    Abstract: Food-borne bacterial pathogens encounter a number of stressors during food processing and preservation. More and more pathogens are able to adapt their physiological properties and/or genetic expression to survive these stressors and pose a risk to food safety and public health. This book provides the reader with a comprehensive overview of common food processing-associated stressors (e.g., heat, cold, acid, osmosis, and oxidation) and deals with the molecular basis of the respective bacterial stress response mechanisms (e.g., viable but nonculturable state, biofilm formation, sporulation, and cross-protection response). Additionally, various chapters cover the response mechanisms of foodborne pathogens to emerging nonthermal sterilisation technologies such as ultrasound, high-pressure processing, pulsed electric fields, ultraviolet light, irradiation and phytochemicals.     Abstract: The key to the solution of geological hazards such as Karst water inrush and mud burst in tunnel lies in the accurate prediction or detection of Karst and groundwater. By means of on-site monitoring, theoretical analysis and indoor simulation experiments, the authors conduct in-depth research on the characteristics of water-bearing media and their mechanism of action, and explored the relevance of "Karst morphology", "Karst groundwater" and "fractal characteristics". An evaluation model of Karst development degree based on hydrochemical kinetic parameters and fractal index of Karst morphology is established. Based on the combination of Karst groundwater dynamics, hydrochemistry, water-rock interaction theory and fractal theory, the hydrochemical Kinetics and fractal index evaluation technique for Karst development is proposed. It provides a new theory and method for improving the accuracy of Karst and groundwater forecasting. The research results are of practical and guiding significance to the construction, Karst geological disasters prevention and management of various underground projects in Karst areas.     Notes: The photodissociation of acetophenone (C6H5COCH3) at 193 and 248 nm has been studied using the time-of-flight mass spectrometric technique. For hν=193 nm, two major primary channels, C6H5COCH3+hν→C6H5CO+CH3 [channel (1)] and C6H5+CH3CO [channel (2)], are observed with comparable cross sections. Data analysis shows that (approximate)30%–50% of primary C6H5CO and CH3CO radicals further decomposes, yielding secondary products C6H5+CO and CH3+CO, respectively. The translational energy release measurements indicate that for both channels (1) and (2) at 193 nm, (approximate)25%–30% of the available energy is channeled into kinetic energies of the primary photofragments. Measurements at hν=248 nm reveal that the branching ratio of channel (2) to channel (1) is (approximate)0.01. For channel (1) at hν=248 nm, (approximate)42% of the available energy is directed as the kinetic energy of the photofragments. The observed maximum kinetic energy release for channel (1) at 248 nm yields a value of 85.0±2.2 kcal/mol for the C6H5CO–CH3 bond dissociation energy at 0 K (D0). The photofragment angular distributions are found to be isotropic for both channels (1) and (2) at hν=193 nm and for channel (1) at hν=248 nm. A minor photodissociation channel C6H5COCH3+hν→C6H5CH3+CO is identified at both hν=193 and 248 nm. The energetics for the dissociation reactions of acetophenone have also been investigated using ab initio Gaussian-2-type procedures. The heats of formation at 0 K (ΔfH°0) for C6H5CO and C6H5 calculated using the isodesmic reaction scheme are 33.9±1.3 and 87.6±1.0 kcal/mol, respectively. These results suggest that the literature ΔfH°0 values for C6H5CO and C6H5 are likely to be low by 3–4 kcal/mol. These theoretical ΔfH° values for C6H5CO and C6H5 yield a theoretical D0(C6H5CO–CH3) value of 85.1±1.4 kcal/mol, which is in excellent accord with the experimental results obtained in the present study. © 1997 American Institute of Physics.

    Notes: The relative state-to-state total charge transfer cross sections, σ3/2→3/2, σ3/2→1/2, σ1/2→1/2, and σ1/2→3/2, for the reactions Ar+(2P3/2)+Ar(1S0) → Ar(1S0)+Ar+(2P3/2) → Ar(1S0)+Ar+(2P1/2), Ar+(2P1/2)+Ar(1S0) → Ar(1S0)+Ar+(2P1/2) → Ar(1S0)+Ar+(2P3/2), respectively, at the laboratory collision energy range of 1–4000 eV, have been determined using the newly constructed crossed ion–neutral beamphotoionization apparatus. This apparatus is equipped with a high resolution photoionization ion source for reactant state selections and a charge transfer detector for product state identifications. The measured profile of the kinetic energy dependence for the probability for 2P3/2→2P1/2 fine-structure transitions in Ar+(2P3/2)+Ar(1S0) charge transfer collisions [σ3/2→1/2/(σ3/2→3/2+σ3/2→1/2)] is in general agreement with the theoretical prediction of Johnson. However, the theoretical probabilities are approximately 40% greater than those observed in this experiment. The total charge transfer cross section for Ar+(2P3/2)+Ar(1S0)[σ3/2→3/2+σ3/2→1/2] were found to be slightly higher than that for Ar+(2P1/2)+Ar(1S0)[σ1/2→1/2+σ1/2→3/2]. Furthermore, the experimental values for (σ1/2→1/2+σ1/2→3/2)/(σ3/2→3/2+σ3/2→1/2) indicate that the difference in the total charge transfer cross sections for Ar+(2P1/2)+Ar(1S0) and Ar+(2P3/2)+Ar(1S0) diminishes at both low and high collision energies, in accordance with the theoretical expectations. Taking into account the experimental uncertainties, the experimental results are also consistent with detailed balance which requires the value for σ1/2→3/2 to be twice that for σ3/2→1/2 at collisional energies substantially higher than the spin-orbit splitting of Ar+.
