    Notizen: A mathematical model of microwave thawing of homogeneous food products is developed and solved numerically using the Modified Isotherm Migration Method. The model is used to predict thawing time and temperature profiles for microwave thawed meat cylinders at three frequencies (2450 MHz, 915 MHz, 300 MHz) and different power levels. Model and experimental results for thawing a lean beef cylinder heated at low microwave power using 2450 MHz frequency compare well. The advantage of using 915 or 300 MHz power over 2450 MHz power is shown by calculations. The results show that microwaves significantly accelerate the thawing rate. The mathematical model is explored as a tool for designing optimal microwave/convective heating protocols for rapidly thawing foods in desired temperature ranges.

    Notizen: The effects of field application rates, number of applications, interval to harvest after field treatment with ethylenebisdithiocarbamate (EBDC) fungicide and the effect of washing on the levels of the residue ethylenethiourea (ETU) in canned spinach were studied. High rates of applied EBDC high number of field applications and applications closer to harvest time resulted in canned spinach with high levels of ETU. Washing with water before processing significantly reduced the levels of ETU in spinach from all the field treatments, but washing with a solution of sodium hypochlorite and a mild detergent reduced even further the levels of ETU.

    Notizen: The purpose of this work is to demonstrate the predictive capability of the Oak Ridge National Laboratory finite-element computer model of water flow through aquifers, FEWA. The computer code for FEWA was written by G. T. Yeh and D. D. Huff. The area investigated was the Hialeah-Preston wells in Miami, Florida over the Biscayne aquifer. The field data of May 3, 1977, for the area were used for calibration of the model. The model was then integrated over time until October 4, 1977, using the data on rainfall, infiltration, and pumpage of wells during that period. The predicted potentiometric head for the area compared well with the field data. It may be concluded that substantial confidence in the predictive capability of the model has been established for the site in Florida.

    Notizen: Boreholes terminated with a short (1–3 m) length of screen are often used in ground-water quality monitoring, although to obtain representative samples, pumping is often required to overcome the effects of stagnant casing storage. Methods for estimating pumping time prior to sampling from a pumped discharge, presented graphically and in summary equations, show that for most requirements, pumping time (ta) to purge well storage (where mixing of casing storage and ground water takes place within the casing) or to overcome casing storage effects (where little mixing occurs within the casing) is given by 〈displayedItem type="mathematics" xml:id="mu1" numbered="no"〉〈mediaResource alt="image" href="urn:x-wiley:0017467X:GWAT581:GWAT_581_mu1"/〉 Here V is the volume of well storage, Q is the average pumping rate, and m is given by 〈displayedItem type="mathematics" xml:id="mu2" numbered="no"〉〈mediaResource alt="image" href="urn:x-wiley:0017467X:GWAT581:GWAT_581_mu2"/〉 where Ct, Cg, and Cc are concentrations of some substance in pumpage, and ground water, and the initial concentration in casing storage, respectively. In boreholes which have been developed and which are regularly pumped and where a relative sampling error of 2.5% is considered to be acceptable, then m has a value of 0.1. Pumping time then equates to the time necessary to pump 2.3 volumes of well storage from the borehole.Laboratory and field evaluations using boreholes in transmissive and low permeability formations generally validate the theoretical approach. The theory can be used as a basis for estimating and optimizing pumping times for monitoring programs where ground-water samples are recovered from short-screened boreholes. Additionally, the theory allows the determination of an optimum pumping rate.

    Notizen: A model system of six organic acids and water was prepared using two pH ranges and two nitrate levels and packed in soldered sideseam tinplate and welded sideseam enameled cans. Can vacuum, Fe and Pb content were determined after 8-months storage at room temperature and at 38°C. The ECCS plate cans had lower can vacuums and lower solution Fe content than the tinplate cans. Polygalacturonic acid (PGA) was an aggressive corrosive agent in both can types. Water, PGA and malic acid solutions contained the highest concentrations of Pb.

    Notizen: Eight isoenergetic and isonitrogenous diets containing graded levels of inorganic phosphorus were fed to juvenile red drum Sciaenops ocellatus for an 11 week period. Red drum were maintained in a brackish water (5–6 ppt) recirculating system. There were no significant differences in weight gain or feed conversion. However, survival was generally lower for fish fed deficient diets. Phosphorus supplements up to 0.86% increased bone calcium and scale ash, calcium, and phosphorus values. Bone ash and phosphorus were not significantly affected above 0.71% dietary phosphorus. It appears that approximately 0.86% dietary phosphorus is needed for maximum tissue mineralization of juvenile red drum.

    Notizen: Each year, thousands of tons of citrus concentrate are stored and transported throughout the world at 62° Brix. Increasing this concentration to 72° Brix can result in substantial savings. Fresh orange juice, treated mechanically or with pectic enzymes to reduce its viscosity, was concentrated to 72° Brix in a commercial processing plant, then samples were stored in barrels in a tank farm at −7 or at 4°C. At monthly intervals, samples were blended to make 41.8° Brix Frozen Concentrated Orange Juice. The enzyme-treated samples had lower viscosity than those mechanically treated. Vitamin C retention levels were 〉 94% after 6 months storage at 4°C. Taste evaluations rated the product ‘very good’ and furfural levels were well below that which indicates off flavors. Browning tended to increase with storage time and temperature.

    Notizen: Eight beef/pork ground meat blends were made from mature (cows or sows) and youthful (steers or barrow) beef and/or pork lean. Blends were stored at — 27°C for either 14 or 150 days. Storage time decreased overall desirability scores of blends made with 20% pork fat and 80% youthful beef lean. No differences were found for flavor or overall desirability scores within the 14-day storage treatment. The consumer panel did not detect differences among treatments for source of fat or species. Results indicated beef/pork patties containing 40–80% mature lean and a minimum of 10% beef fat were equal to all-beef controls (100% beef patty) for visual and palatability traits.
