    Notes: Two experiments are reported. In the first experiment the amino acid compositions of rumen bacteria and protozoa isolated from sheep given a diet of grass silage were compared with those taken from sheep given a diet of hay and barley; four sheep were assigned to each diet. There were no significant differences (P〈0·05) between diets in the amino acid compositions of the microbial fractions and bacterial contents of α-ɛ-diaminopimelic acid were also similar for both diets.In the second experiment the digestion of a grass silage and barley diet (65:35; 135 g CP (kg DM)-1) was studied using four non-lactating Ayrshire cows fitted with cannulae in the rumen and in the proximal duodenum. The mean N intake was 154 g d-1 and the corresponding duodenal flow was 126 ± 10 g d-1 indicating that 0·21±0·07 of the N intake was absorbed between the mouth and the duodenum. The mean rumen NH3-N concentration was high, 297 g litre-1, and the mean rate of microbial protein synthesis in the rumen was low, 17 g microbial N (kg OM apparently digested in the rumen)-1. There was a low content of bacterial N in the non-ammonia N at the duodenum (mean proportion 0·52±005) and low concentrations of methionine and lysine in the duodenal digesta protein. The results are discussed in relation to previously published data on the digestion of silage diets in sheep and to the utilization of silage diets for milk production in the cow.It is concluded that with silage diets the supply of methionine and lysine to the duodenum is likely to be low because of the low rates of microbial protein synthesis in the rumen and that in cows those two amino acids may be limiting for milk production.

    Notes: Chicken, lamb and buffalo meat were subjected to low-dose gamma irradiation (2.5 kGy) and stored at 0–3C. Lipid peroxidation in terms of thiobarbituric acid (TBA) number and carbonyl content were monitored during storage. While irradiated meat showed slight increase in TBA number and carbonyl content on storage as compared to nonirradiated meat, this did not affect the sensory qualities of meat. Free fatty acid content decreased markedly on irradiation. Irradiated meats were microbiologically safe and sensorily acceptable up to 4 weeks in the nonfrozen state (0–3C) while nonirradiated meat had a shelf-life of less than 2 weeks.

    Notes: A simulation model that assesses the risk of acquiring salmonellosis from consumption and handling of chicken was created in an Excel™spreadsheet and was simulated using Risk™. The model simulated the distribution, preparation, and consumption of 1,000 chickens and was designed to determine the relationship between the level of Salmonella contamination on chickens at the processing plant exit and the risk of salmonellosis for consumers of the chickens. A scatter plot of the probability of acquiring salmonellosis from consumption of the chickens simulated versus the Salmonella load on the chickens at the processing plant exit clearly showed that highly (i.e., 〉 100 Salmonella/bird) contaminated chickens at the plant exit did not necessarily pose greater risk of salmonellosis than lightly (i.e., 〈 10 Salmonella/bird) contaminated chickens at the plant exit. Rather, greater risk of salmonellosis was realized from lightly contaminated chickens when they were temperature-abused, undercooked, and consumed by someone from the high risk population.

    Notes: When the Lake George sewage treatment plant was put into operation in 1939, it was described as a “complete treatment” plant. This was because the treated effluent is discharged onto natural delta sand seepage beds which are “at least 25 feet deep.”Studies were made to determine the removal efficiency in the sand beds of coliforms, BOD, chlorides, and the nitrogen and phosphorus compounds.It was found that when beds were dosed, they were no longer saturated with water at 15 feet. Ten feet of sand were found to remove coliforms by 99% and BOD by 96%. However, nitrates, phosphates, and chlorides remained in significant concentrations after filtration through 10 feet of sand. Phosphate removal in an infrequently used sand bed was greater than in a continuously used bed.

    Notes: Fresh Indian mackerel (Rastrelliger kanagurta) was exposed to gamma radiation at dosages of 0,1.5 and 3 kGy. The meat was collected and subjected to a four-step washing treatment. Homogenates of the washed meat in cold (〈10°C) water exhibited apparent viscosity, which was dependent upon protein concentration. Warming the homogenate to 45°C or reduction of its pH to 3.5 by acetic acid decreased the viscosity. Proteins in the low-viscosity dispersion were stable to heating at 100°C while incorporation of NaCl at 5 mM prior to heating resulted in protein precipitation. Gamma irradiation did not affect the viscosity, solubility or stability of the muscle proteins in water.
