Abstract
THE antibiotic nisin is known to reduce the heat-resistance of spore-forming organisms, and consideration has been given to its use as an additive to lower the heat-process requirements of canned foods1. The radiation resistance of spore-formers might also be influenced by nisin, and the dose required for the sterilization of food lowered to a level where radiation-induced flavour and odour changes are not detectable.
