pH 7.8. Neither NaCl nor albumen affected the stability of phospholipids or the activity of phosvitin in inhibiting Fe2+ catalysis at pH 6.1.

    Notes: The prevention of the green-gray discoloration of cooked liquid whole eggs was studied. Acidic chelating agents were added to raw liquid whole egg samples at pH 8.50. Samples were cooked at 100°C for 20 min, held over a steam bath for 60 min, and then measured for color. Results show the following approximate optimum concentrations will prevent the discoloration at p = 0.05: acetic acid, 0.19%; citric acid, 0.17%; Na2EDTA, 0.029%; lactic acid, 0.27%; malic acid, 0.22%; monosodium phosphate, 0.34%; propionic acid, 0.26%; and succinic acid, 0.27%. It was also found that the average maximum pH attained by raw liquid whole eggs when stored at 3°C for 21 days was 7.93 ± 0.19. A taste panel indicated that there were no significant differences in overall acceptability with the Na2EDTA and the monosodium phosphate treatments. The citric acid treatment was not significantly different from the control in flavor acceptability. Other treatments were judged to be inferior to the control.

    Notes: Precooked, frozen omelets were analyzed for moisture loss, expressible moisture, shear-force, and sensory evaluation to determine water-holding capacity and- textural acceptability. Addition of 0.1% xanthan gum, application of moist heat in cooking, and cryogenic freezing with liquid carbon dioxide or nitrogen minimized moisture loss and shear force. Sodium. carboxymethylcellulose (CMC), pre-gelatinized tapioca starch and sodium tripolyphosphate additives performed satisfactorily, but omelets containing xanthan gum were consistently rated highest in sensory evaluation of several treatments, including fresh and untreated control omelets. Steaming omelets for five minutes combined with cryogenic freezing produced a desirable- omelet, requiring no additives. Steamed omelets were rated comparable to baked omelets in most sensory parameters.

    Notes: When fish are deboned in an “auger-type” deboning machine darkening of the minced product occurs. The objective of this work was to determine the cause of the discoloration. Two different reactions leading to discoloration were found to occur, one during processing and the other during frozen storage. The first discoloration occurred immediately after deboning and had a characteristic “grayness.” The second discoloration occurred during frozen storage and was characterized by the development of yellow to brownish colors. It was found that the gray discoloration was skin related and pressure dependent. The release of black pigments, melanins, from the fish skin was found to be the source of the initial gray discoloration.

    Notes: Egg albumen was modified to improve water retention properties of the coagulated, frozen and thawed product. Albumen was found to contribute more to expressible moisture (%EM) of coagulated whole egg mixture than yolk. For frozen and nonfrozen treatments, albumen (pH gt; 9.5) reduced %EM in both the coagulated albumen and whole egg mixtures made with pH-adjusted albumen. Succinylated albumen (≤0.2% g anhydridelg albumen) reduced %EM for frozen and nonfrozen treatments. Albumen at pH 10.5 and 11.0 required less time to attain an equivalent cook value than at pH 7.0,8.0,9.0, and 10.0.
