    Notes: The bistable cholesteric twist cell (BCTC) described here is a liquid-crystal device which can be in either of two stable laminar configurations while a particular holding voltage is applied. The major shortcoming of previous implementations of this device was the narrow thickness tolerance required for proper bistable operation. In order to ascertain the effect which material parameters might have on increasing this thickness tolerance an adequate method is needed for characterizing the behavior of the cell. In this paper we describe a wedge cell method for characterizing the behavior of a given BCTC system. The characterization can be conveniently done within a single cell. The data obtained include both the thickness to pitch range for pratical bistable operation and the switching properties. All of these features can be interpreted in terms of static free energy curves calculated for the system. We have also used this wedge cell method to determine the effect of the bend to splay elastic constant ratio on the thickness range of bistable operation in the BCTC. The range is observed to increase with increasing ratio of bend to splay elastic constant. A material has been identified with a bistable thickness range in excess of 10%.

    Notes: Ground lean pork was stored for up to 16 days at 4°C after cooking to an internal temperature of 75°C. The samples, stored for 0, 2, 4, 8, and 16 days, were evaluated for warmed-over (off) aroma by nine experienced panelists using a descriptive analysis line scale. The warmed-over aroma mean scores from 0 to 8 days of storage correlated well with the TBA (thiobarbituric acid) means. Although not significant (p〉0.05), overall sensory scores appeared to decrease on day 16 while TBA values remained high. Further investigation of a significant judge by time interaction (p = 0.04) led to the clustering of judges by their responses into two homogeneous groups. Although both groups indicated a significant storage effect, group 1 perceived a levelling off in off aroma after day 8 whereas group 2 perceived a significant decrease (p〈0.05) from day 8 to 16. Progressive masking of warmed-over aroma by a rancid aroma and a large variation in the panelists' sensitivity to rancid aroma may explain the discrepancy.

    Notes: Three methods of standardizing magnitude estimation data, external calibration, modulus normalization, and equalization were examined using a sensory evaluation data set arising from an incomplete block experiment testing five gels of varying firmness. Both the original data and a logarithmic transformation of the data were analyzed. Instrumental data were also collected. When untransformed data were analyzed the method of standardization profoundly affected tests of significance, coefficients of variation (%CV), and estimation of the power function relating the sensory data to the concentration of the underlying gel. The logarithmically transformed data lead to results independent of the standardizing technique and with higher F-ratios, lower %CV's and normally distributed errors.
