    Notizen: Influence of mechanically separated lamb (MSL), NaCl level, processing conditions and extenders on composition and quality of 72 chunked and formed lamb roasts were evaluated. Roasts with 0.5% NaCl had significantly (P〈0.05) lower juiciness and flavor scores than roasts containing 1.0-2.0% NaCl. Muscle chunk separation was more extensive and Instron breaking strength values were lower at the 0.5% NaCl level. Roasts containing 30% MSL were more tender and juicy than roasts containing 10% MSL and they had less cook loss. Soy-extended roasts had less desirable juiciness, flavor and texture scores and were lower in fat and lighter in color than control roasts or roasts containing dried skim milk. All roast formulations had TBA values below 1.0.

    Beschreibung: SummaryBanded gneisses and migmatites in the Champira Dome contain assemblages of the biotite-cordierite-almandine subfacies of the granulite facies. The banded gneisses represent a sequence of arkosic sediments metamorphosed to sillimanite-cordierite gneisses. The migmatites were derived from more argillaceous and potassic sediments, with lower oxidation ratios and lower Ba/Rb ratios. They consist of a quartzo-feldspathic leucosome, representing anatectic melt, with schlieren of the refractory minerals sillimanite, garnet, biotite, and oxide minerals. Cordierite developed from garnet and biotite, except in rocks of high FeO/(FeO + MgO) ratio. Both rock types contain assemblages of magnetite + hercynite + corundum + ilmenite + hematite, formed by unmixing of high-temperature solid solutions. Rb-Sr studies of the banded gneisses gave an age of 2327 ± 25 Ma, which is interpreted as the date of metamorphism, and an initial 87Sr/86Sr ratio of 0.7064 ± 0.0003. The migmatite samples plot close to this 2327 Ma regression line, but the strontium isotopes were considerably disturbed, though not homogenized on the scale of sampling, 962 ± 34 Ma ago. It is considered that the anatexis in the migmatites was contemporaneous with the metamorphism of the banded gneisses and that the 962 ± 34 Ma event may be correlated with recrystallization of the migmatites accompanying the growth of cordierite.

    Beschreibung: SummaryRb-Sr whole-rock isochron ages of 443 ± 30 Ma, 449 ± 42 Ma and 489 ± 14 Ma with initial 87Sr/86Sr ratios of 0.70669 ± 0.00068, 0.70599 ± 0.00035 and 0.70658 ± 0.00025 were obtained, respectively, for the Cape Maclear granite, the surrounding Cape Maclear syenite and the Senga Bay granitic body. The results confirm previous estimates of the age of the post-Mozambiquian Lake Malawi Granitic Province, of which these plutons are part. Data from the Dzalanyama granite have excess scatter, but indicate an Irumide age of about 1000 Ma. This batholith is therefore much older than the Lake Malawi Granitic Province but much younger than the Nyika granite of northern Malawi, contrary to earlier suggestions. The porphyritic foliated granite of Mcezi Hill gave an age of 1016 ± 55 Ma and an initial ratio of 0.70522 ± 0.00084. Irumide plutonism in the region includes several dissimilar groups of intrusions, all with low initial87Sr/86Sr ratios. The Irumide age of the Dzalanyama granite makes it possible that the metasediments of the Mchinji Group are wholly post-Ubendian.
