    Notes: Heritability analysis for cold tolerance in lentil was conducted using parental, F2 and F3 populations at two locations in Balochistan, Pakistan and one controlled environment in Fort Collins, Colorado, USA. Populations of parental and F2 families were grown over 2 years (1991-92 and 1992-93) at Quetta, Balochistan, Pakistan. In 1992-93, parental and F3 families were studied at Quetta, and Kalat, Balochistan, Pakistan. Evaluation for normality using non-transformed and log-transformed data failed. Attempts to use analysis of variance were then abandoned in favour of parent-offspring regression for narrow-sense heritability. Estimates of narrow-sense heritability ranged from 0.31±0.06 to 0.71 ± 0.06 under field conditions. Under controlled conditions, the estimated heritability was maximized at 1.00 ± 0.17 using 6- to 8-week-old lentils. Significant transgressive segregants were found in five of the six populations in the F3 generation. Transgressive segregants appeared in the controlled F3 generation but were not observed in field environments. This indicates that cold tolerance is under additive gene control and is environmentally sensitive in gene expression.

    Notes: The multiploid mutant of durum wheat is a genotype that produces unreduced gametes. Our objective was to test the recovery of pentaploid hybrids in crosses of the mutant with rye and Triticum monococcum L. Compared with check crosses, the mutant had a two-third reduction in percent seed set for rye crosses, but had only a slight decrease in crossability with T. monococcum. Pentaploid hybrids were associated with plump seeds of the mutant/rye cross, and with shrivelled seeds of the mutant/T. monococcum cross. We suggest that the endosperm balance number hypothesis explains the association of pentaploid hybrids with endosperm type. This association made for easy recovery of pentaploid hybrids from crosses to both species. Mature, plump seeds from the mutant/rye cross were germinated and pentaploid hybrids were recovered. One pentaploid hybrid was recovered for every 50.5 and 15.1 florets pollinated with rye and T. monococcum, respectively. Unreduced gametes in the multiploid mutant will facilitate interspecific hybridization by reducing the time to produce pentaploid plants.

    Notes: Ascochyta blight, caused by Ascochyta lentis, is one of the most globally important diseases of lentil. Breeding for host resistance has been suggested as an efficient means to control this disease. This paper summarizes existing studies of the characteristics and control of Ascochyta blight in lentil, genetics of resistance to Ascochyta blight and genetic variations among pathogen populations (isolates). Breeding methods for control of the disease are discussed. Six pathotypes of A. lentis have been reported. Many resistant cultivars/lines have been identified in both cultivated and wild lentil. Resistance to Ascochyta blight in lentil is mainly under the control of major genes, but minor genes also play a role. Current breeding programmes are based on crossing resistant and high-yielding cultivars and multilocation testing. Gene pyramiding, exploring slow blighting and partial resistance, and using genes present in wild relatives will be the methods used in the future. Identification of more sources of resistance genes, good characterization of the host-pathogen system, and identification of molecular markers tightly linked to resistance genes are suggested as the key areas for future study.

    Notes: The distribution and density of the Amazon's two contrasting endemic dolphins–boto, or Amazon river dolphin, Inia geoffrensis, and tucuxi, Sotalia fluviatilis–were examined on two adjoining large rivers in western Brazil. Using a 17-m river boat as a sightings platform, strip transects were used to cover areas within 150 m of the river margin and line transects were used in all other areas. Highest densities of both dolphins occurred near the margin, and lowest in the center of rivers. Seven different habitats were identified along river margins. The boto and the tucuxi differed in some elements of habitat choice, but they shared a preference for areas with diminished current and where two channels joined. Neither species favored the two most common edge types in this region of the Amazon-mud banks and flooded forest margins. Overall, the most preferred habitat type was the least common, and known as “meeting of the waters.” In these areas a channel of sediment-rich white water meets one carrying acidic black water; the resultant mixing produces particularly productive, and obviously attractive, conditions for dolphins. These results demonstrate that Amazonian dolphins selectively occur in areas known to be favored for gill net deployment by local fishermen, and may explain why entanglement is apparently a common cause of mortality.

    Notes: In the field, juvenile brook charr Salvelinus fontinalis inhabiting high-velocity water were found to have larger caudal fins and more slender bodies than those inhabiting low-velocity water. Young-of-the-year S. fontinalis were reared in either a high- or low-velocity treatment for 16 weeks and their morphology was measured bi-weekly. From the second to fourth weeks of the experiment onwards, fish reared in the high-velocity treatment had larger maximum caudal fin heights and deeper caudal peduncles than fish reared in the low-velocity treatment. This study demonstrated that the morphological variation in caudal area exhibited by wild juvenile brook charr from microhabitats differing in water velocity could be a consequence of phenotypic plasticity in response to hydrological conditions.

    Notes: : :The effectiveness of duct-mounted and console wall-mounted germicidal air cleaning units on the reduction of airborne microbes was determined. Preliminary air samples were collected and airborne bacteria and molds were monitored over time in the retail sales room, processing room, aging cooler and chill cooler of the Auburn Univ. Meat Laboratory. Log10 cfu/m3 bacteria and molds were not reduced by filtration of fresh air in the air duct of the sales room(P 〉 0.05). After at least 18 h of filtration, 3 or 4 console filtration units operated simultaneously were effective (P ≤ 0.05) at reducing airborne bacteria and molds under controlled conditions in the processing room, aging cooler, and chill cooler. Three console filtration units reduced (P ≤ 0.05) airborne molds under production conditions in the processing room. These data suggest that an electrostatically polarized filter medium combined with scanning UV light is effective in reducing airborne microorganisms in a small processing plant.

    Notes: Analysis of the oil-absorption process in deep-fat fried potato cylinders (frying temperatures of 155°C, 170°C, and 185°C) allowed to distinguish 3 oil fractions: structural oil (absorbed during frying), penetrated surface oil (suctioned during cooling), and surface oil. Results showed that a small amount of oil penetrates during frying because most of the oil was picked up at the end of the process, suggesting that oil uptake and water removal are not synchronous phenomena. After cooling, oil was located either on the surface of the chip or suctioned into the porous crust microstructure, with an inverse relationship between them for increasing frying times.

    Notes: : Three food proteins, soy protein isolates, spray-dried egg white, and whey protein isolates, were acetylated to varying levels, and the extent of modification was determined by wet chemistry methods. Raman spectra of the modified proteins were obtained. A new C=O stretching vibration was observed at 1737cm-1 and was attributed to ester carbonyl groups appended to the proteins during acetylation. Calibration curves were obtained by plotting the intensity ratio of this Raman band to the 1003cm-1 phenylalanine stretching band against the extent of substituted hydroxyl groups. Linear fits were obtained with correlation coefficient r〉 0.9979. The Raman spectral data were also analyzed to study the effect of acetylation on the conformation of the 3 proteins. Marked conformational changes were observed in the modified proteins.

    Notes: : The oil-absorption capacity of different restructured potato chips during deep-fat frying was investigated. Low-leach potato flake was chosen as the major ingredient, whereas native and pregelatinized potato starches were studied as complementary ingredients. Results showed that oil absorption increased significantly when reducing product thickness in all products. Interestingly, it was found that the product containing native potato starch as an ingredient picked up the lowest amount of oil when sheeted into a thick chip, whereas it absorbed the largest amount of oil when sheeted into a thin chip. Those findings were mainly attributed to crust microstructure development as revealed by electron microscopy and confocal microscopy.

    Notes: : Because the consumption of soybean inhibitors of digestive enzymes in processed foods may have both beneficial and adverse health-related effects, reliable and rapid analytical methods for these inhibitors are needed. Monoclonal antibody-based sandwich enzyme-linked immunosorbent assays (ELISAs) were developed for the 2 major soybean protease inhibitors, the Kunitz trypsin inhibitor (KTI) and Bowman-Birk inhibitor (BBI) of trypsin and chymotrypsin. The ELISAs had limits of quantification of approximately 1 and 3 ng/mL for BBI and KTI, respectively, and were used to measure active inhibitors in soy infant formulas. Results were compared with enzymatic analyses and demonstrated that most of the trypsin- and chymotrypsin-inhibitory activities of infant formula were due to constituents other than KTI and BBI. The sandwich ELISA for BBI was also effective in detecting soybean germplasm with atypically low levels of BBI.
