    Abstract: The structure of a food influences the way it is transformed during processing and digestion. This in turn has an impact on nutrient bioaccessibility (release) and digestibility, and subsequently on the physiological response and health of the individual who consumes that food. Although evidence exists on the health benefits associated with the inclusion of certain lipid-rich foods (e.g. nuts, dairy products and fish) in the diet, the mechanisms that explain the physiological effects and the long-term benefits are not well understood. Lipids in themselves have many beneficial health effects: they are a source of energy and essential fatty acids, they are structural components of cell membranes, they are required to solubilise fat soluble compounds, and they serve as precursors of hormones. In addition, the overall structure of the food containing the lipids plays a crucial role in determining health benefits, notably by influencing lipid bioaccessibility and digestibility. Bioaccessibility and digestibility of lipids from food uniquely focuses on the physico-chemical properties of lipids and lipid rich food, as well as the subsequent effects on human health. Chapters from experts in food digestion examine food structure at both the macro- and micro- levels, covering lipids from plant and animal food products. The editors have developed the book for dietitians, nutritionists, and food scientists. Clinicians and other health professionals, educators in nutrition, and others working in the food industry will also find the material relevant.

    Abstract: This book addresses the shelf life of foods, a key factor in determining how food is distributed and consequently where and when different food products are available for consumption. Shelf life is determined by several factors, including microbiological, chemical, physical, and organoleptic deterioration. Often these factors are interrelated and interdependent. The editors of this volume focus specifically on the microbial factors related to shelf life of perishable foods and food commodities. This allows for more detailed coverage of foodborne bacterial pathogens and spoilage microorganisms of concern. The initial part of the book covers the why and how of shelf life determination as well as the specific microbial pathogens and spoilage microorganisms of concern for perishable foods. Contributors address topics such as the techniques utilized for determination of shelf life, the frequency of shelf life testing for different products, the interpretation of data to make shelf life determinations, and management of shelf life of food products from the perspective of the food producer, distributor, retailer, and regulator. Three key areas impacting shelf life are addressed in detail: sanitation, processing, and packaging. The sanitation chapter explains the necessary components of cleaning and sanitizing to assure a hygienic processing environment and why that is critical to shelf life control. Traditional processing procedures are reviewed and advanced processing technologies are explored. Materials used in food packaging and the utilization of traditional and activated food packaging by product type are covered in detail. The latter two chapters of the book delve into newer techniques of analysis and explore the microbiome of food products. Implications of microbial ecology and microbial quantification in food products are discussed in chapters on genomics and in the changing dogma of meat shelf life. The primary audience for this work includes food industry quality and food safety technicians, managers, directors, and executives responsible for shelf life.     Description: This book explores the pivotal role that football played as part of Colombian President Juan Manuel Santos’ national unity project centred on the peace process with the FARC. Football has huge political and social capital in Latin America, and has often been rhetorically deployed by governments for various ends; rarely, however, has football’s power and potential been used in such a deliberate, strategic and active way towards a national peace process and targeted such enduring divisions that have historically impeded a sense of a united nation and national identity. Football in Colombia is understood popularly as one of the few things capable of uniting the country, a belief that Santos seized upon as the national team had a successful campaign in the 2014 World Cup. This first book on Colombian football in English explores previous iterations of football nationalism in the country, including the El Dorado and ‘Narcofootball’ eras, before analysing Santos’ three-pronged strategy empowering professional and amateur football, including the use of political speeches and Twitter, legislation and public policy, and Sport for Development and Peace campaigns, with a particular focus on football in the FARC demobilisation and reincorporation camps following the historic peace agreement.

    Description: Ecosystem-based management on coral reefs has historically focused on biodiversity conservation through the establishment of marine reserves, but it is increasingly recognised that a subset of species can be key to the maintenance of ecosystem processes and functioning. Specific provisions for these key taxa are essential to biodiversity conservation and resilience-based adaptive management. While a wealth of literature addresses ecosystem functioning on coral reefs, available information covers only a subset of specific taxa, ecological processes and environmental stressors. What is lacking is a comparative assessment across the diverse range of coral reef species to synthesise available knowledge to inform science and management. Here we employed expert elicitation coupled with a literature review to generate the first comprehensive assessment of 70 taxonomically diverse and functionally distinct coral reef species from microbes to top predators to summarise reef functioning. Although our synthesis is largely through the lens of the Great Barrier Reef, Australia, a particularly data-rich system, it is relevant to coral reefs in general. We use this assessment to evaluate which taxa drive processes that maintain a healthy reef, and whether or not management of these taxa is considered a priority (i.e. are they vulnerable?) or is feasible (i.e. can they be managed?). Scientific certainty was scored to weight our recommendations, particularly when certainty was low. We use five case studies to highlight critical gaps in knowledge that limit our understanding of ecosystem functioning. To inform the development of novel management strategies and research objectives, we identify taxa that support positive interactions and enhance ecosystem performance, including those where these roles are currently underappreciated. We conclude that current initiatives effectively capture many priority taxa, but that there is significant room to increase opportunities for underappreciated taxa in both science and management to maximally safeguard coral reef functioning.

    Description: Aflatoxins pose a significant public health risk, decrease productivity and profitability and hamper trade. To minimize aflatoxin contamination a biocontrol technology based on atoxigenic strains of Aspergillus flavus that do not produce aflatoxin is used widely in the United States. The technology, with the generic name Aflasafe, has been improved and adapted for use in Africa. Aflasafe products have been developed or are currently being developed in 20 African countries. Aflatoxin biocontrol is being scaled up for use in several African countries through a mix of public, private, and public-private interventions. Farmers in several countries have commercially treated nearly 400,000 ha of maize and groundnut achieving 〉90% reduction in aflatoxin contamination. This chapter summarizes the biology of aflatoxin-producing fungi and various factors affecting their occurence, including climate change. Various management practices for aflatoxin mitigation are then discussed. These include biological control, which is increasingly being adopted by farmers in several countries. We discuss biocontrol product development and commercialization in various African countries. Subsequently, we highlight some barriers to adoption and other challenges.
