    Description: The lifestyle of humans is rapidly changing, and, correspondingly, their needs and the current and future megatrends of the food market. It is worth mentioning (1) the preference for natural, simple, and flexible diets that drive the further expansion of plant-focused formulations, (2) the focus on food sustainability (food waste reduction), and (3) the interest in healthy eating as the basis for good health. The hectic routine and rapid urbanization in developed and developing regions, respectively, have shifted consumer preferences toward bread and baked foods, which, interestingly, are often high in sugars and are categorized as having a high glycemic index. Therefore, it is of major importance to address the technological challenges of manufacturing baked goods with high physical and sensory quality that result in positive metabolic responses. This Special Issue seeks to provide fundamental understanding in this area and novel strategies to improve the nutritional properties of baked goods, including a decrease in starch bioaccessibility, sugar reduction, increase in fiber and/or protein content, and the improvement of phytochemical bioactivity. This Special Issue will also cover studies on the physical and sensory improvements of baked goods that may provide a mechanistic understanding to minimize the loss of quality after the incorporation of nutritional-improving ingredients, such as edible byproducts, proteins, or fibers. Last but not least, studies focused on the reduction of additives (clean label) or fat and on the use of sourdough to improve the sensory properties of baked goods will also be included.

    Description: The book presents the proceedings of the international conference CLiP 2003, Computer Literacy and Philology, held in Florence on 4 and 5 December 2003 within the framework of the celebrations for the 80th anniversary of Florence University.     Description: The brain of each animal shows specific traits that reflect its phylogenetic history and its particular lifestyle. Therefore, comparing brains is not just a mere intellectual exercise, but it helps understanding how the brain allows adaptive behavioural strategies to face an ever-changing world and how this complex organ has evolved during phylogeny, giving rise to complex mental processes in humans and other animals. These questions attracted scientists since the times of Santiago Ramon y Cajal one of the founders of comparative neurobiology. In the last decade, this discipline has undergone a true revolution due to the analysis of expression patterns of morphogenetic genes in embryos of different animals. The papers of this e-book are good examples of modern comparative neurobiology, which mainly focuses on the following four Grand Questions: a) How are different brains built during ontogeny? b) What is the anatomical organization of mature brains and how can they be compared? c) How do brains work to accomplish their function of ensuring survival and, ultimately, reproductive success? d) How have brains evolved during phylogeny? The title of this e-book, Adaptive Function and Brain Evolution, stresses the importance of comparative studies to understand brain function and, the reverse, of considering brain function to properly understand brain evolution. These issues should be taken into account when using animals in the research of mental function and dysfunction, and are fundamental to understand the origins of the human mind.

    Description: In this book Carmen Martinez-Vargas explores how academic participatory research and the way it is carried out can contribute to more, or less, social justice. Adopting theoretical and empirical approaches, and addressing multiple complex, intersectional issues, this book offers inspiration for scholars and practitioners to open up alternative pathways to social justice, viewed through a Global South lens. Martinez-Vargas examines the colonial roots of research and emphasises the importance of problematising current practices and limitations in order to establish more just and democratic participatory research practices. Although practitioners have been challenging the Western roots of research and participatory research for decades, their goals can be compromised by pluralities and contradictions in the field. This book aims not to replicate past participatory research approaches, but to offer an innovative theoretical foundation—the Capabilities Approach—and an innovative participatory practice called ‘Democratic Capabilities Research’. Democratising Participatory Research is not only timely and relevant in South Africa, but also in the Global North owing to the current crisis of values jeopardising the peaceful existence of diverse societies. The book gives essential recommendations for capabilities and human development scholars to reframe their perspectives and uses of the Capabilities Approach, as well as for participatory practitioners to critically reflect on their practices and their often limited conceptualisation of participation.

    Description: The 43rd UID conference, held in Genova, takes up the theme of ‘Dialogues’ as practice and debate on many fundamental topics in our social life, especially in these complex and not yet resolved times. The city of Genova offers the opportunity to ponder on the value of comparison and on the possibilities for the community, naturally focused on the aspects that concern us, as professors, researchers, disseminators of knowledge, or on all the possibile meanings of the discipline of representation and its dialogue with ‘others’, which we have broadly catalogued in three macro areas: History, Semiotics, Science / Technology. Therefore, “dialogue” as a profitable exchange based on a common language, without which it is impossible to comprehend and understand one another; and the graphic sign that connotes the conference is the precise transcription of this concept: the title ‘translated’ into signs, derived from the visual alphabet designed for the visual identity of the UID since 2017. There are many topics which refer to three macro sessions: - Witnessing (signs and history) - Communicating (signs and semiotics) - Experimenting (signs and sciences) Thanks to the different points of view, an exceptional resource of our disciplinary area, we want to try to outline the prevailing theoretical-operational synergies, the collaborative lines of an instrumental nature, the recent updates of the repertoires of images that attest and nourish the relations among representation, history, semiotics, sciences.

    Description: This chapter deals with a rather unknown quarantine institution: the lazaretto of Mogador Island in Morocco. Specifically, the work explores the site’s centrality to the Spanish imperialist project of “regeneration” over of its southern neighbour. In contrast with the “civilisation” schemes deployed by the leading European imperial powers at the end of the nineteenth century, regeneration did not seek to construct a colonial Morocco but a so-called African Spain in more balanced terms with peninsular Spain. This project was to be achieved through the support and direction of ongoing Moroccan initiatives of modernisation, as well as through the training of an elite of “Moors” who were to collaborate with Spanish experts sent to the country, largely based in Tangier. Within this general context, the Mogador Island lazaretto became a key site of regeneration projects. From a sanitary and political point of view, it was meant to define a Spanish-Moroccan space by marking its new borders and also to protect “Moorish” pilgrims against both the ideological and health-related risks associated with the Mecca pilgrimage.

    Description: Polarimetry allows sensitivity to the structural and geometric properties of the scene, making it possible a more accurate identification and classification than non-polarimetric systems. Then, polarimetry makes possible new applications, especially in quantitative extraction of bio and geophysical variables. Also, the combination of polarimetry and interferometry allows also to explore the vertical structure of semi-transparent media, like crops and forests. SAR polarimetry is an active field of research in Earth observation. Besides the development of applications, researchers have also focused in theory or physical modelling to make SAR polarimetry an operational technique. This book presents the state of the art in SAR polarimetry, from theory and physical modelling to final applications, but also the current and futures challenges. This book puts also the emphasis on studies for the exploitation of data provided by the new polarimetric space borne SAR sensors, which include additional frequency bands, interferometric capability, enlarged spatial coverage, high spatial resolution and/or shorter revisit times.

    Description: This book is intended to be the first volume in a series devoted to an in-depth study of medieval European and middle-east comet records. With the aim of covering the entire medieval period, widely understood as corresponding to the 5th to 15th centuries AD, this first volume deals with the 5th, 6th, and 7th centuries. The rest will follow until the period is completed. Comet catalogs are a classic literary genre in the history of astronomy since before the 20th century. In them, the different authors presented reports of observations of different phenomena related to these celestial bodies but always presented a characteristic bias favorable to records from Asia, especially Chinese. This fact is understandable since, in those countries, there was a heritage of systematically writing chronicles of the successive reigns, pointing out astronomical events that, according to their traditions and beliefs, would influence the kingdom or the monarch in some way. This was not the case in Western countries, where we find fewer astronomical observations that are much more dispersed in works by different individual authors who often copy each other or, at least, tend to copy from the most prestigious ones. As a result, to date, there has been no research dedicated to exhaustively studying European literary sources, searching for elements that allow expanding the historical databases on medieval comets, and, at the same time, carrying out astronomical analyses that allow in some cases, the improvement or even the proposal of a set of orbital elements associated with comets.

    Description: The green belt has been one of the UK’s most consistent and successful planning policies. Over the past century, it has limited urban sprawl and preserved the countryside around our cities, but is it still fit for purpose in a world of unprecedented urban growth and potentially catastrophic climate change? Repurposing the Green Belt in the 21st Century examines the history of the green belt in the UK and how it has influenced planning regimes in other countries. Despite its undoubted achievements, it is time to review the green belt as an instrument of urban planning and landscape design. The problem of the ecological impact of cities and the mitigation measures of major climate changes are at the top of the urban agenda across the world. Urban agriculture, blue and green infrastructures, and forestation are the new ecological design imperatives driving urban policymaking. Through an examination of practice in the UK and in countries such as the Netherlands, Spain and Germany, the book proposes a framework for a reconsideration of the critical relationship between the city and its hinterlands for the 21st century. It will be useful for undergraduate and postgraduate students of planning, landscape architecture, urban design, architecture and land economics, as well as practitioners in design, planning and property/real estate.
