Notes:
A study was conducted with 17 cultivars of lima beans whose seed coat color was white, green or speckled and whose cotyledon color was white, green and mixed. Kjeldahl nitrogen, 17 amino acids and 8 elements were determined in the seed. The lima bean was found to be a good source of most amino acids except for the essential amino acid methionine, which was the limiting amino acid. Seven elements were supplied at an RDA level of 10% or better. No significant differences in the amino acids or the 8 elements were found among cotyledon or seed coat color. However, differences were found among cultivars.
