    Description: Currently, there is a steady trend in the world aimed at finding new raw protein sources and their industrial processing into functional food products. The modern food market is represented among other things by non-alcoholic beverages from plant raw materials (vegetable "milk", fermented plant drinks), combined fermented milk products of complex raw materials, which are becoming popular among consumers and are in high demand among the population. The study shows the possibility of using pea grains of Bashkir Research Institute of Agriculture BashSC RAS (BRIA, Republic of Bashkortostan) varieties in the technology of obtaining fermented products. Consumer qualities, the chemical composition of pea varieties of the BRIA selection (Chishminsky 95, Chishminsky 229, Pamyati Khangildin, Yuldash) and their ability to germinate have been investigated. The possibility of their use for obtaining a plant dispersion intended for manufacturing fermented products from plant raw materials has been established.
    Description: В настоящее время в мире отмечается устойчивая тенденция, направленная на поиск новых сырьевых источников белка и способов их промышленной переработки в функциональные продукты питания. Современный продовольственный рынок представлен в числе прочих напитками безалкогольными из растительного сырья (растительным "молоком", ферментированными растительными напитками), комбинированными кисломолочными продуктами сложного сырьевого состава, которые становятся популярными среди потребителей и пользуются высоким спросом у населения. В исследовании показана возможность использования зерна гороха сортов селекции Башкирского НИИ сельского хозяйства УФИЦ РАН (БНИИСХ, Республика Башкортостан) в технологии получения ферментированного продукта. Исследованы потребительские качества, химический состав сортов гороха селекции БНИИСХ (Чишминский 95, Чишминский 229, Памяти Хангильдина, Юлдаш) и их способность к прорастанию. Установлена возможность использования данных сортов гороха для получения растительной дисперсии, предназначенной для производства ферментированного продукта из растительного сырья.

    Description: Mechanically deboned poultry meat is a valuable protein containing raw material widely used for the production of meat products. However, it does not have a high resistance to oxidation; therefore, various antioxidants including those of natural origin are used in its composition. The article provides information on the advisability of using rosemary extract and dihydroquercetin to stabilize lipids and interrupt hydrolytic and chain oxidative processes in mechanically deboned poultry meat. The permissible storage time for mechanically deboned poultry meat using the rosemary extract and dihydroquercetin in a chilled state is 96 hours. Research has been carried out on the oxidative processes of the fatty complex of mechanically deboned poultry meat during the refrigerated storage period. Antioxidants prevent the accumulation of peroxides: in the samples with their use, the peroxide number reaches critical values on 6th–7th day of storage, without their use – on 3th day of storage. For all samples, a gradual increase in the acid number has been observed; however, for samples without antioxidants its values reach a critical level on the 4th day of storage, with the use of antioxidants – on the 7th day. The active formation of secondary oxidation products has begun from the second day of storage and reached the limit of permissible values in samples without antioxidants after 3 days of storage. In samples with antioxidants, the thiobarbituric number reaches a critical value on the 6th day. It has also been shown that the use of antioxidants contributes to the preservation of sensorial indicators (colour, odour) improving the quality of products. The efficiency of using the rosemary extract and dihydroquercetin as inhibitors of the oxidation of mechanically deboned poultry meat has been confirmed.
    Description: Мясо птицы механической обвалки является ценным белковым сырьем, широко используемым для производства мясных продуктов. Однако оно не отличается высокой стойкостью к окислению, для решения этой проблемы используют различные антиоксиданты, в том числе природного происхождения. В статье приведена информация о целесообразности применения экстракта розмарина и дигидрокверцетина для стабилизации липидов и прерывания гидролитических и цепных окислительных процессов в мясе птицы механической обвалки. Допустимые сроки хранения мяса птицы механической обвалки с применением экстракта розмарина и дигидрокверцетина в охлажденном состоянии составили 96 ч. Проведены исследования окислительных процессов жирового комплекса мяса птицы механической обвалки в течение срока хранения в охлажденном состоянии. Антиоксиданты препятствовали накоплению перекисей: в образцах с их применением перекисное число достигло критических значений на 6–7 сутки хранения, без их применения – на 3 сутки. Для всех образцов наблюдалось плавное повышение кислотного числа, однако для образцов без применения антиоксидантов его значения достигли критического уровня на 4 сутки хранения, с применением антиоксидантов – на 7 сутки. Активное образование вторичных продуктов окисления началось со вторых суток хранения и достигло предела допустимых значений в образцах без антиоксидантов после 3 суток хранения. В образцах с антиоксидантами показатель тиабарбитурового числа достиг критического значения на 6 сутки. Доказано, что применение антиоксидантов способствует сохранению органолептических показателей (цвет, запах), что повышает качество продукции. Подтверждена эффективность использования экстракта розмарина и дигидрокверцетина как ингибиторов окисления мяса птицы механической обвалки.

    Description: Mean annual air temperatures are projected to increase, while the winter snowpack is expected to shrink in depth and duration for many mid- and high-latitude temperate forest ecosystems over the next several decades. Together, these changes will lead to warmer growing season soil temperatures and an increased frequency of soil freeze–thaw cycles (FTCs) in winter. We took advantage of the Climate Change Across Seasons Experiment (CCASE) at the Hubbard Brook Experimental Forest in the White Mountains of New Hampshire, USA, to determine how these changes in soil temperature affect foliar nitrogen (N) and carbon metabolism of red maple (Acer rubrum) trees in 2015 and 2017. Earlier work from this study revealed a similar increase in foliar N concentrations with growing season soil warming, with or without the occurrence of soil FTCs in winter. However, these changes in soil warming could differentially affect the availability of cellular nutrients, concentrations of primary and secondary metabolites, and the rates of photosynthesis that are all responsive to climate change. We found that foliar concentrations of phosphorus (P), potassium (K), N, spermine (a polyamine), amino acids (alanine, histidine, and phenylalanine), chlorophyll, carotenoids, sucrose, and rates of photosynthesis increased with growing season soil warming. Despite similar concentrations of foliar N with soil warming with and without soil FTCs in winter, winter soil FTCs affected other foliar metabolic responses. The combination of growing season soil warming and winter soil FTCs led to increased concentrations of two polyamines (putrescine and spermine) and amino acids (alanine, proline, aspartic acid, γ-aminobutyric acid, valine, leucine, and isoleucine). Treatment-specific metabolic changes indicated that while responses to growing season warming were more connected to their role as growth modulators, soil warming + FTC treatment-related effects revealed their dual role in growth and stress tolerance. Together, the results of this study demonstrate that growing season soil warming has multiple positive effects on foliar N and cellular metabolism in trees and that some of these foliar responses are further modified by the addition of stress from winter soil FTCs.

    Description: In stratified oligotrophic waters, phytoplankton communities forming the deep chlorophyll maximum (DCM) are isolated from atmospheric iron sources above and remineralized iron sources below. Reduced supply leads to a minimum in dissolved iron (dFe) near 100 m, but it is unclear if iron limits growth at the DCM. Here, we propose that natural iron addition events occur regularly with the passage of mesoscale eddies, which alter the supply of dFe and other nutrients relative to the availability of light, and can be used to test for iron limitation at the DCM. This framework is applied to two eddies sampled in the North Pacific Subtropical Gyre. Observations in an anticyclonic eddy center indicated downwelling of iron-rich surface waters, leading to increased dFe at the DCM but no increase in productivity. In contrast, uplift of isopycnals within a cyclonic eddy center increased supply of both nitrate and dFe to the DCM, and led to dominance of picoeukaryotic phytoplankton. Iron addition experiments did not increase productivity in either eddy, but significant enhancement of leucine incorporation in the light was observed in the cyclonic eddy, a potential indicator of iron stress among Prochlorococcus. Rapid cycling of siderophores and low dFe:nitrate uptake ratios also indicate that a portion of the microbial community was stressed by low iron. However, near-complete nitrate drawdown in this eddy, which represents an extreme case in nutrient supply compared to nearby Hawaii Ocean Time-series observations, suggests that recycling of dFe in oligotrophic ecosystems is sufficient to avoid iron limitation in the DCM under typical conditions.
