    Description: Staphylococcus aureus is a common organism on the skin and in the nasal passages of approximately 50% of the population. Heat-treated seafood may become contaminated with this organism by poor handling, then storage at improper temperatures allows the organism to multiply and produce its toxin. This type of food poisoning may be avoided by practicing strict personal hygiene, thorough cleaning and disinfection of equipment, and storage of susceptible food at temperatures below 10°C or above 60°C. Presented in the paper is the methodology of determining S. aureus in fish and fishery products.

    Description: Streptococci are gram-positive cocci, sometimes coccobacilli, arranged in chains. This group of streptococci resides in the intestine of warm-blooded animals. They are bile resistant and capable of growth at 45°C. Fecal streptococci form part of the microflora of many foods without necessarily indicating poor hygiene. They are found in many fermented foods, such as cheese and raw sausage, and often take part in the fermentation process. However, in meat products which have received a severe heat process, the presence of excess numbers of fecal streptococci indicates unhygienic handling and/or faulty storage. Presented in the paper is the methodology of determining the presence of fecal streptococci in fish and fishery products.

    Description: A review is made of studies conducted on cryoprotectants for use in the frozen storage of processed fishery products, such as surimi. Some 150 compounds were screened for cryoprotective effects on fish actomyosin; the findings of experiments investigating the behaviour of carp actomyosin, and fish myosin, actin and other constituent proteins during frozen storage are described. The mechanism of freeze denaturation and of the effects of cryoprotectants is outlined and the application of cryoprotectants in the development of new fish gel products considered.

    Description: The K value, expressed as K value % = HxR + Hx /ATP + ADP + AMP + IMP + HxR + Hx x 100 is a good index for estimating the enzymatic freshness of fish. The changes in K value of various species of tropical food fishes during ice-storage had been studied. It was found that these warm water fishes deteriorate slowly under ice-storage preservation. A study was made on the K value changes of three species of fish (Polynemus sp., Rastrelliger kanagurta and Pampus argenteus) in a supermarket distribution chain. Most sets of data showed changes of quality; from the point of supply until the morning after an overnight stay on display shelves. The results support a conclusion that the shelf life limit of fresh tropical food fish, based on sensory evaluation, was, when handled well, between 12 to 28 days ice-storage depending on species, with the K value ranging from 24 -37%.

    Description: The fishery industry in Indonesia comprise domestic-based traditional fish products factories and export-oriented companies. The traditional processing units are usually operated by small to medium-scale processors while the export-oriented products are mostly operated by means of advanced technology. The traditional processing units are predominantly engaged in fish curing such as salting and drying, smoking, steaming/boiling and fermentation, whereas modernised industries usually produce products for export purposes, including handling of live and fresh or chilled shrimp and other fish products and frozen, canning factories, etc. The fish inspection and quality control programme includes the development of a standardization system, inspection of production facilities in terms of Good Handling, and/or Manufacturing and Hygienic Practices and inspection of product quality. The inspection and quality control policy consists of compulsory and supervisory approaches. The compulsory programme was manifested with certifications of a) GMP, which includes sanitary and hygienic status of plant; b) competence provided to in-plant processing technologist and quality control supervisors; c) quality or health for exported product and d) letter of origin/ quality for products transported and distributed inter-provincially. The application of quality management in the fishery industry, whether they are traditional or more modem and whether their products are for domestic or export markets, are all at different states of development. The processing plants are classified according to the degree of compliance for meeting prerequisite conditions. The plant must achieve at least "C+" rating to pass the inspection; those which fall under plant-rating of C- and D are considered to be in non-compliance and will go through the supervisory programme to correct deficiencies within a specified period. For the past five years, an Integrated Quality Management Programme (IQMP) based on HACCP concept adopted from the Canadian QMP, has been exercised by those fishery industries which meet the acceptable prerequisite conditions.

    Description: 1. Internationalization and Diversification of Surimi IndustryIt is estimated that the world s surimi production in 1994 was 512,000 tonnes. Japan was the biggest surimi producer in the middle of 80 s, but the surimi production of Japan decreased to 132,000 tonnes in 1994. The USA started the commercial production of frozen surimi in Alaska in 1985 and became the biggest surimi producer in the world with 209,000 tonnes in 1994. Thailand started surimi production in 1978 and has increased its production to 65,000 tonnes in 1994. The success of the Thai surimi industry stimulated development of surimi production in other countries in the region. With an increase in the number of countries producing surimi, the fish species used for frozen surimi has been diversified. Of about 500,000 tonnes of frozen surimi in the world, the share of Alaska pollock surimi was 60% in 1994. The share of surimi from other fish such as whiting, threadfin bream, etc., has been increasing over the years.2. Intrinsic Quality of Frozen SurimiStability of the meat proteins (especially of myofibrillar proteins) against heat and frozen storage is species dependent. Protein stability of cold water species is much poorer than of temperate/tropical water species. The stability or the rate of denaturation of myofibrillar proteins is closely related to the temperature of the water in which the fish lives. Strict temperature control is required for surimi of Alaska pollock and other cold water species.3. Internationalization of Surimi-Based ProductsThe world production of surimi-based products in 1993 was estimated at 1,090,000 tonnes. The biggest kamaboko producer is Japan, followed by Korea, USA, Taiwan and Thailand. The production of imitation crab and seafood analogs began in the middle of the 70 s and are now manufactured throughout the world.4. Recent Trend of Kamaboko Products in JapanJapanese consumers now prefer softer textured foods than previously and pay more attention to healthy foods. Some of the successful soft textured products are made by incorporating isolated soy protein into surimi-based products.5. New Surimi-Based Product TechnologyVacuum grinding mixers have been introduced more and more into kamaboko processing plants in Japan. Imitation crab meat, scallop or squid with fine texture and juiciness as compared to conventional products are now produced by twin-screw extrusion cooking. Ohmic cooking, or Joule cooking, with heat generated by flowing electric current through the foods is becoming popular in the kamaboko industry. Proteinase inhibitors such as blood plasma are used for Pacific whiting surimi infected by Myxosporidian parasites.

    Description: Fish and fishery products are important sources of food and are economically important to Thailand. Though marine fisheries production has become stagnant in the past decade, output is supplemented by both fresh water and coastal aquaculture production. Total fisheries production in 1993 was reported to be 3.4 million tonnes, of which aquaculture fisheries accounted for 9.7 %. The consumption of fishery products especially seafood is probably a result of the country s high economic performance. The upturn in fish processing industries and the Department of Fisheries HACCP-based inspection program were recognized in the region and internationally in the past five years. Consequently, Thailand has become, by value, the largest fish exporting country in 1993 and 1994. Processing technology is being developed to meet market demands for quality, safety and wholesomeness. Preservation technology for dried and fermented products is upgraded utilizing modem equipment and technology to extend shelf life and to improve standard for wholesomeness. While technology involving value-added products are developed locally for industrial scale production, processing technology is also being developed for dried, chilled, frozen, canned, retort-pouched and comminuted products. Quality management becomes the most concern of the fish processing industry. The Hazard Analysis and Critical Control Point (HACCP) based inspection system was enforced as mandatory for fish exporting companies in January 1996. Inspection techniques, monitoring and verification procedures are developed to strengthen the implementation of HACCP quality assurance program by the industries. Fish inspection for quality assurance has been focused on meeting with international standards. New inspection laboratories and scheme for raw material control were established to employ the latest techniques to assure quality and safety of products and raw materials to be used for processing. The Government has put strong emphasis on quality management program for the industry. In the 8th National Economic and Development plan (1997 - 2001), the Department of Fisheries will continue projects to accelerate the development of quality products and quality system, to maintain the supply of safe and quality fishery products to local and international market and to resolve problems faced by the industry.

    Description: Time-temperature dependence of sensory quality factors in relation with thermal processing of salted-boiled product prepared from milk fish (Chanos-chanos) was investigated. Organoleptic z-values for the product of 19, 26, 24, 19 and 23°C were found for appearance, odor, taste, flesh texture and bone texture respectively. Based on a level of 50% bone texture change as the most important quality criterion, various processing conditions to optimise other quality factors could be established by computer simulation. The results indicated that in order to obtain optimum quality, retort processing condition set at temperatures between 115 to 120°C were favoured. The results also demonstrated that higher quality retention could be obtained by using smaller fish sizes. Based on microbial sterility evaluation it can be suggested for possible application that hermetically restorable plastic package be used in the processing in order to increase shelf life of the product.

    Description: Australian sardines (Sardinops neopilchardus) were salted, dried and packaged with (1) air (LDPE bags) (2) under vacuum, and (3) nitrogen gas-flushed and stored at 30°C, 75% RH for 12 weeks. Storage time was the most important factor affecting the quality of the fish. TBARS values of every sample decreased when storage time increased. Fluorescent products increased dramatically during storage of control-packed (air) samples but remained constant in vacuum and nitrogen-packed samples. Vacuum packaging improved appearance of the products. Nitrogen packaging reduced the leaking of oil from the fish flesh. The appearance of control-packed and nitrogen-packed samples were judged unacceptable after the fourth week of storage while vacuum-packed samples remained acceptable up to 12 weeks of storage. Vacuum and nitrogen packaging did not show any effect on flavour, texture and overall acceptability of the cooked samples. Rancidity scores showed a significant negative correlation (P=0.05) to TBARS value and a positive correlation to the level of fluorescent products.

    Description: Sensory assessment is one of the inspection methods officially enforced on imported foods by USA and Canada. Though often said to be "subjective", an efficient assessment can be achieved through training. Sensory assessment is now recognised as an effective monitoring procedure to evaluate the quality of raw materials and in-process quality control in HACCP. The main purpose of this study is to define the sensory profile of black tiger prawn (Penaeus monodon) and banana prawn (Penaeus merguiensis), develop assessment techniques to be used by industry s laboratories and recommend suitable handling practice and storage time. In order to obtain samples of different quality levels, black tiger prawn and banana prawn were allowed to deteriorate at room temperature and on ice prior to processing into frozen products. Evaluation of sensory quality was performed by qualified prawn graders from USA and Canada. Chemical quality index "indole" was analysed on all samples. Training procedures and sensory profile of the products were developed. Thirty-one trained and qualified panelists, including inspectors from the Thai Department of Fisheries and quality control personnel from industry, participated in the sensory sessions. Storage time of not more than 32 hours at ambient temperature and 6 days on ice was recommended for black tiger prawn. Banana prawn should not be held for more than 12 hours at ambient temperature and 6 days on ice. The indole contents found in the rejected samples were way below the defect action level for prawn decomposition of 25 µg/100g suggested by USFDA. It is concluded that indole is not a good quality index for low temperature spoilage of prawn.

    Description: Striped catfish (Pangasius sutchi) is a fatty fish which possesses a specific non-palatable flavour. Processing of this species into value-added smoked product so as to improve flavour and odour was therefore studied. The appropriate conditions for brining and dry curing were studied using 15, 20 and 26% brine for 10, 20 and 30 min, and salt to fish ratios of 1:3, 1:5 and 1:7 for 20, 30 and 40 min, respectively. Sample with the highest acceptability scores (P=0.05) of each curing method was selected for further study on appropriate conditions of natural smoking using coconut hull. Smoking temperatures at 60, 70 and 80°C were studied for the smoking time of 2 and 3 hr at each temperature. The proper conditions were found to be brining with 26% brine for 10 min, then smoking at 60°C for 3 hr or dry salting with salt to fish ratio of 1:7 for 20 min and smoking at 60°C for 2 hr.

    Description: Boiled, dried anchovies sold in Singapore are mainly imported from neighbouring countries. A survey was conducted to obtain an understanding of the quality of this product which is sold packed in polypropylene bags at supermarkets. The survey showed that the product had a high moisture content (=25% dry wt) and hence should be categorised as an intermediate-moisture product rather than as a dried product. It also had a high percentage breakage, a considerable amount of foreign matter, high water activity from 0.663 to 0.700 and total lipid of 7.0 - 8.6%. The organoleptic quality of most samples was acceptable. This survey showed that the quality of this product at retail outlets could be improved. The following are suitable quality indicators: percentage breakage, protein content, salt content, ash and acid insoluble ash, but they need not be monitored in storage studies. The suitable quality indices for quality changes of this product were identified as moisture content, water activity, total volatile basic nitrogen, total lipid, peroxide value, thiobarbituric acid number, colour and sensory evaluation. Trimethylamine nitrogen is, however not a suitable parameter. The effect of storage at different conditions (refrigerated: 7±2 C, 80% RH; room temperature exposed to light and kept in the dark: 27±40°C, 73±16% RH) on the shelflife of the product was also investigated. The samples were again found to have a high moisture and hence mould growth was the main contributor to spoilage at room temperature. Refrigerated storage extended the shelflife beyond six weeks, yielding a fairly good quality product. However it caused the moisture and water activity to increase with storage. The shelflife of samples stored at room temperature exposed to light was 4 weeks and those in the dark was two weeks. Drying and vacuum packing were done to study their effect on shelflife extension. The samples were further dried to a moisture of =25% (dry weight) using the oven and low temperature vacuum dryer, then vacuum packed and stored in an air-conditioned room. These were compared with two other samples that were not further dried; one lot was stored exposed at room temperature and the other was vacuum packed and stored in an air-conditioned room. The samples were monitored weekly for the first 6 weeks and thereafter monthly. The first 6 weeks of this experiment is reported here; these preliminary results showed that further drying and vacuum packaging effectively reduced the moisture and also retarded mould growth. Thus the product is still fairly good even after six weeks.

    Description: Cholera is an acute specific infection caused by the organism, Vibrio cholera. Diagnosis may be confirmed by the presence of large numbers of the comma-shaped bacilli on direct microscopic examination of a fecal or vomitus smear, and by the isolation of the organism on culture. Fish and shellfish have been identified as vehicles of cholera. Large numbers of V. cholera must usually be ingested to cause cholera. Thus problems often occur when poor handling and inadequate refrigeration have allowed the organism to multiply. Presented in the paper is the methodology of determining the presence of Vibrio cholera in fish and fishery products.

    Description: Food poisoning due to Vibrio parahaemolyticus is a food-borne infection resulting from the ingestion of a large number of this organism (about 106-109 viable cells). The major symptoms are diarrhea and abdominal pain with headache, fever, and vomiting also occurring. The organisms are excreted during the acute stage of the illness after which they decrease rapidly. The differentiation of V. parahaemolyticus from other pathogenic species of Vibrio is based mainly on salt tolerance, Voges-Proskauer reaction, fermentation of sucrose, and growth at 43°C. Presented in the paper is the methodology of determining the presence of Vibrio cholera in fish and fishery products.
