    Description: The biochemical composition and energy content of muscle, liver and gonads of Merluccius hubbsi females during the reproductive cycle were assessed. Adult females (44-50 cm total length) were caught in the Patagonian area (43~' S-45~' S). Condition factor (K) and hepatosomatic index (HSI) were estimated. Proteins and lipids in each tissue were determined. Besides, water and ashes content in muscle was analyzed. In all tissues the biochemical components underwent variations during the reproductive cycle. During the process gonads showed a significant drop in protein and lipid content (P 〈 0.01). In muscle, a decrease in proteins (P 〈 0.01) and lipids in the postspawning period was observed; the percentage of both components increased during the resting stage. The same pattern was verified in the liver. The energy content was lower in the postspawning stage (P 〈 0.05). A positive relation of K with lipids of muscle and liver and of HSI with lipids and proteins of liver and lipids of muscle was observed. The decrease of lipids and proteins during the postspawning stage would reflect an important energy output during the reproductive cycle.
    Description: Se evaluó la composición bioquímica y el contenido energético del músculo, hígado y gónadas de hembras de Merluccius hubbsi durante el ciclo reproductivo. Las hembras adultas (44-50 cm de longitud total) se capturaron en la región norpatagónica (43~' S-45~' S). Se estimó el factor de condición de Fulton (K) y el índice hepatosomático (IHS). Se determinaron las proteínas y los lípidos de cada tejido. Se analizó, además, el contenido de humedad y cenizas en músculo. En todos los tejidos los componentes bioquímicos mostraron variaciones en el ciclo reproductivo. Durante el proceso las gónadas presentaron una caída significativa del contenido de proteínas y lípidos (p 〈 0,01). En músculo se constató una disminución de proteínas (p 〈 0,01) y lípidos en la fase de postdesove; el porcentaje de ambos componentes aumentó en el estadio de reposo. El mismo patrón se observó en el hígado. El contenido energético fue menor en el estadio de postdesove (p 〈 0,05). Se constató una relación positiva de K con lípidos del músculo e hígado y de IHS con lípidos y proteínas del hígado y lípidos del músculo. La disminución de lípidos y proteínas durante el estadio de postdesove sería el reflejo de un importante gasto energético durante el ciclo reproductivo.

    Description: The anchovy (E.anchoita)is one of the most abundant species in the Argentine Sea. Distributed in between latitudes 34°S and 48°S, it has only been caught, traditionally, along the coasts of Buenos Aires Province - particulary in the vicinity of Mar del Plata. Anchovy-like items are exported both to producing and consuming countries. During the last three years markets have been lost. In order to regain them and to develop new ones, particularly in Europe it shall be necessary to compete with products that are well-priced and of the high quality and have a substantial aggregate value. The anchovy domestic market could be enlarged- with certain limitations- be developing new products.

    Description: Parasitized and non-parasitized hake fillets obtained at fish processing plants were compared in order to assess the efects of Kudoa rosenbuschi myxosporidia on muscle of Merluccius hubbsi. The following studies were carried out: a)incidence and severity of parasitism; b)proteolytic and spoilage at a histologic level; c)pH and proximal composition in parasitized and non-parasitized fillets; and c)parasitism action on gelified products. Gel strength, elasticity and organoleptic level in gelified products were lower for parasitized samples. Recommendations are put forward as to conditioning and cooling of the catch and subsequent processing in order to lessen the effects of parasitism.

    Description: The aim of this study was to determine the chemical composition and fatty acids profile present in Argentine anchovy (Engraulis anchoita) northern population as a function of fish size and fishing area (SW Atlantic Ocean, Argentine Sea). Samples were collected during the northern stock assessment cruise of the Instituto Nacional de Investigación y Desarrollo Pesquero (INIDEP) carried out on board of FRV Capitán Oca Balda in Spring 2008 (OB-02/2008). The fishing trawls were performed between 34º 35' S and 40º 19' S. The area was divided in two zones: the northern, between 34º S-38º S, strongly influenced by the mixohaline waters of the Río de la Plata River estuary and the southern, between 38º S-41º S, that included the El Rincón coastal area. In each trawl specimens were classified per 1 cm size class (10-18 cm total length). Results show that, depending on the fishing area and specimens size, variation in the lipid content and fatty acids profile is found. Said variation could be associated to the physiologic condition of specimens and the biotic and abiotic factors present in the fishing areas studied. Technologically, the results obtained are essential when studying the manufacture of new commercial products derived from that underexploited species as a valid alternative for the future development of the regional fisheries industry.
    Description: El objetivo del presente trabajo fue estudiar la composición química y el perfil de ácidos grasos presentes en la anchoíta bonaerense (Engraulis anchoita) en función del tamaño de los ejemplares y de la zona de captura (Atlántico SO, Mar Argentino). Las muestras se obtuvieron en la campaña de evaluación del stock bonaerense de anchoíta del Instituto Nacional de Investigación y Desarrollo Pesquero (INIDEP) realizada a bordo del BIP Capitán Oca Balda (OB-02/2008) en la primavera de 2008. Los lances se efectuaron entre los 34º 35' S y 40º 19' S. El área se dividió en dos sectores: la zona norte, entre los 34º S-38º S, fuertemente influenciada por aguas mixohalinas del Río de la Plata y la zona sur, entre los 38º S-41º S, que incluyó el área costera de El Rincón. En cada lance de pesca los ejemplares se agruparon por clase de talla de 1 cm (10-18 cm de longitud total). Los resultados muestran que, dependiendo del área de captura y del tamaño de los ejemplares, varía el contenido lipídico y el perfil de ácidos grasos. Esas variaciones podrían estar asociadas a la condición fisiológica de los ejemplares y a factores bióticos y abióticos presentes en las áreas de captura estudiadas. Tecnológicamente, los resultados obtenidos resultan esenciales cuando se investiga la elaboración de nuevos productos comerciales derivados de esta especie subexplotada como alternativa válida para el futuro desarrollo de la industria pesquera regional.
