Treatment of apples, potatoes, and avocados with superoxide dismutase from bovine blood showed no observable differences in browning of diced or sliced tissues either by subjective observation or objective measurement. The same was found to be true for the reaction of purified tyrosinase from mushrooms with either L-tyrosine or 4-methylcatechol.
